- Mix crust ingred. with fork as you would for a pie crust. pat into a 9x13 pan which has been greased and floured. bake at 350 degrees for 15 minutes.
- as crust is baking. mix filling. after crust has baked 15 minutes, pour filling over crust and continue baking for 25 minutes. cool bars completely.
- make frosting by beating butter,powdered sugar and milk for 6 to 8 minutes on high speed. then add 2 tblsp. cold water one at a time. beat until smooth. spread over cooled bars.

- In a large bowl, cream shortening and sugar until light and fluffy. Beat in eggs and extracts. In another bowl, whisk flour, baking powder and salt; gradually beat into creamed mixture., Preheat oven to 375°. Divide dough in half. On a lightly floured surface, roll each portion to 1/8-in. thickness. Cut with a floured 3-in. flower-shaped cookie cutter. Place 1 in. apart on greased baking sheets., Bake 6-8 minutes or until edges are light brown. Cool on pans 2 minutes. Remove to wire racks to cool completely., For frosting, in a bowl, beat cream cheese, shortening and extracts until blended. Gradually beat in confectioners' sugar until smooth. Spread over cookies; sprinkle with colored sugar. Let stand until set. Store in airtight containers in the refrigerator.

MOM'S LEMON BARS
These are the best lemon bars I've ever had. The key to these is the butter/shortening combo in the crust, you must use both, do not substitute one for the other.

- Mix the first 4 ingredients and press into the bottom of a 9x13 pan.
- Bake at 350F for 20 minutes.
- Mix the next 4 ingredients, my mom always uses a little more lemon juice than is called for. Remove pan from oven and pour filling over the top.
- Bake for 25 more minutes or until they start to brown at the edges.
- Sprinkle with powdered sugar when they come out of the oven, cool.
- Cut into squares and serve.

- Preheat the oven to 350°. Position a rack in the lower third of the oven.
- To make the crust: Cut butter into chunks and melt it in a medium saucepan over medium heat. Remove from the heat and stir in the sugar, vanilla, and salt. Add the flour and mix just until incorporated. Press the dough evenly over the bottom of the pan, Bake for 25- 30 minutes, or until the crust is well browned at the edges and lightly browned in the center.
- To make topping: While the crust is baking, stir together the sugar and flour in a medium bowl until well mixed. Whisk in the eggs. Stir in the lemon zest and juice. When the crust is ready, turn the oven down to 300 and slide the rack out without removing the pan. Pour the filling over the hot crust.
- Bake for 20- 25 minutes, or until the topping is puffed at the edges and no longer jiggles in the center when the pan is tapped. Set on a rack to cool completely in the pan. Lift the ends of the foil liner and transfer to a cutting board. Use a long sharp knife to cut into sixteen 2 inch bars. May be stored, airtight, in the refrigerator. Lemon bars keep perfectly for about 3 days; after 3 days the crust softens but the bars still taste quite good for the remainder of a week. Do not freeze. Sieve powdered sugar over the bars just before serving.
- Equipment: 8-inch square pan, lined on the bottom and up all 4 sides with foil.

- Preheat oven to 325.
- Prepare the shortbread crust: Cream butter and sugar in medium bowl with electric mixer set on high speed. Add vanilla and mix until combined. Add flour and mix at low speed until fully incorporated.
- Press dough evenly into bottom of an 8- by 8-inch baking pan. Refrigerate until firm, approximately 30 minutes.
- Prick shortbread crust with fork and bake for 30 minutes or until crust turns golden brown. Cool on rack to room temperature.
- Prepare the cream cheese filling while the crust is baking: Beat the cream cheese and sugar until smooth in medium bowl with electric mixer set on high speed. Add egg and lemon extract and beat on medium speed until light and smooth. Cover bowl tightly and refrigerate.
- Prepare the lemon curd: Blend the egg yolks with cornstarch and sugar in medium non-aluminum saucepan. Place over low heat and slowly whisk in water and lemon juice. Increase heat to medium-low and cook, stirring constantly, until mixture thickens enough to coat the back of a spoon. Remove from heat. Add lemon peel and butter and cool for 10 minutes.
- Assemble the bars: Sread chilled cream cheese filling evenly over cooled shortbread crust with spatula. Spread lemon curd evenly over cream cheese filling. Place pan in center of oven. Bake 30 to 40 minutes or until edges begin to turn light golden brown. Cool to room temperature on rack. Chill in refrigerator 1 hour before cutting into bars. Dust top with confectioners' sugar.

KATIE COURIC'S LEMON BARS
I tore this recipe out of People magazine in the May 14, 2012 edition. Katie Couric says this recipe is a tradition and the perfect treat for Mother's Day. They are a little cakey on the bottom and then gooey like a delicious lemon pie and tart like lemon drop candies. I used cake flour and got great results. You can use all purpose flour as well. Delicious!

- Preheat oven to 350 degrees Fahrenheit.
- Lightly grease a 13"x9" baking pan; set aside.
- In a food processor, blend confectioners' sugar, 2 cups flour and salt.
- Add butter and pulse until the mixture is crumbly.
- Press into baking pan and bake for 20 minutes.
- Remove from oven.
- Meanwhile beat the eggs, 2 cups sugar, 6 teaspoons flour and lemon juice until well combined.
- Stir in lemon rind.
- Pour this mixture on top of baked mixture; bake an additional 25 minutes.
- Cool completely and sprinkle with sifted confectioners' (powdered) sugar.
- Cut into squares.
