225 grams ginger biscuits - crushed
115 grams unsalted butter - melted
300 grams full fat soft cheese
250 ml double cream
2 limes - juice and rind
4 tablespoons ginger syrup
8 pieces Opies stem ginger
Lime zest
Chopped ginger
Icing Sugar

Steps:

  • Mix the biscuits with the melted butter and press 40 50g into the bases of each 9cm individual ring mould.
  • Chill in the refrigerator for approximately 1 hour.
  • Lightly whip the cream and then mix in the cream cheese and ginger syrup and lime juice.
  • Add the stem ginger and lime zest and mix in thoroughly.
  • Spoon onto the biscuit bases and spread evenly over the surface.
  • Chill in a refrigerator for 2- 3 hours until firm.
  • To serve place the cheesecake on a serving plate and carefully remove from the mould.
  • Sprinkle a small amount of lime zest on the surface and then carefully arrange the chopped ginger around the edge of the plate.
  • Lightly dust with icing sugar.

1 tablespoon sugar

FILLING:
2 packages (8 ounces each) cream cheese, softened
1 can (16 ounces) pumpkin
1 cup sugar
1 cup 4% cottage cheese
1/4 cup all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
3 large eggs, lightly beaten
TOPPING:
1-1/2 cups (12 ounces) sour cream
1/3 cup orange marmalade
1 teaspoon vanilla extract
Candied orange slices, optional

Steps:

  • In a small bowl, combine cookie crumbs, sugar and butter. Press onto the bottom and 2 in. up the sides of greased 9-in. springform pan; set aside. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a large bowl, beat the cream cheese, pumpkin, sugar, cottage cheese, flour, cinnamon, vanilla, salt, nutmeg and cloves until blended. Add eggs; beat on low speed just until combined. Pour into crust. , Bake at 350° for 60-70 minutes or until center is almost set. Combine the sour cream, marmalade and vanilla; carefully spread over cheesecake. Bake 10 minutes longer. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer., Refrigerate overnight. Remove sides of pan. If desired, top with candied orange slices. Refrigerate leftovers.

Nonstick cooking spray
1 pound fresh ginger root
5 cups water
Approximately 1 pound granulated sugar

Steps:

  • Spray a cooling rack with nonstick spray and set it in a half sheet pan lined with parchment.
  • Peel the ginger root and slice into 1/8-inch thick slices using a mandoline. Place into a 4-quart saucepan with the water and set over medium-high heat. Cover and cook for 35 minutes or until the ginger is tender.
  • Transfer the ginger to a colander to drain, reserving 1/4 cup of the cooking liquid. Weigh the ginger and measure out an equal amount of sugar. Return the ginger and 1/4 cup water to the pan and add the sugar. Set over medium-high heat and bring to a boil, stirring frequently. Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize, approximately 20 minutes. Transfer the ginger immediately to the cooling rack and spread to separate the individual pieces. Once completely cool, store in an airtight container for up to 2 weeks. Save the sugar that drops beneath the cooling rack and use to top ginger snaps, sprinkled over ice cream or to sweeten coffee.

Steps:

  • Cut ginger into 2-inch pieces and slice lengthwise into 1/8-inch slices. Score ginger slices by pricking with a fork.
  • Toss ginger with sugar in a bowl.
  • Combine ginger-sugar mixture and water in a large skillet or wok; bring to a simmer. Reduce heat and cook, stirring occasionally, until sugar melts into a syrup and starts to crystallize, about 1 hour. Continue stirring until syrup is mostly crystallized and ginger comes together in a pile in the center of the skillet and very little syrup drains out; remove from heat.

Nonstick vegetable oil spray
1 cup shortbread cookie crumbs made from 6 ounces shortbread cookies (such as Walkers), finely ground in a food processor
2 tablespoons unsalted butter, melted
Pinch of fine sea salt
Cheesecake:
1 teaspoon unflavored gelatin
2/3 cup sugar
8 tablespoons (1 stick) unsalted butter, cut into 8 pieces, room temperature
Pinch of fine sea salt
10 ounces cream cheese, cut into 10 pieces, room temperature
1/4 cup crème fraîche or sour cream
1/4 cup fresh orange juice
1 tablespoon fresh lime juice
1 cup heavy cream, beaten to soft peaks
Ginger-lime candied raspberries:
1 6-ounce container fresh raspberries
1/4 cup sugar
1 tablespoon minced peeled ginger
1 tablespoon thinly sliced fresh mint leaves plus more for garnish
1 teaspoon fresh lime juice

Steps:

