Categories     main-dish

Time 2h5m

Yield 4 servings

Number Of Ingredients 12

2 tablespoons grapeseed or other neutral high-heat cooking oil
8 bone-in, skin-on chicken thighs
Kosher salt and freshly ground black pepper
1 medium onion, thinly sliced
4 to 5 cloves garlic, rough chop
2 fresh parsley sprigs
2 fresh thyme sprigs
1/4 cup light-bodied dry white wine
1 pound dried cannellini beans, soaked overnight with a few tablespoons salt, or four 15-ounce cans cannellini beans, drained and rinsed
1 to 2 quarts rich chicken stock, as needed
4 to 5 cups roughly chopped or torn leaves of stemmed greens (such as kale, Swiss chard, mustard or beet greens)
Extra-virgin olive oil, lemon wedges and chopped fresh parsley leaves, for serving (optional)

Steps:

  • Heat the oil in a Dutch oven or pot (at least 4 inches high and large enough to hold the chicken thighs in a single layer; see Cook's Note) over medium-high heat.
  • Thoroughly pat dry the chicken thighs and sprinkle both sides with salt and pepper, seasoning the skins generously. Place the chicken thighs skin-side down in the pot and cook, undisturbed, until the skins are dark golden, about 8 minutes. They will sizzle a lot but don't worry and do not move the chicken thighs. If the pot starts to smoke or smells like the chicken is burning, reduce the heat a little (see Cook's Note).
  • Flip chicken thighs and cook the other side until browned, about 5 minutes. Transfer the chicken to a wire rack set in a rimmed baking sheet.
  • Reduce the heat to medium and add the onions to pot. Cook, stirring, until translucent, 5 to 7 minutes. Add the garlic and herbs and cook, stirring, until the onions and garlic are lightly browned. Add the wine, scraping up the browned bits from the bottom of the pot (the wine will help loosen the bits).
  • IF USING CANNED BEANS: Return the chicken thighs, skin-side up, to the pot, nestling them between the onions. Add enough chicken stock to cover the onions and garlic and about 3/4 up the chicken thighs, letting the chicken skin sit above the stock. Increase the heat to bring to a boil, then reduce the heat and simmer the chicken for 25 minutes.
  • Remove 2 to 3 chicken thighs from the pot. Add the beans and stir into the stock. Reposition the chicken thighs in the pot on top of the beans so the chicken skin remains exposed. Return the 2 to 3 chicken thighs to the pot, skin-side up. Add more stock to cover the beans, if necessary. Bring to a boil, reduce to a simmer and cook for 10 minutes. Carefully stir the greens into the beans, around the chicken, then simmer until the greens are tender, 8 to 10 more minutes.
  • IF USING DRIED BEANS: Add the soaked dried beans to the onions and garlic in the pot. Add enough chicken stock to cover the beans by about 2 inches. Increase the heat, bring to a boil, then reduce the heat and simmer for 45 minutes.
  • Return the chicken thighs, skin-side up, to the pot, nestling them in the beans slightly so that the skin isn't submerged. Simmer, uncovered, until the beans are tender, adding more stock if the beans start to get too dry, for another 35 minutes. Taste the beans and add salt and/or pepper, to taste. Carefully stir the greens into the beans, around the chicken, then simmer until the greens are tender, about 10 minutes.
  • Ladle the beans and greens into shallow bowls then top with the chicken thighs. Add a drizzle of olive oil (for the omega-3 balance!), squeeze of lemon and chopped fresh parsley.

ITALIAN CHICKEN WITH WHITE BEANS

Italian Chicken With White Beans image

I'm making this tonight-posted for the nutrition info. From the Sonoma Diet. The original recipe calls for cannellini, but I have Great Northern so that's what I'm using.

