Best Date Squares Ever image

These rich tasting squares use less sugar than other recipes but you would never know it. Bring squares to room temperature to serve, about 15 minutes.

4 cups chopped pitted honey dates
¾ cup orange juice
½ teaspoon lemon juice
2 cups whole wheat flour
2 cups quick-cooking oats
¾ cup brown sugar
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 ½ cups unsalted butter, melted and cooled

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x11-inch baking pan and line with parchment paper.
  • Heat dates, orange juice, and lemon juice in a large saucepan over medium-low heat, stirring often, until dates are soft, about 6 minutes.
  • Stir whole wheat flour, oats, brown sugar, baking powder, baking soda, and salt together in a large bowl; stir in melted butter. Press half of the oat mixture evenly into the prepared pan.
  • Spread date mixture evenly over oat mixture; sprinkle remaining oat mixture evenly over date mixture and press down lightly.
  • Bake in the preheated oven until golden, about 20 minutes. Allow to cool in the pan to room temperature, about 30 minutes. Refrigerate until chilled before cutting into squares, about 1 hour.

1 cup dates, chopped
2/3 cup dark brown sugar
1/2 cup water
1/2 cup butter
6 ounces semi-sweet chocolate chips
1/3 cup orange juice
2 eggs, beaten
1/3 cup milk
1 teaspoon baking soda
1 1/4 cups all-purpose flour
1/2 teaspoon salt
2/3 cup walnuts, chopped

Steps:

  • Place the first 4 ingredients in a saucepan and simmer until dates are soft.
  • Remove from heat and add chocolate chips.
  • Add eggs, orange juice and milk and stir.
  • Combine baking soda, salt, walnuts and flour.
  • Fold into date mixture.
  • Pour into a greased 13 X 9 inch baking pan and bake for 30 minutes at 350 Deg.
  • Allow to cool.
  • Prepare glaze.
  • Decorate the bars with the glaze.
  • Cut into squares and serve.

oatmeal, mixture
1 3/4 cups all-purpose flour
3/4 teaspoon baking soda
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 1/4 cups becel margarine
1 1/4 cups splenda brown sugar
1 1/2 cups quick rolled oats
date filling
2 1/2 cups chopped dates
3/4 cup cold water
2 tablespoons splenda brown sugar
grated rind from 1/2 orange
2 tablespoons orange juice
1 teaspoon lemon juice

Steps:

  • Preheat oven to 350°F.
  • Combine flour,baking powder,baking soda,and salt.
  • Rub in butter until mixture is crumbly.
  • Add sugar and oats.
  • Mix well.
  • Spread half of crumb mixture into 9"x9" greased baking pan,patting mixture until firm and smooth.
  • Cook dates,with water,orange rind ,orange juice,lemon and sugar in a saucepan till smooth and thick.
  • Cool mixture.
  • Add to bottom layer of oat mixture.
  • Add remaining oats to top of dates.
  • Spread out evenly.
  • Bake at 350 for 35-40 minutes or until lightly browned.
  • Cool and cut into squares to your liking.
  • Enjoy these great Date squares.

1 pound pitted dates
⅔ cup light brown sugar
⅔ cup orange juice
1 orange, zested
2 teaspoons vanilla extract
1 ½ cups regular rolled oats
1 cup all-purpose flour
1 cup light brown sugar
¾ teaspoon baking soda
¼ teaspoon salt
¾ cup cold unsalted butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat dates, 2/3 cup brown sugar, orange juice, and orange zest in a saucepan over low heat; cook, stirring occasionally, until dates have softened, absorbed the liquid, and mixture is like a paste, about 10 minutes. Remove from heat; stir in vanilla extract.
  • Stir oats, flour, 1 cup brown sugar, baking soda, and salt together in a bowl; cut in butter with a knife or pastry blender until mixture resembles coarse crumbs.
  • Lightly press 2/3 of the crumb mixture into the bottom of a 9x9-inch pan. Spread date mixture evenly over the crumb crust; sprinkle remaining crumbs evenly over the top of date mixture.
  • Bake in the preheated oven until top is golden, about 30 minutes; cool on a wire rack for at least 1 hour before slicing into bars.

My MIL's easy, no fail date squares...Make an extra batch of the date jam its good on its own...over bagels or toast. If your date jam is a little thick. Add a little extra water to thin it out, until it is the consistency that you like. Becareful not to make it too thin.

