These Chinese Five Spice Chicken Thighs are a quick and easy dinner that is naturally gluten free, paleo friendly and healthy! Spicy, sweet and so tasty!

2 Lbs Boneless Skinless Chicken Thighs
1 Tbsp Chinese 5 spice
Sea salt
2 tsp Olive oil
1/2 Cup Chicken broth (not reduced sodium)
1/4 Cup Honey
1 1/2 tsp Fresh ginger, (minced)
Cilantro, (For garnish)

Steps:

  • Remove any large chunks of fat from the chicken thighs and pat them dry with a paper towel. Sprinkle half the 5 spice over the top of the thighs, rubbing in. Sprinkle with salt. Then, flip the thighs and rub in the rest of the 5 spice and sprinkle with salt.
  • Heat the oil in large non-stick frying pan (not a cast iron skillet. That's just for pictures!) on medium high heat. Place the chicken thighs into the hot oil and sear until golden brown, about 2-3 minutes.
  • While the thighs sear, combine the rest of the ingredients in a small microwave safe bowl and microwave for 30 seconds, whisking together.
  • Flip the chicken, reduce the heat to low and pour in the honey mixture. Cover the pan and cook until an instant read thermometer inserted in the thickest part of the chicken reads 165 degrees F, about 5-15 minutes depending on how thick your chicken is.
  • Once cooked, uncover and simmer until the sauce is thick, about 3-5 minutes.
  • Garnish with cilantro and DEVOUR!

1/2 cup all-purpose flour
1/2 teaspoon seasoning salt
1 lb skinless chicken thigh, bone-in
3 tablespoons canola oil
3/4 cup chicken broth
4 tablespoons rice vinegar
1 1/2 teaspoons Chinese five spice powder
6 large garlic cloves, finely minced
3 tablespoons tamari soy sauce
1/2 cup water

Steps:

  • In a shallow mixing bowl, sift together flour and seasoning salt.
  • Roll chicken in flour mixture until well coated, shake off excess.
  • In a large frying pan heat oil on high heat.
  • Add coated chicken thighs and brown on all sides, about 2 to 3 minutes.
  • Meanwhile, in a mixing bowl, whisk together chicken broth, rice vinegar, Chinese five spice powder, garlic, Tamari and water.
  • Add mixture to the frying pan and bring to boil.
  • Reduce heat to simmer, cover pan and cook chicken for 5 minutes, then turn chicken over and cook for another 5 minutes.
  • Turn chicken over again and cook for 5 more minutes.
  • Test to see if chicken is done by cutting into the chicken thigh at it's thickest area (there should be no pink showing).
  • The sauce will boil down to a thicker consistency while cooking.
  • Serve chicken with cooked rice and pour sauce over.

5 teaspoons olive oil
5 bone-in chicken thighs (about 1-3/4 pounds), skin removed
1/3 cup water
1/4 cup packed brown sugar
2 tablespoons orange juice
2 tablespoons reduced-sodium soy sauce
2 tablespoons ketchup
1 tablespoon white vinegar
4 garlic cloves, minced
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon Chinese five-spice powder
2 teaspoons cornstarch
2 tablespoons cold water
Sliced green onions
Hot cooked rice, optional

Steps:

  • In a large skillet, heat oil over medium heat. Add chicken; cook until golden brown, 8-10 minutes on each side. In a small bowl, whisk water, brown sugar, orange juice, soy sauce, ketchup, vinegar, garlic, pepper flakes and five-spice powder. Pour over chicken. Bring to a boil. Reduce heat; simmer, uncovered, until chicken is tender, 30-35 minutes, turning chicken occasionally., In a small bowl, mix cornstarch and cold water until smooth; stir into pan. Bring to a boil; cook and stir until sauce is thickened, about 1 minute. Sprinkle with green onions. If desired, serve with rice. Freeze option: Cool chicken. Freeze in freezer containers. To use, partially thaw in refrigerator overnight. Heat slowly in a covered skillet until a thermometer inserted in chicken reads 165°, stirring occasionally and adding a little water if necessary.

The best five-spice chicken I have had in Vietnam was made by a street food vendor in the port town of Hoi An in the central region. The vendor used a spice mix of freshly toasted star anise and turmeric. When she grilled the chicken, the whole neighborhood was perfumed with the most enticing fragrance. This is my version of that dish.