  • For shortbread crust:
  • Lightly coat an 8x8x2" baking pan with nonstick spray; line with plastic wrap, leaving a generous overhang.
  • Mix crumbs, butter, and salt in a medium bowl until it resembles moist sand. Press evenly onto bottom of pan. Cover; chill.
  • For cheesecake:
  • Place 2 tablespoons. cold water in a small saucepan; sprinkle gelatin over. Let stand until gelatin is soft, 5-10 minutes.
  • Using an electric mixer on medium-high speed, beat sugar, butter, and salt in a medium bowl until light and fluffy, about 5 minutes. With motor running, add cream cheese 1 piece at a time, occasionally scraping down sides of bowl. Beat in crème fraîche, orange juice, and lime juice.
  • Gently heat gelatin over lowest heat, stirring constantly, just until gelatin dissolves. Scrape gelatin into cream cheese mixture; beat to blend. Fold in whipped cream just to incorporate. Pour mixture over crust; smooth top. Chill until set, about 3 hours. DO AHEAD: Cheesecake can be made 3 days ahead. Cover and keep chilled, or freeze airtight for up to 2 weeks.
  • For ginger-lime candied raspberries:
  • Cook first 3 ingredients, 1 tablespoon mint, lime juice, and 1 tablespoon water in a small saucepan over low heat until raspberries are soft and juices are released, 2-3 minutes. Transfer to a small bowl. Cover with plastic wrap and chill foratleast1hourandupto1day.
  • Using plastic wrap overhang, lift cheese-cake from pan and place on a flat surface. Cut into pieces; place on plates. Spoon candied raspberries over; drizzle with sauce and garnish with mint.

  • Make gingersnap crumb crust and reserve.
  • Put oven rack in middle position and preheat oven to 350°F.
  • Pulse sugar and ginger in a food processor until ginger is finely chopped, then add cream cheese and pulse until smooth. Add eggs, milk, flour, nutmeg, and salt and pulse until just combined.
  • Reserve 2/3 cup cream cheese mixture in a glass measure. Whisk together remaining 1 1/3 cups cream cheese mixture and pumpkin in a large bowl until combined.
  • Pour pumpkin mixture into gingersnap crumb crust.   • Preheat oven to 350°F.

1 (18 ounce) package German chocolate cake mix (without pudding)
4 tablespoons butter, melted
1 egg
1 teaspoon grated orange zest
1/2 teaspoon ground ginger
16 ounces cream cheese, room temperature
1 (14 ounce) can sweetened condensed milk
3 eggs
1/2 cup orange juice
2 teaspoons grated orange zest
1 cup sour cream
1/2 cup packed light brown sugar
1/2 teaspoon ground ginger
2 oranges, washed and dried
2 cups sugar
1 1/4 cups water

Steps:

  • Preheat oven to 325. Lightly grease a 10 inch springform pan.
  • Make crust:.
  • Measure out 1/2 cup of cake mix and set aside.Place remaining cake mix in large mixing bowl.
  • Add remaining crust ingredients to cake mix. Blend with mixer on low speed for about 2 minutes. Stop machine, scrape down sides of bowl so the batter comes together in a ball.
  • With your finger tips, pat dough evenly over the bottom and up the sides of the pan until smooth. Set aside.
  • Filling:.
  • In the same mixing bowl you used for the crust, mix cream cheese and sweetened, condenesed milk on low speed until well mixed.
  • Add eggs, reserved cake mix, orange juice and orange zest.
  • Beat at medium for 1 minute, scraping sides of bowl as necessary.
  • Pour filling onto the crust and smooth with spatula.
  • Bake for 68-72 minutes, or until browned and shiny, but center still jiggles slightly when shaken.
  • Just before bake time is over, mix sour cream, brown sugar, and ginger in a small bowl.
  • Spread topping over cheesecake when it is done, then return pan to oven until topping sets, 7-8 minutes.
  • Remove cheesecake from oven, let cool for 30 minutes, then cover and refrigerate overnight, or until ready to serve.
  • Candied orange zest: (optional garnish for top of cheesecake).
  • Use a zester, or a sharp paring knife to cut long strands of orange peel from oranges.
  • Place sugar and water into a medium saucepan over medium heat. Stir until sugar completely dissolves and the syrup comes to a simmer.
  • Drop the orange zest into the syrup and stir so the strands are covered.
  • Let barely simmer for 1-1/2 hours, or until zest is translucent. The longer you cook it, the crunchier the zest will be.
  • With metal tongs, remove zest from pan and let dry on a metal rack for several hours.
  • After the zest cools, but before it completely dries, it will be flexible so that you can curl or twist it to make it more ornamental.
  • When the zest has dried, store it in a tightly covered container.
  • For an even tastier treat, dip dried strands into melted chocolate!