1 1/2 cups flour
1 cup rolled oats
1 cup sugar, brown
1/2 cup walnuts (optional) or 1/2 cup pecans, chopped (optional)
1/4 teaspoon salt
3/4 cup butter
1 1/2 cups dates, pitted and chopped
1/4 cup sugar, brown
1/2 cup water
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Date Jam
  • Combine dates, sugar, water and vanilla in saucepan and bring to a boil.
  • Simmer 5 minutes, until mixture resembles a thick paste.
  • Cool completely
  • Oatmeal Layer
  • Combine flour, oats, sugar, nuts and salt in mixing bowl.
  • Cut in butter.
  • Reserve 2 cups of this mixture for topping.
  • Press remaining mixture into bottom of greased 9 x 9" pan.
  • Spread cooled date jam over the bottom layer and sprinkle reserved oatmeal mixture evenly over top.
  • Bake 25- 33 minute.
  • Cool completely then cut into squares.

1/2 cup butter
1/2 cup brown sugar
3 eggs
2 2/3 cups graham wafer crumbs
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup walnuts (I use pecans)
1/2 cup dates (chopped)
1/2 cup orange juice
1 tablespoon grated orange zest
3 tablespoons softened butter
1 tablespoon cream or 1 tablespoon half-and-half
1 tablespoon orange juice
1 1/2 cups icing sugar

Steps:

  • Cream butter and sugar, add eggs one at a time and mix smooth.
  • Add Baking Powder, Baking Soda, salt and Graham crumbs.
  • Add nuts and dates.
  • Add orange juice and zest and mix well.
  • Bake in a 9x9 greased pan at 350 degree oven 35 to 40 minutes. When cool you may want to ice with orange icing.
  • Orange Icing: In a medium bowl mix butter, cream and orange juice.
  • Add in icing sugar, adding more if needed to make for desired consistency.

2 cups water
6 ounces pitted dates
6 ounces dried figs, roughly chopped
3/4 cup sugar
2 tablespoons lemon juice
2 tablespoons orange juice
2 1/2 cups oats
1 1/4 cups flour
1 cup brown sugar, packed
1 tablespoon orange peel, finely grated
1/4 teaspoon salt
1 cup cold butter, diced
1/4 cup hazelnuts, sliced

Steps:

  • In a saucepan, mix water, dates, figs, sugar, lemon juice and orange juice. Let rest for 30 minutes then bring to boil. Reduce to medium heat and let simmer, stirring frequently, for 10 minutes or until mixture has thicken. Let cool.
  • In a large bowl, mix oats, flour, brown sugar, orange peel and salt. Add butter and with a pastry knife or with 2 knives, work the mixture until you have rough crumbs. Press uniformly half of this mixture in a 8 inches square pan (with parchment paper). Spread the cold dates garnish on the oat mixture. Mix the remaining oat mixture with hazelnuts. Distribute this mixture on the date garnish and press slightly.
  • Cook in a preheated oven of 350 F for about 45 minutes or until the top is lighly golden. Put the pan on a rack and let cool. Cut in squares. (You can prepare these squares in advance, let cool and cover with plastic wrap. They will be good up to 3 days in the fridge or up to 2 weeks in the freezer, wrapped with foil paper).

I used to scout out date squares at bake sales when I was a kid. Definitely my favourite bar. I love the textures and flavours; buttery, crumbly crust; sweet, sticky date filling. A treat all the time!

1 1/2 cups pitted dates
1 1/2 cups orange juice
1/2 teaspoon cinnamon
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1 1/2 cups firmly-packed brown sugar
1 1/2 cups butter, cut into pieces
1 cup sweetened flaked coconut
1 cup chopped walnuts or 1 cup pecans
1 1/2 cups old fashioned oats

Steps:

  • Simmer dates in orange juice and cinnamon for 30 minutes, or until thickened, stirring occasionally. (be careful not to scorch mixture if it gets too thick)
  • Combine flour, salt and brown sugar and cut in butter until mixture is crumbly. Stir in coconut, nuts and oats.
  • Press half of dough mixture into bottom of 9 x 13 inch pyrex baking dish. Pat dough flat with a sheet of wax paper on hand.
  • Spread date mixture to within a half inch of edges.
  • Top with remaining dough and flatten lightly with wax paper on hand.
  • Bake in a preheated 375 degrees F (190C) oven for 45 minutes, or until golden.
  • Let cool in pan and cut into 24 bars (4 long strips cut by 6 shorter strips).
