- Heat the oven to 180C/160C fan/gas 4. Cut the top off the garlic bulb, exposing the tops of the garlic cloves. Put on a small square of foil, and rub with the olive oil. Season with salt and pepper. Scrunch up the foil to seal in the bulb.
- Roast for 25-30 mins until soft when pressed, and the papery casing is light golden. Leave to cool for a few minutes before squeezing the soft roasted garlic out of their shells. Alternatively, take off all the papery casing and remove the cloves individually.

- In a large bowl, toss garlic with a generous amount of olive oil - enough to coat each clove.
- Spread garlic cloves onto a foil lined baking sheet (I use the bottom of my broiling pan), then sprinkle with salt and pepper. Be sure to use a baking sheet that allows to the garlic cloves to be mostly single layer, but also fit snugly together.
- Cover the baking sheet with foil, making sure you have a good seal over top and around the edges. Feel free to use multiple layers of foil if necessary to get a good seal.
- Bake at 425 degrees for 45 minutes. Remove from oven and allow to cool (without removing foil) for about 15 minutes.
- Remove foil and allow to cool to room temperature before placing in a freezer bag and freezing flat. (Make sure to taste test some on a toasted baguette first though!)
- When you're ready to use, just break off as much as you want to thaw, then return the rest to the freezer!

- Preheat the oven to 400 degrees Fahreneheit. Hold each head of garlic from the base and carefully slice off about 1/4-inch of the top to expose the garlic cloves. We want to be sure each clove is exposed. You may need to peel off some of the outer papery material to see better. If necessary, use a paring knife to cut off the tops of the cloves on the sides. Repeat for additional heads of garlic, if needed.
- Place the garlic bulb(s) in an oven-safe stainless steel saucepan or skillet with an oven-safe lid*, with a base wide enough that the bulbs don't touch the sides. Drizzle each bulb with 1 to 2 teaspoons of oil, enough to coat the exposed tops. You might need to use your fingers to rub oil that reaches the bottom of the pan back onto the tops.
- Cover your pan and bake for 40 to 70 minutes, checking every 10 minutes after 40 minutes is up (be careful, the pot will be very hot!). The heads are done when they're nicely golden on top and the cloves are soft enough to easily pierce through with a paring knife. (For greater depth of flavor, roast 5 to 10 minutes longer, but watch out for signs of burning-an acrid smell, or blackened bits).
- Let the roasted garlic cool for at least 10 minutes, or until you can safely handle it. To release the cloves, use a fork (cocktail fork if you have one) or grapefruit spoon or just gently squeeze them from the base (I find this easiest for the inner cloves).
- Use your roasted garlic immediately, or promptly refrigerate for up to 4 days or freeze for up to several months (be sure to label your containers with a use-by date). HOW TO ROAST GARLIC
Roasting garlic is so simple, and the result is very worthwhile-- I don't know why I don't do it more often. I love the aromatic perfume of sweet roast garlic, and the ease of squeezing the cloves of soft garlic out of their skins. Roast garlic is so mellow creamy and rich, not harsh at all like fresh garlic. Wonderful mashed with a fork and spread on warm French bread, or mixed with a little cream to top a steak or baked potato--the possibilities are endless. I sometimes like adding fresh herbs from the garden (fresh rosemary, basil or sage), for variation. This is a great simple technique for roasting multiple heads of garlic. Store roast garlic tightly sealed and refrigerated, and use within three days. Or, you can freeze roast garlic in an airtight container with a little olive oil and herbs. Enjoy!

- Preheat oven to 375 degrees F.
- Without breaking the head of garlic apart, remove as much of the outer papery coating as you can.
- Use a sharp knife to cut off the top (pointed end) of the garlic head, so the tops of the cloves are exposed.
- Place the head in a square of aluminum foil, and drizzle with a couple teaspoons of olive oil and a little coarse salt (rub with your fingers to completely coat the garlic head). Sprinkle with a small amount of fresh rosemary leaves, if desired.
- Fold up the foil to make a little purse-like package, and place into a muffin tin.
- Repeat with remaining heads of garlic.
- Bake for about 45 minutes at 375 degrees F or until the cloves feel soft when pressed.

