8 skinless, boneless chicken breasts
1 cup bread crumbs
1 teaspoon dried oregano
½ teaspoon garlic salt
salt and ground black pepper to taste
6 tablespoons olive oil, divided
2 (14 ounce) cans diced tomatoes
2 teaspoons white sugar
1 teaspoon garlic salt
1 teaspoon dried basil
½ teaspoon dried oregano
salt and ground black pepper to taste
6 ounces sliced pepperoni
3 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Place chicken breasts between 2 sheets of heavy plastic or waxed paper on a solid, level surface. Firmly pound with the smooth side of a meat mallet to a 1/2-inch thickness.
  • Combine bread crumbs, 1 teaspoon oregano, 1/2 teaspoon garlic salt, salt, and black pepper in a shallow bowl. Dip both sides of chicken in bread crumb mixture until evenly coated.
  • Heat 1 1/2 tablespoon olive oil in a large skillet over medium heat. Cook 2 chicken breasts until browned and no longer pink in the center, about 4 minutes per side. Repeat with remaining olive oil and chicken breasts. Arrange chicken breasts in a 9x13-inch baking dish.
  • Combine tomatoes, sugar, 1 teaspoon garlic salt, basil, 1/2 teaspoon oregano, salt and black pepper in a saucepan. Cook over medium-low heat until heated through, 10 to 15 minutes. Pour sauce evenly over chicken breasts in the baking dish.
  • Cover tomato sauce with pepperoni and mozzarella cheese.
  • Bake in the preheated oven until cheese is melted, 20 to 30 minutes.

3 ounces sliced pepperoni (about 1/2 cup)
1/2 teaspoon Italian seasoning
3/4 cup plain breadcrumbs
1 tablespoon olive oil
2 large eggs
Kosher salt
Cooking spray
2 large skinless, boneless chicken breasts, each cut into 8 strips
For the dipping sauce:
1 cup marinara sauce
1/4 cup shredded mozzarella cheese (about 1 ounce)

Steps:

  • Make the chicken fingers: Preheat the oven to 425 degrees F. Pulse the pepperoni in a food processor until finely chopped. Transfer to a shallow dish and combine with the Italian seasoning, breadcrumbs and olive oil. In a separate shallow dish, whisk the eggs with a pinch of salt.
  • Set a rack on a baking sheet; coat the rack with cooking spray. Add the chicken to the egg mixture and toss to coat. Remove the chicken from the egg mixture, shaking off any excess, then coat with the pepperoni breadcrumbs, pressing firmly to adhere. Place the strips on the prepared rack and coat generously with cooking spray. Bake until cooked through and golden brown, 15 to 20 minutes.
  • Meanwhile, make the dipping sauce: Combine the marinara sauce and mozzarella in a microwave-safe bowl. Just before serving, microwave in 30-second intervals until the sauce is hot and the cheese melts. Stir to combine. Serve with the chicken fingers.

2 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
2 tablespoons butter
2 tablespoons olive oil
3 cups good marinara sauce
One 3.5-ounce package pepperoni slices
One 8-ounce ball mozzarella, cubed
Minced fresh parsley, for serving
Salad or cooked pasta, for serving

Steps:

  • Use a sharp knife to slice both chicken breasts in half through the middle, resulting in 4 thinner chicken cutlets. Season with salt and pepper.
  • Heat a heavy skillet over medium to medium-high heat and add the butter and olive oil. Cook the chicken until it has nice color on the outside and is cooked through, about 2 1/2 minutes per side. Remove the chicken to a plate.
  • Pour the marinara sauce into the skillet and cook, stirring, to heat through. Nestle the chicken cutlets in the sauce, then arrange some pepperoni slices over the top of each one. Lay some cubed mozzarella on top, then cover the skillet with a lid and cook until the cheese is melted, 2 to 3 minutes. Sprinkle with the parsley.
  • Serve immediately with a side salad or over pasta, with marinara spooned over the top.