Provided by greengirl512

Categories     Chicken Thigh & Leg

Time 23m

Yield 8 serving(s)

Number Of Ingredients 13

1 cup chopped onion
1 cup chopped carrot
1/2 cup thinly sliced celery
3 garlic cloves, minced
2 lbs boneless skinless chicken thighs
1/4 teaspoon kosher salt
1/8 teaspoon black pepper
1 (14 1/2 ounce) can diced tomatoes, undrained
1/2 cup chicken broth
1/2 cup dry white wine
1 1/2 teaspoons dried Italian seasoning, crushed
1 (15 ounce) can great northern beans
1/4 cup grated parmesan cheese

Steps:

  • Instructions.
  • In a 3 1/2- or 4-quart slow cooker combine onion, carrots, celery, and garlic. Add chicken; season with salt and pepper. In a medium bowl stir together tomatoes, chicken broth, wine, and Italian seasoning. Pour over mixture in cooker. I'll bet you could make this with dry beans also, adding them here and maybe increasing the broth a little.
  • Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 31/2 hours. Turn off cooker and stir in beans. Cover and let stand for 10 minutes.Unless, of course, you added dry beans at the beginning-then skip this step.
  • Using a slotted spoon, move chicken and vegetables to a serving dish, saving the cooking liquid. Drizzle chicken and vegetables with cooking liquid until moist. Top with Parmesan cheese.

Provided by Esther Clark

Categories     Dinner, Main course, Supper

Time 55m

Number Of Ingredients 10

2 tbsp olive oil
8 chicken thighs
3 leeks, sliced into rounds
2 large garlic cloves, crushed
2 x 400g cans cannellini beans, drained and rinsed
500ml hot chicken stock
1½-2 tbsp wholegrain mustard
100g crème fraîche
1 large lemon, zested
crusty bread, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Heat the oil over a high heat in a large non-stick frying pan. Season the chicken thighs and fry, skin-side down, for 5 mins until golden and crisp. Transfer, skin-side up, to a large baking tray. (If you're doubling up this recipe, fry in batches and divide between two baking trays.)
  • Fry the leeks in the pan for 5 mins or until just softened. Add the garlic and fry for 1 min more. Stir in the beans, then spoon into the tray, or trays, around the chicken. Pour the stock over the beans and season to taste. Roast for 20 mins, then remove from the oven and stir the mustard and crème fraîche through the beans. Roast for 10-15 mins more, or until the chicken is cooked through. To freeze, leave to cool completely and transfer to large freezerproof bags.
  • Scatter the lemon zest over the chicken and serve with crusty bread to mop up the juices.

SKILLET CHICKEN WITH WHITE BEANS AND CARAMELIZED LEMON

Skillet Chicken With White Beans and Caramelized Lemon image

One of the best parts of cooking skin-on chicken in a skillet, aside from the obvious (crispy skin), is the delicious fat left behind. To maximize the amount of fat yielded, be sure to cook the chicken on the medium side of medium-high heat, which gives the fat plenty of time to render before the skin browns. All this extra time on the stove means you won't have to finish your chicken in the oven. (The only exception are extra-large pieces, which may need a brief stint in a 350-degree oven to completely cook through.) While just about anything is great tossed in this liquid gold, using it to caramelize thick slices of lemon and wedges of shallot takes the dish to an even more complex, savory, tangy place. You can let the seasons or your pantry dictate what gets added next: hearty leafy greens, chunks of summer squash or a simple can of chickpeas or beans are all welcome to the party.

Provided by Alison Roman

Categories     dinner, weekday, weeknight, poultry, main course

Time 45m

Yield 4 servings

Number Of Ingredients 9

1 lemon, thinly sliced, seeds removed
1 shallot, peeled and cut into thin wedges
Kosher salt and black pepper
2 1/2 pounds bone-in, skin-on chicken thighs or breasts (about 4 to 6)
1 tablespoon canola oil
1 (15-ounce) can small white beans (such as Great Northern, navy or cannellini) or chickpeas, drained and rinsed
1 bunch kale, ribs removed, leaves torn into large pieces
Flaky sea salt
Olive oil, for drizzling

Steps:

