A simple garlic-oregano marinade adds wonderful flavour to flank steak. We serve it with grilled red onion but asparagus and whole scallions would be just as tasty.

3 tbsp(s) Red wine vinegar
1 tbsp(s) Olive oil
2 tsp(s) Dried oregano
2 tsp(s) Minced garlic
0.25 tsp(s) Black pepper freshly ground
1.5 pound(s) Uncooked lean flank steak
0.75 tsp(s) Table salt divided
1 large Uncooked red onion(s) cut into 1/4-inch-thick slices
2 spray(s) Cooking spray

Steps:

  • In a shallow glass dish (or sealable food storage bag), mix vinegar, oil, oregano, garlic and pepper. Add steak; turn to coat, making sure steak is coated with vinegar mixture. Cover dish (or seal bag); marinate in refrigerator for at least 30 minutes.
  • Heat outdoor grill.
  • Remove steak from marinade; discard marinade. Sprinkle steak with 1/2 teaspoon salt. Coat onions with cooking spray; sprinkle with remaining 1/4 teaspoon salt.
  • Grill steak, turning once, until medium rare, about 15 minutes, or longer for desired degree of doneness. Let steak rest for 10 minutes.
  • While steak is resting, grill onions, turning occasionally, until lightly charred and tender, about 7 to 9 minutes.
  • To serve, thinly slice steak against the grain and place on a serving platter; scatter onions over top. Yields about 3 1/2 ounces steak and 1/3 cup onions per serving.

25-Minute Flank Steak with Charred Vidalia Onion Salad image

Steak may be the main ingredient in this easy weeknight dinner, but the onions are the stars. Their sweet-charred flavors work perfectly with the bite from the watercress and radishes and the rich earthiness of the sesame oil.

2 medium Vidalia onions or other sweet onions (about 1 pound)
2 tablespoons toasted sesame oil
Kosher salt and freshly ground black pepper
1 tablespoon fish sauce
4 medium radishes, very thinly sliced (use a mandoline if you have one)
1 large bunch watercress, rinsed and dried
1/2 cup fresh cilantro leaves
1 pound flank steak

Steps:

  • Preheat a very large cast-iron skillet over medium-high heat until it just begins to smoke.
  • While the pan is heating, slice the onions into 1/4-inch-thick rings and toss with 1 tablespoon of the oil, 1/4 teaspoon salt and a few grinds of pepper in a medium bowl. Add the onions to the skillet and cook, undisturbed, until they char slightly, about 2 minutes. Stir occasionally with a wooden spoon until they are further charred and slightly softened but still crunchy, 3 to 4 minutes more. Transfer to a plate.
  • Stir together the remaining 1 tablespoon oil and the fish sauce in the medium bowl that the onions were in. Add the radishes, watercress, cilantro and cooked onions and toss until well coated. Allow the mixture to sit at least 5 minutes, so the juices from the onion combine with the dressing.
  • Wipe out the skillet the onions cooked in and return it to medium-high heat. Sprinkle the steak with 3/4 teaspoon salt and a few grinds of pepper and put it into the hot skillet. Cook until well browned on one the bottom, 4 to 5 minutes; flip and cook until medium rare, 4 to 5 minutes more. Transfer to a cutting board and allow the steak to rest for a few minutes, then slice thinly against the grain.
  • Divide the salad mixture among 4 bowls. Top each bowl with slices of steak.