1/2 lb pasta
1/2 whole pepperoni
1/3 cup flour
1/2 teaspoon salt
1/4 teaspoon pepper, freshly ground
1/2 teaspoon oregano, ground (or 2 teaspoons fresh)
1/2 teaspoon basil, crushed (or 2 teaspoons fresh)
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 lb boneless skinless chicken breast
to taste olive oil (optional)
16 ounces tomato sauce
1 (6 ounce) can tomato paste
1/2 teaspoon red pepper flakes, crushed (or more, to taste)

Steps:

  • * I used quartered low-fat pepperoni slices without sacrificing the taste. While I needed to use olive oil to make up for the missing rendered fat, I did save considerably on cholesterol.
  • Cook pasta according to package directions.
  • Dice pepperoni into 1/4" cubes.
  • Cook in frying pan over medium heat, allowing the fat from it to render out. Remove from pan and set aside. Season flour with salt, pepper, oregano, basil, garlic powder and onion powder.
  • Cut chicken in to bite-sized chunks.
  • Dredge chicken pieces in seasoned flour until coated.
  • Shake off excess flour and brown in the rendered pepperoni fat (and olive oil, if needed) until the chicken is almost cooked.
  • Remove from pan and set aside. Whisk tomato sauce, tomato paste, crushed red pepper flakes and 1/2 cup water together in pan until smooth.
  • Return chicken and pepperoni to pan.
  • Bring to simmer and cook, stirring, for 5 to 7 minutes.
  • Serve over a bed of pasta.

1/2 cup mayonnaise
1 tablespoon plus 1 teaspoon Dijon mustard

2 limes, 1 juiced (about 2 tablespoons), 1 cut into wedges
1 1/4 packed cups flat-leaf parsley, leaves and tender stems, roughly chopped
1/3 cup grated Cheddar, plus 1/4 cup cubed, plus 8 slices for topping
1 small shallot, minced (about 1/4 cup)
3 large garlic cloves, minced
1 teaspoon ground cumin
1/2 teaspoon red-pepper flakes
1 pound ground chicken, preferably dark meat
2 tablespoons neutral oil, such as canola oil, or ghee
3 tablespoons olive oil
1 large head butter or Boston lettuce, leaves torn into bite-size pieces
1 ripe Hass avocado, diced
4 brioche or burger buns, lightly toasted

Steps:

  • In a small serving bowl, combine the mayonnaise with 1 tablespoon mustard. Season to taste with salt and the juice of 1 lime wedge.
  • In a medium bowl, thoroughly combine 1 cup parsley with the grated cheese, shallot, garlic, cumin and red-pepper flakes. Stir in 1 tablespoon of the Dijon mayonnaise, 1 teaspoon salt and 1/4 teaspoon pepper. Add the chicken and gently combine. Form into 4 large, round balls.
  • Heat a 12-inch cast-iron or heavy skillet over medium-high until very hot, 1 1/2 to 2 minutes. Add the neutral oil or ghee, then add the chicken meatballs, spacing them out in the pan. Use a metal spatula or the back of a wooden spoon to press them until they form 1/2-inch thick patties. Cook without moving for 3 to 4 minutes, until a deep golden crust has formed on the bottom and they easily release from the pan. Flip the patties using a sturdy spatula and cook until cooked through with a nice crust on both sides, about 3 minutes more. If the patties need more time, you can cover the pan and cook for 1 to 2 more minutes, adjusting the heat as needed to avoid scorching. A minute or two before they're done, set 2 slices of Cheddar cheese on top of each patty to melt.
  • While the burgers are cooking, in the bottom of a serving bowl, mix the 2 tablespoons lime juice with the remaining 1 teaspoon mustard; whisk in the olive oil until smooth and season with salt and pepper. Add the torn lettuce leaves, avocado, remaining parsley and cubed Cheddar, and toss to coat with the dressing.
  • Place the burgers on the buns, slather with Dijon mayonnaise, and top with a little of the greens and avocado from the salad. Serve with the salad, plus the lime wedges and any remaining Dijon mayonnaise on the side.

