2 teaspoons olive oil
4 bone-in, skin-on chicken thighs
Coarse salt and ground pepper
1 large yellow onion, halved and thinly sliced
3 teaspoons minced garlic
3/4 teaspoon ground cumin
3/4 teaspoon ground coriander
1/4 teaspoon ground cinnamon
2 medium carrots, cut into 1/4-inch-thick slices
6 cups low-sodium chicken broth
1 can (15 ounces) chickpeas, rinsed and drained
Zest and juice of 1 lemon
2 tablespoons finely chopped fresh cilantro leaves

Steps:

  • In a large Dutch oven or heavy pot, heat oil over medium-high. Season chicken with salt and pepper and cook, skin side down, until skin is browned and crisp, about 6 minutes. Flip chicken and cook until browned, 6 minutes. Transfer chicken to a plate.
  • Pour off all but 1 tablespoon fat from pot. Add onion and cook, stirring occasionally, until soft, about 4 minutes. Add 2 teaspoons garlic and spices; cook, stirring, until fragrant, about 1 minute. Stir in carrots and return chicken to pot. Stir in broth.
  • Bring to a boil. Reduce to a medium simmer, partially cover, and cook until chicken is falling off the bone, 50 minutes.
  • Remove chicken from soup. When cool enough to handle, tear chicken into large pieces, discarding skin and bones. Return meat to pot. Add chickpeas and season with salt, pepper, and lemon juice. In a small bowl, stir together 1 teaspoon garlic, lemon zest, and cilantro; sprinkle over soup before serving.

Steps:

  • Heat olive oil in a large pot over medium heat, and stir in garlic and onion. Cook until tender. Season with cumin and coriander.
  • Mix vegetable stock and potatoes into the pot, and bring to a boil. Reduce heat, and simmer about 10 minutes. Stir in the garbanzo beans, and continue to cook until potatoes are tender.
  • In a small bowl, blend the heavy cream, tahini, and corn meal. Mix into the soup.
  • Stir spinach into the soup. Season with cayenne pepper and salt. Continue to cook until spinach is heated through.

75g butter , softened
2 tbsp chopped fresh coriander , plus extra to garnish
finely grated zest and juice of 1 lime
1 tbsp sunflower oil
1 onion , finely chopped
1 red pepper , deseeded and finely chopped
2 garlic cloves , crushed
2 red chillies , deseeded and thinly sliced
1 tsp each ground coriander and cumin
2 x 410g cans chickpeas , drained and rinsed
1.2l vegetable stock

Steps:

  • Cream together the butter, fresh coriander, lime zest and seasoning. Spoon onto greaseproof paper and roll up into a sausage shape. Place in the freezer.
  • Heat oil in a pan, then fry onion for 2-3 mins until softened. Add pepper, garlic and 1 chilli. Cook for 2-3 mins, stirring, then add ground coriander and cumin and cook for a further min.
  • Stir in chickpeas and stock. Bring to the boil, then simmer, uncovered, for 15 mins. Whizz with a hand blender until smooth. Return to the pan to heat through. Stir in the lime juice, then season. Serve topped with a slice of the butter, remaining chilli and fresh coriander. Serve with warm pitta bread.

2 cups chopped onion (about 2 medium)
1 tablespoon olive oil
4 cups water
a 19 ounce can chick-peas, rinsed and drained
2 large garlic cloves, chopped
1/2 teaspoon salt, or to taste
1/2 cup packed fresh coriander sprigs, washed well and spun dry
2 teaspoons fresh lemon juice, or to taste
Accompaniment: cumin pita crouton-crisps
For cumin pita crouton-crisps:
3 mini pita loaves (about 3 inches in diameter), halved crosswise
4 teaspoons extra-virgin olive oil
1 teaspoon ground cumin
1/2 teaspoon salt

Steps:

  • Make cumin pita crouton-crisps:
  • Preheat oven to 400°F.
  • Cut pita halves into 1/3 inch strips and in a small bowl toss with oil until coated evenly. Add cumin and salt and toss until spices adhere.
  • In a shallow baking pan spread pita strips in one layer and bake in middle of oven 3 minutes, or until crisp and golden. Crouton-crisps keep in an airtight container 2 weeks.
  • Serve crouton-crisps in soups, salads, or as a snack. Makes about 2 cups.
  • Make soup:
  • In a 3 quart heavy saucepan cook onion in olive oil over moderate heat, stirring, until softened and golden brown. Add water, chick-peas, garlic, and salt and simmer, uncovered, 15 minutes. In a blender purée chick-pea mixture and coriander with lemon juice until smooth.
  • Serve soup topped with pita crouton-crisps.

1/4 cup extra-virgin olive oil
2 stalks celery, chopped
2 carrots, chopped
1 large onion, chopped
Kosher salt and freshly ground pepper
2 15-ounce cans chickpeas, drained and rinsed
1 15-ounce can diced fire-roasted tomatoes with green chiles
1 tablespoon ground cumin
1 1/2 teaspoons ground coriander
2 pocketless pitas
Juice of 1/2 lemon
Chopped fresh cilantro, for topping

Steps:

  • Preheat the oven to 375 degrees F. Heat 2 tablespoons olive oil in a large Dutch oven or pot over medium-high heat. Add the celery, carrots, onion, 1/2 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until the vegetables are softened, 7 minutes.
  • Add 6 cups water, the chickpeas, tomatoes, 2 teaspoons cumin, 1 teaspoon coriander and 1/2 teaspoon salt. Bring to a simmer and cook, stirring occasionally and slightly mashing the chickpeas with the back of a spoon, until the soup thickens slightly, about 20 minutes. Season with salt and pepper.
  • Meanwhile, slice the pitas into thin wedges. Toss with the remaining 2 tablespoons olive oil, 1 teaspoon cumin, 1/2 teaspoon coriander and 1/2 teaspoon salt. Spread in a single layer on a baking sheet. Bake until golden and crisp, 8 to 10 minutes.
  • Stir the lemon juice into the soup just before serving. Top with cilantro and the pita chips.

