Simple appetizer - the balsamic vinegar gives it a little kick. Best if the mixture has 1 or 2 hours to blend flavors before serving.

FAST TOMATOES WITH BASIL AND BALSAMIC
If you love tomatoes like I do, then you may enjoy this recipe. It's a quick side dish/plate filler that doesn't have too many ingredients, it's healthy and tastes nice. Original recipe calls for Roma and Plum tomatoes but I use what is in season. This recipe comes from a book called "Purely Golden Door" by The Golden Door Health Retreats.

BALSAMIC TOMATO-BASIL PASTA
This super tasty recipe came from a co-worker who's wealthy family always made sure to serve this at their fancy summer parties. It is a snap to put together, making it perfect for families who want a meal in a hurry, or the host of party who wants something spectacular that won't keep them in the kitchen instead of with their guests. Either way, you will get the same rave reviews that I have over the years.

SLOW-ROASTED BALSAMIC TOMATOES WITH LEEKS AND BASIL
This is adapted from a Jamie Oliver recipe in "Jamie's Kitchen". It's so easy to make and is delicious. Goes beautifully with chicken breast fillets stuffed with feta, olives and whatever else you like .....YUM! To fit in with 'Zaar's publishing requirements, I have put in specific quantities for the salt and pepper, whereas the original recipe doesn't, so please change them to suit your personal taste.

- Heat a pot of salted water to a boil. Add the pasta and cook until al dente, checking for doneness a few minutes before the package instructions indicate (the pasta should be tender but still slightly firm).
- In a medium bowl, whisk together the balsamic vinegar, Dijon mustard, maple syrup, and salt until fully combined. Gradually whisk in the olive oil, adding 1 tablespoon at a time and whisking until it incorporates and makes a creamy sauce.
- Drain the pasta. In the pasta pot, combine the drained noodles with the balsamic sauce and tomatoes and cook for 2 minutes, stirring. Remove from heat and add the Parmesan cheese and basil.