One of the recurring themes in this movie was Goldie Hawn's character's ability to cook an amazing dish called Chicken Pepperoni. I had never heard of Chicken Pepperoni before, but I thought it sounded delicious. So I decided to put some ingredients together and gave it the ol' college try. It came out delicious!

This burger lends itself to lots of options and variety, all of which are delicious! Even my beef-loving husband loved it and ate every last bite. The best part is the complex texture, moistness, and unique (though not weird...) taste. We enjoyed them with some zucchini fries (fresh from our new backyard veggie garden). Optional: toast buns with a slice of your preferred cheese. Feel free to dress your burger to your liking; I chose Swiss cheese, ketchup, tomatoes, and spinach (my husband opted for American cheese, ketchup, and mustard). Make sure to test patties for doneness prior to consuming!

1 large sprig rosemary or sage, leaves only, chopped
1 clove garlic, grated
Kosher salt and freshly ground pepper

1/2 cup chopped fresh parsley and/or basil
1/2 teaspoon finely grated lemon zest, plus 2 teaspoons fresh lemon juice (from 1 lemon)
8 slices provolone cheese
4 onion rolls, split
4 slices beefsteak tomato
Lettuce leaves, for serving

Steps:

  • Put the turkey, pepperoni, rosemary, half of the garlic and 1/2 teaspoon each salt and pepper in a large bowl and mix with your hands until combined. Form into four 1/2-inch-thick patties.
  • Heat a large cast-iron skillet over medium-high heat. Add the patties and cook, undisturbed, until browned, 5 minutes. Turn and cook until golden brown on the bottom, 3 more minutes. Meanwhile, whisk the mayonnaise, parsley, lemon zest and juice, and the remaining garlic in a small bowl. Season with salt and pepper. 2 red bell peppers, sliced
1 large onion, sliced
Pinch plus 1 teaspoon kosher salt
Pinch plus 1 teaspoon freshly ground black pepper
3 cloves garlic, sliced
1/2 cup pizza sauce
2 pounds (80/20) ground beef
1 pound sweet Italian sausage, casing removed
1/2 teaspoon dried oregano
1/2 teaspoon dried ground sage
6 slices provolone
6 semolina rolls, split and toasted
Torn fresh basil, for topping

Steps:

  • Preheat a grill to medium heat.
  • Pour the olive oil into a large skillet over a medium-high heat. When the oil is hot, add the bell pepper and onion, then sprinkle with a pinch each of salt and pepper. Cook, stirring frequently, until lightly browned and just tender, 8 to 10 minutes. Add the garlic and cook until just softened, about 1 more minute. Stir in the pizza sauce and 1/2 cup water, then simmer until thickened but still saucy, about 5 minutes. Set aside and keep warm.
  • Combine the beef, sausage, oregano, sage and remaining teaspoon each of salt and pepper in a large bowl. Mix with your hands until well combined. Form into six patties, about 1 inch thick and 4 1/2 inches wide.
  • Grill the patties until cooked through, 6 to 7 minutes per side. Top each with a slice of cheese during the last 1 to 2 minutes and cover to melt.
  • Serve the burgers on the rolls and top with the pepper and onion sauce, then add the fresh basil.

CHICKEN FLORENTINE BURGERS

Well, I invented this recipe for a burger contest, but was not even in the finals! My family and friends LOVE it and said they cannot believe it did not win something. These are great as they are, or made into mini-burgers for a party or mini-meatballs for a cocktail party!

