CHICKEN PINEAPPLE KABOBS
Tender, flavorful, and juicy chicken kabobs made with a homemade marinade and grilled to perfection.

Steps:
- Soak 10 wooden skewer sticks in the water for about 1 hour.
- In a large mixing bowl, add all marinade ingredients. Whisk until well combined.
- Place the chicken breast into a large Ziploc bag or in an air-tight container. Reserve 1/2 cup of the marinade for brushing and pour the rest over the chicken.
- Seal the bag and gently move the chicken around until evenly coated. Refrigerate and let marinate for at least an hour.
- Meanwhile cut the pineapple, pepper, and onion into cubes. Drizzle remaining 2 tablespoons of olive oil over the veggies.
- Season with some salt and pepper, toss until well coated. Thread the chicken, cubed pineapple, red peppers, and onion onto the skewers.
- Brush the grill with some oil and preheat over medium-high heat. Place the skewers onto the preheated grill.
- Brush the skewers with reserved marinade and grill for 5 minutes, then flip and brush again with the marinade. Cook for another 5-7 minutes more or until chicken is cooked through.
- Serve warm with the leftover marinade.

- In a large bowl, combine chicken and vegetables. Drizzle with 1/3 cup dressing and toss to coat. - Add ketchup, soy sauce, honey, mustard, lemon juice, brown sugar and garlic to a small pan and cook for 10 minutes. Remove from heat and allow to cool.
- Cut chicken, peppers and onion into 1 1/2-inch cubes.

I clipped this recipe from a magazine years ago. "The marinade also works well for grilling whole chicken breasts or cut-up chicken pieces. Tips for grilling chicken: take out chicken 20 minutes before grilling and cut into uniform sizes so it will cook evenly throughout. You can prick the chicken with a fork to allow marinade to soak in. Do not over-marinate chicken, as it will draw out the juices and make it tougher. Because bacteria can multiply when marinating chicken, you should always discard marinade after soaking the chicken in it. In fact you shouldn't even use it for basting. Any kind of kabobs are perfect for entertaining a crowd of family or friends. They provide a simple, self contained meal--after all, meat, vegetables and fruit can all be grill at one time. If you don't have a grill or if weather doesn't permit outdoor cooking, you can get great results using the broiler setting on your oven. I prefer sturdy metal skewers; wooden skewers also work well but must be soaked in water for about 1 hour before using."
