This is a great do ahead recipe and was made by Janice Elder of Charlotte, NC., in the 2009 Ultimate Cranberry Recipe Contest in which she was a finalist..Congratulations Janice and thanks for the recipe..we love it.

1 Tbsp spicy brown mustard
1 c chopped cooked turkey( 1/4 pound)
1 c chopped cooked ham (1/4 pound)
1 1/2 c shredded swiss cheese
8 large eggs
3 c milk
1 tsp salt
1/2 tsp freshly ground black pepper
1/2 tsp hot pepper sauce
1 Tbsp balsamic vinegar
1/3 c powdered sugar
1 baguette (day old is fine)
14 oz can ocean spray@whole berry cranberry sauce

Steps:

  • 1. Spray 13 x 9-inch baking dish with cooking spray. Using serrated knife, cut baguette into 1/2 inch slices. Toast both sides until crisp and golden brown around edges.
  • 2. Mix 1/2 cup cranberry sauce and the mustard in small bowl. Spread over 1 side toasted baguette slices. Arrange half of slices, cranberry side up, in bottom of dish, overlapping if necessary. Sprinkle evenly with turkey, ham, and cheese. Top with remaining toast, cranberry, side down.
  • 3. Combine eggs, milk, salt, pepper, and pepper sauce in large bowl; whisk until well blended and slightly frothy. Pour mixture carefully into baking dish, making sure bread is soaked with liquid. Cover; refrigerate at least 4 hours or overnight.
  • 4. Preheat oven to 350º. Bake for 60-70 minutes or until puffed and top is slightly golden and toothpick inserted in center comes out clean. Let cool for 10 minutes.
  • 5. Meanwhile, blend remaining cranberry sauce and the vinegar in small bowl. Just before serving, sift powdered sugar over strata, Top each serving with dollop of cranberry mixture.

Going to a restaurant for Sunday brunch can be wonderful, but, maybe you prefer the comfort and economy of a home-cooked meal, especially when you are entertaining guests. A strata, including this one, is a great way to go, since you make it the night before, and when you are ready the next day, just pop it in the oven.

nonstick cooking spray (like Pam)
8 large eggs
2 cups whole milk (you can use 2% also)
5 -6 dashes hot pepper sauce (I like "Louisiana" hot sauce, but you use your favorite)
1 teaspoon dry mustard ("Colman's Original English Mustard" is my favorite)
1 loaf sliced white bread, torn into 1/2-inch pieces (about 1 pound and, please, use a good-quality)
8 ounces deli-style sliced turkey breast, cut into matchstick-sized pieces
8 ounces deli-style sliced ham, cut into matchsticks
3 cups shredded swiss cheese (about 12 ounces)

Steps:

  • Spray a 9x13x2-inch baking pan with the non-stick cooking spray.
  • In a large bowl, whisk the eggs, milk, hot sauce, and dry mustard until well blended.
  • Arrange as much of the bread pieces as you can in a single layer in the prepared pan. Top, in layers, with the turkey, ham, and 1/2 of the cheese. Top with the remaining bread pieces, and pour on the egg mixture, tilting the pan to make sure all the bread is coated. Sprinkle with the remaining cheese. Cover with plastic wrap and refrigerate overnight.
  • The next day, when you are ready to cook, preheat the oven to 350 degrees. While the oven is preheating, take the strata out of the refrigerator, remove the plastic wrap, and let stand at room temperature until the oven is ready. Bake until puffed and golden, about 45 minutes. Let rest 5 minutes before slicing into squares.

6 eggs, beaten
1/3 cup milk
1/4 teaspoon salt
1/4 cup mayonnaise
2 garlic cloves, chopped finely
8 slices firm white bread (or whole wheat)
2 california avocados, sliced
8 ounces sliced cooked chicken (optional) or 8 ounces cooked turkey (optional)
4 ounces sliced jalapeno jack cheese
1/4 cup unsalted butter
1 cup fruit salsa
4 sprigs fresh cilantro (optional)

Steps:

  • Beat together eggs, milk, and salt.
  • Reserve.
  • Mix mayonnaise with garlic.
  • Spread 1/2 tablespoon on one side of each slice of bread.
  • Cover 4 slices of bread with avocado slices; top each with 2 slices chicken or turkey (if using) and 1 slice of cheese.
  • Cover each with remaining slice of bread, spread side down.
  • Diagonally cut each in half; reserve.
  • In a large frying pan, melt 2 tablespoons butter.
  • Meanwhile, dip 4 sandwich halves in egg, coating well.
  • Brown in hot butter, about 2 minutes per side.
  • Repeat with remaining sandwich halves.
  • Serve each sandwich with 1/4 cup salsa.
  • Garnish with cilantro sprig.

This is a wonderful breakfast to wake up to. Made the night before. It is best if made 10 -12 hours before cooking. If it sits longer it can dry out.

1 loaf sandwich bread, 20 slices
1 1/2 lbs ham, sliced Virginia ham
25 slices swiss cheese, deli sliced
1 cup milk
4 eggs
3 teaspoons Dijon mustard
1 pinch salt
1 pinch pepper

Steps:

  • In large Casserole baking dish, layer bottom with bread, one piece at a time to fill bottom of pan.
  • Then add one layer of ham, when layer is complete add one slice of cheese until layer is complete. Repeat layers until casserole is up to casserole height (try to make sure last layer is with cheese.).
  • Mix together: milk, Dijon, eggs, salt and pepper. Once mixed well, add to top of Strata making sure it is covered evenly. If there is excess on top, let drain into middle and side. (You can help this process.) The top will look soggy and the mixture will soak into the bread.
  • The next morning, cook at 350°F for 20 minutes covered, then 25 minutes uncovered.
  • Serve with strawberry jam.

1 lb sausage
12 ounces French bread or 12 ounces Italian bread
2 (4 ounce) cans mushrooms, drained
6 large eggs
1 quart milk
2 teaspoons italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon pepper
8 ounces mozzarella cheese, shredded
4 ounces cheddar cheese, shredded

Steps:

  • In large skillet, cook sausage, drain.
  • Grease a 9x13 baking dish.
  • Cut bread into 1/2 inch cubes.
  • In a large bowl, combine sausage, bread and mushrooms.
  • Put in prepared pan.
  • In same large bowl, whisk together eggs, milk and seasonings.
  • Pour over bread mixture.
  • Cover with plastic wrap and refrigerate overnight.
  • In the morning, preheat oven to 350°F.
  • Bake uncovered 1 hour. Sprinkle evenly with cheeses.
  • Bake 15 minutes longer.
  • Let stand 10 minutes before serving.

  • Preheat the oven to 375° and butter a 9-by-13-inch glass or ceramic baking dish. Arrange one-third of the bread in the bottom of the dish and spread with half of the mustard. Top with half of the ham, 1 tablespoon of the tarragon and one-third of the Gruyère cheese. Repeat the layering, leaving off the last layer of cheese.
  • In a medium bowl, whisk the milk with the eggs and season generously with black pepper. Pour the custard evenly over the dish, pressing the bread to absorb the liquid. Pat the remaining cheese on top and cover with a sheet of buttered parchment paper.