1 1/2 cups white wine, preferably Pinot Grigio
1/2 large sweet onion, finely diced
3 medium cloves garlic, minced
3/4 pound ground chicken breast
3/4 pound ground chicken thighs
1 1/2 teaspoons salt
3/4 teaspoon freshly ground black pepper
2 teaspoons Dijon mustard
12 ounces frozen chopped spinach, thawed and squeezed dry of all liquid
3 ounces grated Swiss cheese
1/2 cup plain bread crumbs
Olive oil
6 sourdough rolls, split horizontally
6 slices Swiss cheese
6 slices beefsteak tomato

Steps:

  • Put wine, onion and garlic into medium saucepan. Bring to a boil over medium-high heat and reduce until about 2 tablespoons of liquid is remaining. Pour reduced wine mixture into shallow pie plate and let cool to room temperature.
  • Meanwhile, in large mixing bowl, place ground chicken meat, salt, pepper, mustard, spinach, grated Swiss, bread crumbs and cooled wine mixture. Gently combine (do not over mix!) and form into 6 patties.
  • If using gas grill, preheat to high. Brush the grids with olive oil, turn to medium heat and place patties on grill. Close lid and grill for 10 minutes. Flip burgers over, close lid, cook for about 6 more minutes. Brush both sides of rolls with olive oil, place on grill, place 1 slice Swiss on each burger and close lid for about 30 seconds. Check rolls and remove when golden brown. Remove burgers as soon as cheese melts a little. Place patties on rolls, top with tomato slices and serve.
  • You can also make these inside the house. Preheat large frying pan over medium heat. Add enough olive oil to coat bottom of pan and heat. Add the patties and cover pan for 10 minutes. Flip burgers over, cover pan and cook for about 6 to 8 minutes more or until juices run clear. Top with Swiss and replace cover until cheese melts. Buns can be browned under the broiler.

½ teaspoon salt
¼ cup shredded parmesan cheese
1 lb ground chicken
½ teaspoon salt
½ teaspoon pepper
½ teaspoon dried oregano
½ teaspoon dried basil
½ teaspoon dried parsley
2 cloves garlic, minced
¼ cup shredded parmesan cheese
4 slices mozzarella cheese
4 burger buns
marinara sauce, to taste
fresh basil, to garnish

Steps:

  • Stir bread crumbs, salt, and parmesan together in a bowl.
  • In a large bowl, mix together chicken, salt, pepper, oregano, basil, parsley, minced garlic, and parmesan cheese.
  • Grab a handful of the chicken mixture and pat it out flat in your palm.
  • Place a slice of mozzarella cheese in the middle and fold the chicken over the edges. Make sure the cheese is fully covered on both sides by the chicken mixture.
  • Cover the patty with the bread crumb mixture on both sides.
  • Cook patty in a pan over medium-high heat for 4 minutes on each side.
  • Place on a bun and garnish with marinara sauce and fresh basil.
  • Enjoy!

1 sprig sage leaf, chopped
2 garlic cloves, minced
salt and pepper
1/3 cup mayonnaise
1/4 cup chopped fresh parsley or 1/4 cup fresh basil
1 small lemon, zest of
4 slices provolone cheese
4 rolls, of your choice lightly toasted
lettuce leaf
4 slices beefsteak tomatoes (optional)

Steps:

  • In a bowl place the chicken, pepperoni, half the garlic, sage, salt and pepper.
  • Mix together and form into 4 equal sized patties.
  • In large skillet, over medium heat, fry patties until desired doneness.
  • Meanwhile, combine the mayo, lemon zest, herb mixture, the other half of garlic, salt and pepper.
  • Place cheese on top of each burger and let melt.
  • Divide the mayo dressing among the 4 bun bottoms.
  • Place a patty on top, along with the lettuce and tomato, if using.
  • Serve.

Pizza burgers lack many things, among them, pepperoni! Here is our version which we feel is totally 'Pizza'! Try it with our recipe #255242 which is packed with pizza flavor and requires no cooking! Suggested from a friend: Instead of patting burgers with a spatula, on a TV cooking show the chef placed an indent in the middle of the raw patty with their thumb. As the burgers cook the indent recedes and the burger keeps its shape. Haven't tried it yet but will let you know if it works. Apparently a good way to check the doneness too.