1 large red onion, halved and sliced 1/4 inch thick
2 red bell peppers, ribs and seeds removed, sliced 1/4 inch thick
1 can (20 ounces) cannellini beans, drained and rinsed
2 tablespoons plus 1 teaspoon olive oil
1 tablespoon fresh rosemary leaves (or 1 teaspoon dried rosemary, crumbled)
Coarse salt and ground pepper
1 1/2 pounds flank steak (1 piece)
1 tablespoon red-wine vinegar

Steps:

  • Heat broiler. If using a broilerproof rimmed baking sheet, set rack 4 inches from heat; if using a broiler pan, set rack so that top of pan is 4 inches from heat. On sheet (or pan), toss onion, peppers, and beans with 2 tablespoons oil, rosemary, 1 teaspoon salt, and 1/4 teaspoon pepper.
  • Push bean mixture to one side of sheet (or pan); place steak on other side. Rub steak with remaining teaspoon oil; season generously with salt and pepper. Broil, tossing bean mixture occasionally, until steak is medium-rare (135 degrees on an instant-read thermometer) and vegetables are lightly charred, 12 to 16 minutes.
  • Transfer steak to a cutting board; cover loosely with foil, and let rest in a warm place for at least 5 minutes. Transfer bean mixture to a serving bowl; toss with vinegar. Slice steak thinly; serve with bean mixture.

Grilled flank steak with a wonderful Asian marinade! A friend from Minneapolis emailed me this recipe, knowing I would like it, and she was right! Prep time does not include 6 hour or overnight marinating time.

2 (1 1/2 lb) flank steaks, trimmed of all excess fat
6 tablespoons rice wine vinegar
1/2 cup soy sauce
1/2 cup toasted sesame oil, divided
cooking oil, for greasing grill
2 bunches green onions
kosher salt
3 tablespoons sesame seeds, toasted (see Note)

Steps:

  • Place steaks in shallow nonreactive dish, which will hold them comfortably in a single layer.
  • In small bowl, whisk together vinegar, soy sauce and 6 tablespoons of the sesame oil.
  • Pour marinade over the meat.
  • Cover and refrigerate 6 hours or overnight, turning several times.
  • When ready to cook, lightly oil grill rack and arrange 5 inches from heat source.
  • Cut off root ends and all but 4 inches from green stems of green onions.
  • Place onions in shallow dish and brush all over with remaining 2 tablespoons of the sesame oil.
  • Set aside.
  • When grill is hot, remove steaks from marinade.
  • Lightly pat dry with paper towels.
  • Place steaks on grill and cook 5 to 6 minutes per side for medium-rare.
  • When done, place on platter and cover lossely with aluminum foil to keep warm.
  • Grill green onions, turning them until slightly charred, 3 to 5 minutes.
  • To serve, slice meat diagonally across the grain into 1/4-inch-thick slices.
  • Arrange meat and grilled onions on serving platter and season with salt to taste.
  • Sprinkle with sesame seeds.
  • Note: To toast sesame seeds, place them in medium skillet over medium heat.
  • Toast, stirring, until seeds are golden brown, 3 to 5 minutes.
  • Remove and cool.

2 tablespoons Worcestershire sauce
2 tablespoons fresh lemon juice
2 tablespoons olive oil
1 garlic clove, minced
2 teaspoons sugar
1 pound flank steak (3/4 inch thick)
For salad:
1 medium shallot, finely chopped
3 tablespoons red-wine vinegar
1/2 teaspoon Dijon mustard
4 tablespoons extra-virgin olive oil, divided
1 very large red onion, halved and sliced 1/3 inch thick
3/4 pound bitter greens such as escarole or frisée or a combination
Equipment: a grill basket

Steps:

  • Marinate steak:
  • Whisk together Worcestershire sauce, lemon juice, oil, garlic, and sugar in a shallow dish. Add steak, turning to coat, and marinate at room temperature 15 minutes.
  • Make dressing and prepare onion while steak marinates:
  • Whisk together shallot, vinegar, mustard, 3 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper in a large bowl. Toss onion with remaining tablespoon oil and 1/4 teaspoon salt in a small bowl.
  • Grill steak and onion:
  • Prepare a gas grill for direct-heat cooking over medium-high heat. Pat steak dry and season with 1/4 teaspoon each of salt and pepper. Oil grill rack. Grill steak, covered, turning once, 8 to 10 minutes total for medium-rare.
  • Transfer steak to a cutting board and let rest, uncovered, 5 minutes.
