Oyster Sauce/Dressing for Greens image

This is from the Donna Hay cookbook "Cooking from the Shelf". It's my favourite way to eat vegetables! Serve the sauce over steamed bok choy, gai larn, broccoli, green beans, whatever you want! You can substitute dry sherry if you don't have the rice wine.

2 teaspoons sesame oil
2 tablespoons gingerroot, shredded
1/3 cup oyster sauce
2 tablespoons brown sugar
1/3 cup chinese rice wine

Steps:

  • Place the sesame oil in a hot wok with the ginger and cook for 1 minute.
  • Add the oyster sauce, sugar and rice wine (or sherry) and simmer until thick.
  • Place the greens on serving plate and pour the sauce over.

A great side dish for a DIY Chinese take-away, or an filling quick meal.

100g vermicelli rice noodle
1 tbsp soy sauce
1 tsp fish sauce
3 tbsp oyster sauce
2 tbsp sunflower oil
4 chopped spring onions
3 chopped garlic cloves
1 deseeded and chopped red chilli
100g thinly sliced shiitake or chestnut mushrooms
200g broccoli florets
2 roughly chopped heads of pak choi

Steps:

  • Soak the rice vermicelli in boiling water for 4 minutes. Drain, refresh under cold water, drain again and set aside.
  • Mix soy, fish sauce and oyster sauce in a bowl. Heat the sunflower oil in a large wok, add spring onions, chopped garlic cloves and the deseeded and chopped chilli.
  • Stir fry for 20 seconds before adding the thinly sliced shiitake or chestnut mushrooms and broccoli florets. Stir fry for 1 minute, then add the pak choi and the sauce mixture. Stir and cook for about 2 minutes over a high heat, adding a splash of water if the sauce becomes too thick.
  • Tip in the noodles, remove from the heat and toss to mix well. Serve in warmed bowls and tuck in with your chopsticks.

Steps:

  • Place oysters on grill and grill until the shell opens. Remove top shell and place a piece of shiitake mushroom and green onion on oysters. Heat the peanut oil, and add the soy sauce. Pour over oysters for a sizzling effect.

My family loves this recipe and begs me to make it every Thanksgiving and Christmas. Serve it with turkey, ham, duck or goose - it tastes great with any type of holiday meal. If you like green pepper, you may want to add 1/4 cup to this dish.

1 pint shelled oysters, drained
¾ cup half-and-half cream
¼ cup Worcestershire sauce
2 cups crushed buttery round crackers
½ cup butter or margarine, melted

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 2 quart baking dish.
  • In a medium bowl, mix together the oysters, half-and-half, and Worcestershire sauce. Spread evenly in the prepared baking dish. In a small bowl, mix together the crackers and butter. Sprinkle over the top of the oyster mixture.
  • Bake for 30 minutes in the preheated oven, until the top is nicely browned and dressing is hot.