3 -4 ounces sliced pepperoni
1/2 lb ground beef
1/2 lb ground mild Italian sausage
1 teaspoon butter
1 teaspoon olive oil
1/2 cup sliced mushrooms (optional)
4 slices mozzarella cheese
4 slices provolone cheese
1/2 cup pizza sauce, warmed (recommended 2bleu's 2 Minute 2 Easy Pizza Sauce)
4 kaiser rolls, toasted (or similar type burger buns)

Steps:

  • To a food processor, add the sliced pepperoni. Mix until most of the pepperoni is ground up, pulsing as you go. Add the ground beef and sausage. Form meat into 4 patties.
  • To a large skillet over medium/med-high heat, melt the butter and olive oil until butter is melted. If using mushrooms, saute them until done, 1-2 minutes. Remove with slotted spoon and set aside.
  • Add the patties to the pan and cook 4-5 minutes per side until cooked thru. Pat the burgers down with the spatula as needed to retain a wide burger (enough to cover the bun).
  • When burgers are just about done, place mushrooms on burgers (if using), then 1 slice each of the cheeses on top of each burger. Reduce heat to low (or turn burner off if electric oven), cover tightly and let steam until cheese is melted (1-2 minutes).
  • Place burgers on top of bottom bun then spread warmed pizza sauce over top of melted cheese. Close up buns and enjoy.

1/2 cup fresh cilantro (chopped fine)
1/2 medium red bell pepper (chopped fine)
1/2 medium green bell pepper (chopped fine)
1/2 medium orange bell peppers (chopped fine) or 1/2 medium yellow bell pepper (chopped fine)
1/2 medium red onion (chopped fine)
1/2 lb ground chicken (one full package)
1 tablespoon olive oil
1 teaspoon sugar
1/2 medium red bell pepper (cut into strips)
1/2 medium green bell pepper (cut into strips)
1/2 medium orange bell peppers (cut into strips) or 1/2 medium yellow bell pepper (cut into strips)
8 rolls
8 tablespoons mayonnaise

Steps:

  • In large bowl place ground chicken and the first five ingredients, stir to combine completely until the mixture is consistent and smooth.
  • Place a grill pan, or regular skillet, (if you plan to do these on the grill, know that they are very moist and will need to be placed very gently on the grill.) Spray it with non-stick spray and set the skillet/grill pan to medium heat.
  • Slice the remaining bell peppers into strips,.
  • toss with the olive oil and sugar. Place into a second skillet set to medium heat.
  • Cook these stirring occasionally until they soften and get little black char marks (depending on how hot your stove is, this may take 4-7 minutes).
  • Divide the burger mixture into 8 even amounts and shape with hands then place into skillet. The burgers should be roughly ½ inch thick throughout.
  • Cook the burgers for 7 minutes on each side or until the juices run clear and they have an internal temperature of 170° before serving.
  • To assemble the burgers, place on a fresh.
  • Italian roll with mayo and cooked bell peppers on top.

1/4 cup grated Parmesan cheese

2 slices part-skim mozzarella cheese, cut in half

  • In a large bowl, combine the first 5 ingredients. Add chicken; mix lightly but thoroughly. Shape into four 1/2-in.-thick oval patties., Grill burgers, covered, over medium heat or broil 4 in. from heat 4-7 minutes on each side or until a thermometer reads 165°. Cover and grill 30-60 seconds longer or until cheese is melted., Grill bread, uncovered, over medium heat or broil 4 in. from heat 30-60 seconds on each side or until toasted. Top with remaining spaghetti sauce. Serve burgers on toasted bread. Freeze option: Place patties on a plastic wrap-lined baking sheet; wrap and freeze until firm. Remove from pan and transfer to an airtight freezer container; return to freezer. To use, grill frozen patties as directed, increasing time as necessary for a thermometer to read 165°.