  • Toss lemon slices and shallots together in a small bowl and season with salt and pepper; set aside. (This will lightly pickle the shallot and soften the lemon while you cook the chicken.)
  • Season the chicken with salt and pepper. Heat oil in a large skillet over medium heat and add chicken, skin-side down. Using kitchen tongs or a spatula, press the chicken evenly into the skillet so it makes good contact with the hot surface (which will promote browning). Cook, resisting the urge to check too frequently, until the skin is deeply golden brown (think of the color of a well-baked croissant), 5 to 8 minutes, depending on the size of the chicken pieces. At this stage, most of the fat should be rendered and the skin should be crispy. Flip and continue to cook until pieces are cooked through, another 7 to 10 minutes.
  • Using kitchen tongs, transfer chicken to a plate to rest, leaving all the fat behind. Add lemon and shallot to the chicken fat, standing back if you need because it will sizzle. Cook, swirling the skillet, until the lemon has started to caramelize and brown, 3 to 5 minutes. (It'll smell like a mix of lemonade and caramel.)
  • Add the beans to the skillet and season with salt and pepper. Cook, tossing occasionally, until the beans have started to brown a bit and soak up all of that caramelized lemon chicken fat, 3 to 4 minutes. Working in batches, add kale and toss to wilt, seasoning with salt and pepper as you go.
  • Return the chicken to the skillet, along with any juices that have collected on the plate, and cook for a minute or two, just so everything gets to know each other in there.
  • Divide the chicken, beans and kale between plates, making sure to top each serving with a few lemon slices. Sprinkle with flaky salt and a final few turns of pepper, and drizzle with olive oil.

BASIL CHICKEN WITH WHITE CANNELLINI BEANS - COOK BETTER ...

From cookbetterthan.com
  • Preheat an oven to 350 degrees. Start by rinsing your chicken and patting dry with paper towels. Next loosen the skin from the breast and slide 6 or so of the basil leaves under the skin. Keep remaining basil for garnish. Next salt and pepper the outside of the breast.
  • Heat a large pan (like a dutch oven) with a small bit of olive oil on medium to high heat. Add the chicken to the hot pan and sear it on both sides. You will know it’s time to flip the breasts when the meat lifts from the pan with just a gentle tug, if you have to pull on it it’s not done and let it cook longer. It will take about 4-6 minutes a side.
  • When the chicken is seared remove it from the pan and add the onions and celery, using the liquid from the veggies deglaze the pan, scraping off all the browned bits on the bottom. Let the veggies cook until the onion is starting to turn transparent. Add the garlic, tomatoes, and beans, stir and let cook for about 2 minutes before adding 1/3 cup of the chicken broth, Italian spice, and salt & pepper.

CHICKEN THIGHS WITH BROCCOLI & CANNELLINI BEANS ...

From cultivatedtree.com
  • Starting Notes: I used a large cast iron skillet for this dish; but I par-steamed the broccoli as I was searing the chicken. Steaming it for 3-4 minutes leaves it crunchy and then it will finish cooking in the cast iron skillet with everything else.
  • Preheat the oven to 400°F with rack in the middle & Preheat a cast iron skillet to Med High heat. Take the time to preheat your pan to create a nice sear for the chicken without it sticking - don't add your oil until it is hot and you are ready to sear.

  • Heat the olive oil (either in the slow cooker on fry or in a frying pan) and fry the onion with a pinch of salt until very soft but not golden, about 15 minutes. Add the garlic and rosemary and fry for another minute before stirring in the tomato purée and then the red wine. Cook for a few minutes then add the passata and bring to a simmer. Transfer to the slow cooker, if you need to, and stir in the cannellini beans and nestle in the chicken breasts, then cover with the chicken stock.
  • Cook for 3 hours on low until the chicken is tender and the sauce has thickened. If you need to reduce the sauce, bubble for a few minutes with the lid off on the reduce setting. Shred the meat if you wish, or keep the breasts whole. Serve with pasta, rice or potatoes and plenty of greens.