1 whole chicken (about 2 1/2 pounds), preferably free range, rinsed
3 tablespoons vegetable oil
2 tablespoons soy sauce
3 tablespoons minced ginger
2 tablespoons minced garlic
2 tablespoons sugar
2 teaspoons ground turmeric
1 teaspoon Chinese five-spice powder
1/2 tablespoon sea salt
4 whole star anise, lightly toasted in a dry pan for 3 minutes, pounded or ground into a fine powder
1/2 cupSoy-Lime Dipping Sauce

Steps:

  • 1. Cut the chicken into 6 pieces and make 1 or 2 slashes in each piece for faster cooking. Trim and discard any excess fat. Pat the chicken dry.
  • 2. In a bowl, combine the oil, soy sauce, ginger, garlic, sugar, turmeric, five-spice powder and salt. Stir well to blend. Add the chicken pieces and turn several times to coat them evenly. Marinate in the refrigerator for at least 4 hours.
  • 3. Start a charcoal grill or preheat a gas grill to moderate heat. (You can also use a broiler.) Thirty minutes before cooking, add the freshly toasted star anise powder to the marinated chicken, turning so the meat is coated evenly.
  • 4. Place the chicken, skin side up, on the grill. Cook 10 minutes, then turn over and grill until the chicken is cooked and the juices run clear, another 10 minutes, depending on the thickness. While grilling, move the chicken pieces around so that they cook evenly. Transfer the chicken to a serving platter and serve with the dipping sauce.

Chinese-style chicken is a dish you can find all over Trinidad and within the diaspora that has followed the nation's emergence from British rule. The skin is fried into a lacquered mahogany. The meat beneath it tastes of five-spice, ginger and soy and is generally accompanied by a hum of oyster sauce mixed with the zing of the pickled Scotch-bonnet-pepper sauce that is seemingly omnipresent on the island's tables.

8 to 10 chicken thighs, legs and wings,about 2 1/2 to 3 pounds total
2 tablespoons five-spice powder
3 limes
3 tablespoons soy sauce
1 2-inch knob ginger root, peeled andminced
1/2 cup neutral oil, like canola or grapeseed
2 tablespoons sesame oil
1/2 cup oyster sauce
1 to 3 tablespoons Scotch-bonnet-peppersauce, ideally Matouk's Soca, to taste
Freshly ground black pepper
1/4 cup chopped scallions, for garnish.

Steps:

  • In a large, nonreactive bowl, toss the chicken with five-spice powder, then with the juice of 2 of the limes, the soy sauce and the ginger. Cover and marinate in the refrigerator for at least 30 minutes and up to 6 hours.
  • Heat oils in a large skillet over medium-high heat. There should be at least 1/4 inch of oil in the pan. When the oil is hot, remove chicken from marinade, allowing excess marinade to drip back into the bowl, and fry, in batches if necessary to not crowd the pan, turning the pieces frequently, until well browned and cooked through, 15 to 20 minutes.
  • Meanwhile, make the dipping sauce. Combine oyster sauce, a tablespoon of the Scotch-bonnet-pepper sauce and the juice of the remaining lime and stir to combine. Adjust seasonings with more hot sauce, lime juice and freshly ground black pepper to taste.
  • Garnish with scallions and serve with white or fried rice, with a drizzle of the sauce over each piece of chicken and the remaining sauce on the side.

1 (5 pound) whole chicken, cut in half
½ lime, juiced
1 tablespoon fish sauce
3 cloves garlic, crushed
1 tablespoon seasoned rice vinegar
1 tablespoon Chinese five-spice powder
2 teaspoons hot chile paste (such as sambal oelek)
2 teaspoons grated fresh ginger
1 teaspoon soy sauce
⅓ cup seasoned rice vinegar
½ lime, juiced
1 teaspoon fish sauce
1 teaspoon hot chile paste (such as sambal oelek)

Steps:

  • Score the skin side of each piece of chicken 2 to 3 times, about 1/8 inch deep.
  • Whisk together the the juice of 1/2 lime, 1 tablespoon fish sauce, garlic, 1 tablespoon rice vinegar, Chinese five-spice powder, 2 teaspoons hot chile paste, ginger, and soy sauce in a bowl. Pour into a resealable plastic bag. Add chicken, coat evenly with the marinade, squeeze out excess air, and seal the bag. Marinate in refrigerator for 6 hours.
  • Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
  • Remove chicken halves from the bag and transfer to a plate or baking sheet lined with paper towels. Pat chicken pieces dry with more paper towels. Reserve marinade mixture in a small bowl.
  • Whisk together the 1/3 cup rice vinegar, juice of 1/2 lime, 1 teaspoon fish sauce, and 1 teaspoon hot chile paste in a small bowl. Set aside.
  • Grill chicken, skin-side down, on the preheated grill for 2 minutes. Turn each piece, brush with reserved marinade mixture, and move to indirect heat.
  • Grill, brushing with glaze and turning ever 10-15 minutes, until well-browned and meat is no longer pink in the center, about 45 minutes total. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 180 degrees F (82 degrees C).
  • Drizzle vinegar lime juice mixture over the chicken and serve.