1 1/2 pints (900 milliliters/3 3/4 cups) homemade chicken stock
2 ounces (50 grams/1/2 stick) butter
5 ounces finely chopped (150 grams/1 cup) onion
2 cloves garlic, peeled and chopped
1 green chilli, deseeded and finely chopped
Salt and freshly ground pepper
1 pound (450 grams/4 cups) peas (good quality frozen are fine)
2 tablespoons chopped fresh coriander, plus whole leaves for garnish
Sugar, for seasoning
Softly whipped cream, for garnish

Steps:

  • Bring the chicken stock to a boil. Melt the butter on a gentle heat and add the onions, garlic, and chilli. Season with salt and freshly ground pepper and sweat for 3 to 4 minutes. Add the peas and cover with the hot stock. Bring to a boil and simmer for 5 to 8 minutes. Add the coriander and puree the liquid in a blender. Season with salt, freshly ground pepper and a pinch of sugar, which enhances the flavour even further. Serve with a swirl of softly whipped cream and a few fresh coriander leaves sprinkled over the top.

Serve with toasted pita or Morrocan flat bread drizzled with a bit of good quality olive oil. If you're not crazy about cloves, like my DH, you can reduce to 1/4 tsp and adjust from there.

2 small brown onions, chopped
2 large garlic cloves, crushed
1 lb lamb shoulder steak, trimmed of excess fat and cut into small chunks
1 1/2 teaspoons cumin, ground
2 teaspoons paprika
1/2 teaspoon clove, ground
1 bay leaf
2 tablespoons tomato paste
5 1/4 cups beef stock
3 (10 ounce) cans chickpeas (or less, depending on your taste)
28 ounces tomatoes, diced (use a GOOD quality tomato)
1/2 cup coriander, finely chopped (cilantro)
fresh coriander leaves, for garnish
black olives, for garnish

Steps:

  • Heat the oil in a large heavy-bottomed saucepan or stockpot. Add the onion and garlic and cook for 5 minutes, or until softened.
  • Add the meat in batches, and cook over high heat until the meat is browned on all sides. Return all the meat to the pan.
  • Add the spices and bay leaf to the pan and cook until fragrant. Add the tomato paste and cook for about 2 minutes, stirring constantly.
  • Add the stock to the pan, stir well and bring to a boil.
  • Add the chickpeas, tomato and chopped coriander to the pan. Stir, then bring to a boil. Reduce heat and simmer for 2 hours, or until the meat is tender. Stir occasionally. Season to taste with salt and pepper.
  • Serve garnished with coriander leaves and small black olives.

2 tsp cumin seeds
large pinch chilli flakes
1 tbsp olive oil
1 red onion, chopped
140g red split lentils
850ml vegetable stock or water
400g can tomatoes, whole or chopped
200g can chickpeas or ½ a can, drained and rinsed (freeze leftovers)
small bunch coriander, roughly chopped (save a few leaves, to serve)
4 tbsp 0% Greek yogurt, to serve

Steps:

  • Heat a large saucepan and dry-fry 2 tsp cumin seeds and a large pinch of chilli flakes for 1 min, or until they start to jump around the pan and release their aromas.
  • Add 1 tbsp olive oil and 1 chopped red onion, and cook for 5 mins.
  • Stir in 140g red split lentils, 850ml vegetable stock or water and a 400g can tomatoes, then bring to the boil. Simmer for 15 mins until the lentils have softened.
  • Whizz the soup with a stick blender or in a food processor until it is a rough purée, pour back into the pan and add a 200g can drained and rinsed chickpeas.
  • Heat gently, season well and stir in a small bunch of chopped coriander, reserving a few leaves to serve. Finish with 4 tbsp 0% Greek yogurt and extra coriander leaves.

  • I have used store bought chickpeas which I have drained the salt water and rinsed twice. As I have used the store bought canned chick peas, I have used vegetable stock. We can also use the dry chickpeas. Rinse the dry chickpeas and soak it water overnight and we can cook with 2-3 cups of water in pressure cooker till the chickpeas is soft and tender. We can use the water used for cooking the chickpeas for the soup. Canned chickpeas are now available and it would definitely ease the whole process. Heat a pan and dry fry the coriander seeds and cumin seeds for a couple of minutes. Cool the fried ingredients and grind it to a coarse powder. Heat butter in a pan and add chopped garlic and saute it for 2-3 minutes.
  • Then add finely chopped onions along with a pinch of salt and saute them till they turn translucent. Now add turmeric powder, broken red chilli and ground spice to the pan.
  • Saute them for a couple of minutes. Remove the pan from flame. Take 2 tablespoon of chickpeas and keep it in a bowl separately which we will add it later. Take the remaining chickpeas in a vessel and using a handblender or mixer
  • Grind it to a nice paste by adding 1/2 cup of vegetable stock or cooked chick peas water. Add the coriander leaves with the stalk to the mixer. Grind it to a nice paste in the blender.
