Steps:
- Mix the biscuits with the melted butter and press 40 50g into the bases of each 9cm individual ring mould.
- Chill in the refrigerator for approximately 1 hour.
- Lightly whip the cream and then mix in the cream cheese and ginger syrup and lime juice.
- Add the stem ginger and lime zest and mix in thoroughly.
- Spoon onto the biscuit bases and spread evenly over the surface.
- Chill in a refrigerator for 2- 3 hours until firm.
- To serve place the cheesecake on a serving plate and carefully remove from the mould.
- Sprinkle a small amount of lime zest on the surface and then carefully arrange the chopped ginger around the edge of the plate.
- Lightly dust with icing sugar.

- In a small bowl, combine cookie crumbs, sugar and butter. Press onto the bottom and 2 in. up the sides of greased 9-in. springform pan; set aside. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a large bowl, beat the cream cheese, pumpkin, sugar, cottage cheese, flour, cinnamon, vanilla, salt, nutmeg and cloves until blended. CANDIED GINGER

- Spray a cooling rack with nonstick spray and set it in a half sheet pan lined with parchment.
- Peel the ginger root and slice into 1/8-inch thick slices using a mandoline. Place into a 4-quart saucepan with the water and set over medium-high heat. Cover and cook for 35 minutes or until the ginger is tender.
- Transfer the ginger to a colander to drain, reserving 1/4 cup of the cooking liquid. Weigh the ginger and measure out an equal amount of sugar. Return the ginger and 1/4 cup water to the pan and add the sugar. Set over medium-high heat and bring to a boil, stirring frequently. Reduce the heat to medium and cook, stirring frequently, until the sugar syrup looks dry, has almost evaporated and begins to recrystallize, approximately 20 minutes. Transfer the ginger immediately to the cooling rack and spread to separate the individual pieces. Once completely cool, store in an airtight container for up to 2 weeks. Save the sugar that drops beneath the cooling rack and use to top ginger snaps, sprinkled over ice cream or to sweeten coffee.
CRYSTALLIZED OR CANDIED GINGER
Crystallized ginger can be served with espresso and cake or champagne and fruit, coated in bittersweet chocolate and rolled in hazelnuts or macadamia nuts. It can be chopped or julienned to use in or as a garnish for pastries, pumpkin pies, stewed fruits cookies, and many other desserts. Store in an airtight container in a cool and dark place.

- Toss ginger with sugar in a bowl.
- Combine ginger-sugar mixture and water in a large skillet or wok; bring to a simmer. Reduce heat and cook, stirring occasionally, until sugar melts into a syrup and starts to crystallize, about 1 hour. - For shortbread crust:
- Lightly coat an 8x8x2" baking pan with nonstick spray; line with plastic wrap, leaving a generous overhang.
- Mix crumbs, butter, and salt in a medium bowl until it resembles moist sand. Press evenly onto bottom of pan. Cover; chill.
- For cheesecake:

- For crumb mixture - combine in a small bowl, flour, sugar, butter and candied orange peel.

- Preheat oven to 325. Lightly grease a 10 inch springform pan.
- Make crust:.
- Measure out 1/2 cup of cake mix and set aside.Place remaining cake mix in large mixing bowl.
- Add remaining crust ingredients to cake mix. Blend with mixer on low speed for about 2 minutes. Stop machine, scrape down sides of bowl so the batter comes together in a ball.
- With your finger tips, pat dough evenly over the bottom and up the sides of the pan until smooth. Set aside.
- Filling:.
- In the same mixing bowl you used for the crust, mix cream cheese and sweetened, condenesed milk on low speed until well mixed.
- Add eggs, reserved cake mix, orange juice and orange zest.

- Remove cheesecake from oven, let cool for 30 minutes, then cover and refrigerate overnight, or until ready to serve.
- Candied orange zest: (optional garnish for top of cheesecake).
- Use a zester, or a sharp paring knife to cut long strands of orange peel from oranges.
- Place sugar and water into a medium saucepan over medium heat. Stir until sugar completely dissolves and the syrup comes to a simmer.
- Drop the orange zest into the syrup and stir so the strands are covered.
- Let barely simmer for 1-1/2 hours, or until zest is translucent. The longer you cook it, the crunchier the zest will be.
- With metal tongs, remove zest from pan and let dry on a metal rack for several hours.
- After the zest cools, but before it completely dries, it will be flexible so that you can curl or twist it to make it more ornamental.
- When the zest has dried, store it in a tightly covered container.
- For an even tastier treat, dip dried strands into melted chocolate!

- Preheat oven to 350°F (180°C). Grease sides of a 9-in. (23 cm) round springform pan and line bottom with parchment paper cut to size. In a small bowl, mix graham crumbs and butter. Press evenly onto bottom of pan to create crust. Bake until golden brown, about 10 min. Let cool completely.
- Meanwhile, using an electric mixer (stand or hand-held), beat together cream cheese, 1/2 cup (125 mL) sugar, sour cream, eggs and fresh ginger until fully incorporated. Pour batter into pan and spread evenly. Bake until centre is just set, with a slight jiggle, about 40 min. Cool completely to room temperature before refrigerating overnight to set.
- Once set, make a glaze by bringing 1/2 cup (125 mL) sugar and orange juice to boil in a medium saucepan over medium-high heat. Lower heat and simmer until liquid reduces to 1/2 cup (125 mL), about 20 min. While liquid is simmering, soak candied ginger in hot water for 10 min. then finely dice. Stir in candied ginger once liquid is reduced.
- Preheat oven to broil. Peel and remove pith from navel oranges, then cut into segments. Spread in a single layer on a parchment paper–lined baking sheet and sprinkle 2 tsp (10 mL) sugar overtop. Broil until golden and slightly caramelized, about 5 to 7 min. Garnish cake with bruléed orange slices and drizzle glaze overtop.