- Preheat the oven to 400°, and prepare a small baking sheet or baking tray.
- Cut 6 medium-size squares of foil, and set them aside for a moment.
- Place one of the heads of garlic, on its side, on a cutting board in front of you; using a sharp knife, cut the top, pointy portion off of the head of garlic, partly exposing the cloves; repeat with the other heads of garlic.
- Next, place each head of garlic onto a square of the prepared foil, cut-side up, and drizzle each with about 1 to 2 teaspoons of olive oil, and sprinkle over a generous pinch or two of sea salt and black pepper; wrap each head tightly in the foil, twisting the end a little to create a point for easier lifting, and place onto the baking tray.
- Roast the garlic for 45 to 50 minutes, until it is a golden-brown, caramel color, and very soft; allow the heads to cool, still wrapped in foil, just until they can be handled.
- Once cooled slightly, unwrap the head of garlic from the foil, and squeeze from the bottom upward, to release the roasted cloves from their papers, completely.

- Start by selecting the largest and firmest heads of garlic. The larger the cloves the more roasted garlic you'll end up with, but it will also take a little longer than using bulbs with smaller cloves.
- Preheat your oven to 400F. Peel any loose skin of the bulb and discard it, but make sure to keep the bulb itself intact.
- Cut the top of the garlic bulb open, exposing the individual cloves inside. (You can roast this 'top' as well). Place the bulb with the cut side up in an oven-safe pan and pour half a cup of olive oil over the top of the bulb, letting the oil sink into all the cracks.
- Cover the pan with tinfoil or a tight-fitting lid and place the pan in the hot oven. That's it! After 40 minutes check the garlic to see if it has started to brown and the cloves are buttery soft.
- Once the roasted garlic has cooled you can literally squeeze the roasted garlic out of the bulb as if they were in a tube.

- Take a few heads of garlic and cup off the bottoms with a serrated knife.
- The bottoms are where the garlic comes to a point. Take off some of the loose paper.
- Drizzle olive oil into the bottom a small pan. It can be a frying pan or an old pie pan. I chose to use my meatloaf pan.
- Place garlic bulbs with the exposed garlic cloves facing up. Drizzle with olive oil and sprinkle with salt and pepper.
- Cover pan with foil and place into the oven for 30-35 minutes or until a knife goes into the garlic smoothly.
- Once the garlic is roasted, let cool until you are able to handle with your hands.
- Now comes the fun part. Squeeze the garlic out by pushing from the top all the way out of the bottom.

- HINT: Don't throw out the oil that the garlic roasted in. Save it for sauteeing and give food a light garlicy flavor.

- The following methods will detail various ways you can roast a head of garlic in the oven. The key to oven roasting is making sure that the garlic is both roasted and steamed at the same time, so the cloves don't dry out. For all of these methods, you will need to prepare the whole head of garlic prior to roasting. If you only have garlic cloves and not the whole head, skip to the stovetop roasting method at the end of this tutorial.
- The first method, which I use most often, involves using two muffin pans of the same size. This allows you to roast a lot of garlic at once. You can roast just one head, or up to 12 - one in each cup. Place your heads of garlic into the pan, cut side up, one head in each muffin cup.
- The next method involves using a small loaf pan or baking dish. Preheat oven to 400 degrees F and prepare the garlic heads as described above. Place your prepared heads of garlic into the loaf pan and drizzle with 2 tsp of olive oil each, coating the heads evenly.
- If you roast a lot of garlic you can purchase a garlic roasting dish with lid. Here is a ceramic option. If you want the ability to also roast on the grill, this cast iron one is pretty neat too. Check your dish for instructions for the recommended temperature and time required. Preheat oven to that temperature.Place prepared garlic heads in the dish. Drizzle each garlic head with 2 tsp of olive oil each, coating the heads evenly. Cover the roasting dish and roast for the recommended time at the recommended temperature. For my dish, it is 300 degrees for 1 hour. At the end of the hour, I like to uncover the dish, raise the temperature to 400 and let it roast for 10-15 minutes longer to achieve some caramelization. You can experiment with your dish to see what works best for you.
