1 cup butter, softened
1/4 cup finely chopped fresh dill weed
2 tablespoons grated lemon peel
1 teaspoon coarse (kosher or sea) salt
1/2 teaspoon freshly ground pepper
3 shallots, finely chopped
12 wild salmon fillets, 1 inch thick (8 oz each)
1 tablespoon coarse (kosher or sea) salt
1 tablespoon freshly ground pepper
24 thin slices lemon

Steps:

  • Heat oven to 375°F. In small bowl, beat all Dill-Shallot Butter ingredients with electric mixer on medium speed until blended; set aside.
  • Cut 12 (15x10-inch) pieces of cooking parchment paper. Fold each piece in half crosswise and crease, then open again. Place 1 salmon fillet near fold. Sprinkle each fillet with 1/4 teaspoon each salt and pepper; spread evenly with Dill-Shallot Butter. Top with lemon slices. Fold paper; seal edges well with narrow folds. Place packets on 2 large cookie sheets.
  • Place 1 pan on middle oven rack and another on lower oven rack. Bake 12 minutes. Switch pans; bake 11 minutes longer or until fish flakes easily with fork.

110g pack lemon and garlic couscous
200ml hot vegetable stock
1 tbsp olive oil
handful chopped fresh herbs (parsley, plus thyme, tarragon or rosemary is good)
4 spring onions , thinly sliced
4 Sun-blush or sundried tomatoes , chopped
2 salmon fillets , approx 140g/5oz each

Steps:

  • Put the couscous into a bowl and stir in the stock and oil. Cover with cling film and leave to stand 10 mins, then uncover and fluff up with a fork. Keeping back some herbs, add the rest of the ingredients, except the salmon. Season to taste.
  • Heat oven to 200C/fan 180C/gas 6. Cut two large sheets of non-stick baking paper, then divide the couscous between them. Sit each fillet on the couscous, top with the remaining herbs and season. Fold the paper over, then twist the edges to seal - like a Cornish pasty. Pop the parcels onto a baking sheet and bake for 15 mins or until the fish feels firm through the paper. Serve in the bag.

What better way to use up cilantro and parsley in the fridge, than making a spiced and flavorful herbaceous sauce! This Moroccan sauce gets paired with earthy spices like cumin and coriander, making it an easy go-to coating and marinade for many proteins. In this recipe, it's pulsed in a food processor and gets spooned over salmon filets. This chermoula also calls for adding juice of lemon and the zest, but you can try it with preserved lemons for a nice relish.

1/2 cup packed fresh cilantro
1/4 cup packed fresh parsley leaves, plus 2 tablespoons chopped
2 cloves garlic
2 teaspoons ground cumin
2 teaspoons ground coriander
Finely grated zest and juice of 1 lemon, plus wedges for serving
6 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1/2 small zucchini, finely chopped
2 teaspoons spicy harissa sauce (such as Mina)
1 cup couscous
4 5-ounce salmon fillets (about 1 inch thick)

Steps:

  • Make the chermoula: Combine the cilantro, 1/4 cup parsley leaves, the garlic, 1 teaspoon cumin, 1 teaspoon coriander and the lemon zest and juice in a food processor. Pulse until finely chopped. While the machine is running, slowly drizzle in 1/4 cup olive oil and process until smooth. Season with salt and pepper.
  • Meanwhile, heat a saucepan over medium-high heat. Add 1 tablespoon olive oil and the zucchini and cook, stirring, until crisp-tender, 1 minute. Add the harissa, 1 1/4 cups water and a big pinch of salt and bring to a boil. Stir in the couscous, then cover, remove from the heat and wait 5 minutes; fluff with a fork. Stir in the 2 tablespoons chopped parsley; season with salt.
  • Season the salmon with the remaining 1 teaspoon each cumin and coriander and a few pinches each of salt and pepper. Heat the remaining 1 tablespoon olive oil in a large nonstick skillet over medium-high heat. Add the salmon and cook until browned, 3 to 4 minutes per side. Divide among plates and top with the chermoula. Serve with the couscous and lemon wedges.

3 tablespoons EVOO (extra-virgin olive oil)
1 red onion, chopped
1/2 teaspoon crushed red pepper flakes
1 bunch of kale, stemmed and chopped, 1/2 to 2/3 pound
Salt and pepper
Freshly grated nutmeg
2 1/4 cups chicken stock
3 to 4 radishes, thinly sliced
1 lemon
4 skinless salmon fillets
1 tablespoon Old Bay seafood seasoning
1 tablespoon butter
1 1/4 cups couscous
1/4 cup chopped fresh dill
1/4 seedless cucumber, cut into 1/4-inch dice

Steps:

  • Heat 2 tablespoons of the EVOO in a skillet with a lid over medium to medium-high heat. Add the onions and cook for 3 to 4 minutes. Add the red pepper flakes, wilt in the kale, and season with salt, pepper, and nutmeg. Pour in 1 cup of the stock, cover, and simmer for 10 to 12 minutes. Then uncover, add the radishes, and sprinkle with the juice of 1/2 lemon.
  • While the kale cooks, heat the remaining tablespoon of EVOO in a skillet over medium-high heat. Season the salmon with Old Bay. Cook for 2 to 3 minutes on each side for pink centers and 2 minutes longer on each side for opaque fish. Douse the fish with the juice of the remaining 1/2 lemon.
  • While the salmon cooks, bring the remaining 1 1/4 cups of stock and the butter to a boil in a rice or sauce pot with a lid. Once it is boiling, stir in the couscous and dill. Turn off the heat, cover, and let stand for 5 minutes. Fluff with a fork.
  • Serve the salmon on a bed of spicy kale and couscous. Garnish the dill couscous with the chopped cucumber.

