A classic Champagne Vinaigrette recipe

Yield Makes 3/4 cup

Number Of Ingredients 9

1 garlic clove, finely chopped
2 tablespoons dijon Mustard
1/4 cup champagne vinegar
2 tablespoons fresh lemon juice
2 tablespoons honey
2 or 3 dashes hot sauce
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra virgin olive oil

Steps:

  • Whisk together the garlic, mustard, vinegar, lemon juice, honey, hot sauce, salt, and pepper in a large bowl. Slowly whisk in the olive oil until the dressing is emulsified. Alternatively, you can combine all the ingredients in a blender or a food processor and puré until smooth.

This is a great vinaigrette. You can add dried herbs if you like. I especially like it with mixed vegetable/fruit salads. If champagne vinegar is not available, it is easily homemade with leftover champagne and a few week's setting time. Instructions are included.

1/4 cup champagne vinegar
3/4 cup olive oil
1/2 teaspoon salt
fresh ground black pepper

Steps:

  • Place all ingredients in a small glass jar and shake until oil is emulsified.
  • May be kept in refrigerator up to 1 month.
  • Homemade champagne vinegar can be done by storing leftover champagne in an open jar, at room temperature for a few weeks.
  • It will turn into vinegar.

  • Place the salad greens in a medium bowl and add enough dressing to moisten. Sprinkle with a little extra salt and pepper, if desired, and serve immediately.

Number Of Ingredients 6

1 to 2 tablespoons excellent wine vinegar, or a combination of vinegar and lemon juice
1/8 teaspoon salt
Optional: 1/4 to 1/2 teaspoon dry or Dijon mustard
6 to 8 tablespoons best-quality olive oil or salad oil
Fresh ground pepper
Optional: 1 tablespoon minced shallots or scallions and/or 1/4 teaspoon dried herbs such as tarragon or basil

Steps:

  • Either make the dressing in your empty salad bowl: Beat vinegar or vinegar and lemon juice, salt, and optional mustard in bowl to dissolve the salt. Then beat in the oil by droplets, and finally the optional shallots or scallions, and such seasonings as you feel necessary.
  • Or place all ingredients in a covered jar, shake vigorously to blend, and correct seasoning.
