SMOKED BACON WRAPPED CHICKEN BREASTS

4 cups of cold drinking water
1/4 cup kosher salt
1/4 cup brown sugar
4 -6 chicken breasts (boneless and skinless)
toothpick
regular cut bacon (3 slices per breast)
ribs or chicken, rub
barbecue sauce

Steps:

  • Brine:.
  • Pour the water into a pitcher then add the salt.
  • Stir until the salt is dissolved and the water returns to clear. Add the brown sugar and stir until dissolved.
  • Pour the brine over the chicken breasts until covered, cover with lid or plastic wrap and place the bowl in the fridge to keep cold.
  • Soak the 6 chicken breasts in a deep glass container for 2 hours flipping them over at the halfway mark to make sure they were evenly submerged.
  • Preparing the Chicken Breasts:.
  • After rinsing the breasts to make sure there was no extra salt on the outside of the meat, Lay the breast down in the brining bowl and cover them with rub.
  • Lay 3 strips of bacon butted up against each other on a cutting board or flat surface. Lay one of the breasts across the bacon leaving enough bacon on the left side to wrap it over just a little.
  • Roll the breast over a couple of times to completely wrap it in the bacon and use toothpicks to hold the bacon in place.
  • Smoking the Chicken Breasts:.
  • Setup the smoker for about 230 degrees for best results, and add dry and soaked wood chips.
  • Once the smoker is ready, go get the chicken breasts and place them directly on the grate leaving about 1 inch of space between them to allow the smoke to completely surround them.
  • Estimate about 3 hours of cook time but that will depend on the thickness of the chicken breasts that you purchased.
  • About 30 minutes before they are finished, brush a light coating of barbecue sauce all over the top of them.
  • There done when a safe internal temperature of 165 degrees is reached.

2 tablespoons dark sesame oil, divided
2 garlic cloves, finely minced
2 pounds chicken breasts, skinless and boneless
1 head broccoli, stems removed
1 dozen mushrooms, sliced
3 carrots, peeled and julienned
1/4 pound green beans, diced
1 head bok choy, chopped
2 to 3 tablespoons teriyaki sauce

Steps:

  • Heat 1 tablespoon oil in a saute pan over medium heat. Add garlic and stir. Place the chicken in the pan and brown 4 minutes on each side. Remove from pan, slice into strips, set aside.
  • Heat remaining tablespoon of oil in a wok over high heat. Add the vegetables and teriyaki sauce. Stir-fry quickly until the vegetables begin to soften. Add the chicken strips, combine well and continue to cook for 2 to 3 minutes. Serve immediately.

1/2 lb lean bacon, cut across slices for narrow strips
1 large onion, at least 1 cup, chopped
1 stalk celery, sliced diagonally
1/2 green pepper, julienne strips
1 small carrot, slender, sliced thinly diagonally
1/2 lb mushroom
1/2 head of cabbage, shredded, about 2 cups
1/2-1 cup bean sprouts
1/2 cup cauliflower
1/2 cup broccoli, stalks peeled and thinly sliced
3 tablespoons water
2 tablespoons soy sauce
2 teaspoons cornstarch
1 teaspoon garlic powder
1/2 teaspoon ground ginger
1/2 teaspoon pepper, coarsely ground
1/2 teaspoon sugar

Steps:

  • Cook bacon until fat is rendered out, remove with slotted spoon, reserve. Pour off all but 2 Tbsp of bacon fat, keeping the excess in reserve if you wish to use it in the stir frying of the vegetables. Vegetable oil is really better.
  • Combine all sauce ingredients in a small bowl, stir until cornstarch is dissolved.
  • Pour over vegetables and bacon; cook and stir only until sauce thickens.
  • Serve over hot brown rice, or Chinese noodles, topped with additional soy sauce and toasted sesame seeds.

6 rashers smoked streaky bacon, chopped
8 skinless, boneless chicken thighs
2 garlic cloves, thinly sliced
1 bunch spring onions, roughly chopped
300ml hot chicken stock
250g frozen peas
1 Little Gem lettuce, roughly shredded
2 tbsp crème fraîche

Steps:

  • In a large frying pan, dry-fry the bacon over a medium heat for 3 mins until the fat is released and the bacon is golden. Transfer the bacon to a small bowl, leaving the fat in the pan. Add the chicken and brown for 4 mins each side.
  • Push the chicken to one side of the pan and tip in the garlic and spring onions, cooking for about 30 secs, just until the spring onion stalks are bright green. Pour in the chicken stock, return the bacon to the pan, cover and simmer for 15 mins.
  • Increase heat under the pan. Tip the peas and lettuce into the sauce and cook for 4 mins, covered, until the peas are tender and the lettuce has just wilted. Check chicken is cooked through. Stir in the crème fraîche just before serving.

half a Savoy cabbage, cut into 1cm-wide strips
1 tbsp hot sunflower oil
2 rashers of smoked streaky bacon, cut into strips
handful of pine nuts
2 thinly sliced garlic cloves
4cm root ginger, cut in matchsticks
1 tbsp oil
soy sauce, to taste

Steps:

  • Fry the cabbage in a wok with about 1 tbsp hot sunflower oil for a few seconds. Add the bacon and fry for 30 seconds. Tip in the pinenuts, garlic cloves and ginger. Stir fry until lightly browned.
  • Tip everything out into a bowl, add another tbsp of oil and the cabbage to the wok and fry over a high heat for 4-5 minutes. Return everything to the wok with a little soy sauce to taste. Serve fresh and hot.

  • In a large bowl, whisk together the cornstarch and the egg white. Toss the chicken pieces and the ginger into this mixture and set aside. In a small cup, whisk together the soy sauce, brown sugar and chili paste. Set aside. Place the bell peppers and green onions in a small bowl, set aside. Place the broccoli, snow peas and bean sprouts in another bowl, set aside.
  • Heat a large skillet or wok at just under high heat. Add the bacon pieces and cook, stirring frequently, until they are crisp and browned, about 5 minutes. Without draining the oil, add the chicken and ginger to the skillet.
  • Cook, tossing constantly, until browned, about 4-5 minutes. Add the peppers and onions and stir to combine. Toss constantly while they cook until crisp tender, about 4 minutes. Add the snow peas and bean sprouts and stir to combine. Tossing constantly, cook for about 1 more minute until the colors are bright and everything is slightly softened.
  • Add the soy sauce mixture and stir to combine. Cook about 1-2 minutes, until the sauce thickens slightly and coats the chicken and vegetables. Serve over rice if desired. Enjoy!

  • In a wok, heat the oil. Add the chiles and stir-fry them over moderate heat until they begin to darken, about 1 minute. Using a slotted spoon, transfer them to a plate.