Suggested you serve with steamed greens but personally I think I would prefer a simple green salad. Have included 15 minutes cooling time in the cooking time.

60 ml chicken stock (1/4 cup salt reduced)
60 ml water (1/4 cup)
60 g couscous (1/3 cup)
1 zucchini (finely chopped)
1 teaspoon lemon zest (finely grated)
1 tablespoon lemon juice (fresh)
1 tablespoon dill (fresh chopped)
2 spring onions (scallions thinly sliced diagonally)
6 green olives (pitted, finely chopped)
black pepper (freshly ground to taste)
4 sheets filo pastry
cooking spray
2 (150 g) salmon fillets (skinless, boneless)
poppy seed (or Sesame Seeds to serve optional)

Steps:

  • Preheat oven to 190C (fan forced).
  • Line a baking tray with baking paper.
  • Put stock and water in a small saucepan and bring to the boil over a medium heat.
  • Remove pan from the heat and add couscous and cover and set aside for 3 minutes.
  • Using a fork, separate the grains and then trasfer to a medium bowl and set aside for 10 to 15 minutes to cool slightly.
  • Add succhini, lemon zest, lemon juice, dill, shallot and olives to the couscous and season with pepper and toss to combine.
  • Place 1 pastry sheet on a dry surface and spray with cooking spray and then top with another pastry and repeat this process until all 4 sheets are used.
  • Cut pastry stack in half crossways.
  • Spoon couscous mixture onto centre of each pastry stack and top with salmon.
  • Fold in sides of pastry and roll up and put pastry seam side down ont he baking tray.
  • Spry with cooking spray and sprinkle with poppy seeds or sesame seeds, if you like.
  • Bake for 15-20 minutes or until pastry is golden brown and the salmon is just cooked.
  • Serve the parcels with the suggested steamed broccoli and snow peas or a simple green salad.

3 large eggs
350 g spinach
150 g couscous
1 lemon
500 g salmon
3 tablespoons chopped fresh dill
425 g ready-rolled puff pastry, made into two sheets
300 g Greek yogurt
flour, for dusting
salt and pepper

Steps:

  • Boil two of the eggs for ten minutes, then cool, drain and peel.
  • Wilt the spinach in a bit of boiling water.
  • Let cool, then press as much water as you can out of the spinach.
  • Place the couscous in a bowl.
  • Squeeze juice from half of the lemon into the bowl, add 300ml boiling water and give it a good stir.
  • Cover and leave for up to 10 minutes, then use a fork to loosen the grains.
  • Cut the salmon into large chunks and squeeze the juice from the other half of lemon on top.
  • Season generously with pepper and 1 tbsp of the dill.
  • Roughly chop the eggs into big pieces.
  • Season with salt and pepper.
  • Oil a flat baking sheet and lay out one of the pieces of puff pastry.
  • Whisk the remaining egg and then brush a 1 inch border around the pastry.
  • Cover with half the spinach.
  • Stir half the yoghurt and 1 tbsp of the dill into the couscous and spoon half of that mixture over the spinach.
  • Top with the fish and egg.
  • Add the rest of the couscous and then the last of the spinach.
  • Lay the second sheet of pastry over the filling.
  • You may need to dust your worktop with flour first and just roll it a little bit, to make it slightly bigger than the bottom piece.
  • Crimp the edges together with a fork, then paint the surface with beaten egg and roll the border towards the centre.
  • Make a few steam holes with a fork or knife and put into a moderate oven (350 F or 180C).
  • Cook for 20-30 minutes until the pastry is puffed, golden and cooked through.
  • Serve in thick slices with a sauce made of the remaining dill and yogurt.

100g dried cranberries
2 tsp ground cinnamon
½ tsp ground allspice
50g unsalted butter , diced
85g toasted pine nut
small handful mint leaves, roughly chopped
small handful basil leaves , roughly chopped
6 x 140g skinless salmon fillets
25g butter , diced
zest 1 orange , juice of ½
6 tbsp cranberry sauce
zest and juice ½ orange

Steps:

  • Boil the kettle. Put the couscous, cranberries and spices in a large bowl. Dot with the butter and pour over 350ml boiling water. Cover immediately with cling film and leave for 5 mins to steam. Remove the film and fluff with a fork to loosen the couscous grains. Cool, stir in the pine nuts and herbs, then season to taste. Cut 6 squares of baking parchment about 30 x 30cm.
  • Season the salmon fillets, spoon the couscous in mounds in the centre of the parchment squares, then dot with a little butter. Top each with a piece of salmon, scatter with a little orange zest and drizzle with a little juice. Fold the sides of the paper over, then fold up the ends to make a parcel. Tie with string and secure with a bow. Stir together the cranberry sauce, orange zest and juice, then set aside in a serving bowl. The parcels can be chilled for up to 1 day. Be sure to remove them from the fridge 20 mins before cooking.
  • Heat oven to 200C/180C fan/gas 6. Put the parcels on a baking sheet in the middle of the oven and cook for 15 mins, or 20 mins if you prefer your salmon well done. Pop the parcels onto plates and let your guests unwrap their own supper. Serve with Garlic & feta broccoli and the cranberry & orange sauce.
