Steps:
- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
- Preheat oven to 350 degrees F (175 degrees C).
- Grease a 1 1/2-quart baking dish.
- Melt 3 tablespoons butter in a skillet over medium heat. Stir in the ham and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes.
- Stir potatoes into ham mixture; transfer to the prepared baking dish.
- Melt 1/4 cup butter in a saucepan over medium heat. Stir flour into melted butter until smooth.
- Gradually whisk milk into flour mixture; season with salt and black pepper. Continue cooking and stirring until thickened, about 2 minutes.
- Reduce heat to medium-low and stir Cheddar cheese into the white sauce until melted.
- Pour sauce over ham and potatoes.
- Sprinkle bread crumbs atop casserole.
- Bake in the preheated oven until sauce is bubbly and browned, 25 to 30 minutes.

GOOD OLE CREAMY HAM AND VEGGIE SOUP
I've made several versions of Ham and Potato soup, but this is by far my favorite.

- 1. Place leftover ham bone in large pot of water. Simmer for about 1 hr. During the last 30 min. add cubed red potatoes. Then once potatoes are tender, remove potatoes and set aside. Remove ham from pot and remove any ham from bone and return to broth.
- 2. In another large pot add butter, sliced carrots, sliced celery, sliced onion, and minced garlic. With lid on simmer for about 15 min. until veggies are tender. Add cooked potatoes to veggies. Stir and cook about 5 min. more.
- 3. Add flour to veggies and stir until mixed in well. Cook 5 min.
- 4. Add one can of evaporated milk and stir to combine.
- 5. Add ham broth and ham into mixture and stir well. Simmer for about 10-15 min till thickened.
- 6. Enjoy this creamy delicious soup with some grill cheese sammies.
CREAMY LEFT-OVER HAM AND POTATO STEW

- 1. Chop the ham in bite-sized pieces and set aside. Scrub the potatoes (any kind will do) and cut in bite-sized chunks. *** I did not peel my potatoes, but you can if you prefer ***
- 2. At this point, place the oil in a large Dutch oven until hot. While it is heating, chop the onion then scrub the carrots and slice. *** Again, I did not peel my carrots, but you can if desired ***
- 3. Place the cut up ham in the hot oil, sprinkle with the Bayou Blast (this is an Emeril Lagasse seasoning blend I mix up and keep on hand in my spice cabinet) and granulated garlic. Cook and stir for a couple minutes until fragrant.
- 4. Add the onion and mushrooms and cook until softened, about 3-4 minutes. Now put in the chopped potatoes and carrots, stirring to combine.
- 5. Sprinkle on the ground pepper and pour in chicken broth. Bring to a boil, then reduce heat to a slow boil and cook until the potatoes and carrots are almost tender.
- 6. Add the corn kernels and green peas and cook until heated through. Add the heavy cream and slowly heat to the boiling point. Taste and adjust seasoning as needed.
- 7. At this point, you may mix a couple tablespoons of all-purpose flour with a bit of water, mix thoroughly and add to the stew as a thickener, again stirring and bringing slowly up to a boil as it thickens.

- Combine potatoes, onion, turkey, ham, celery, carrots, asparagus, peas, and butternut squash in a large pot. Pour chicken broth and water over mixture; bring to a boil. - Dice the bacon and ham into large pieces. Set ham aside.
- Brown the bacon and remove from pan.
- Chop celery and carrots and add to bacon grease, cook 5 minutes.
- Chop onion, garlic, and potatoes (1/4 inch dice) and add, along with the reserved ham, to carrots and celery. Cook an additional 5 minutes, just to brown the ham and potatoes slightly.
- Drain any remaining grease from the vegetable/ham mixture and move to a Dutch oven.
- Add rosemary, thyme, chicken base, water, and salt (to taste).
- Bring to a boil and simmer for 15-20 minutes, or until potatoes are just barely done.
- Add heavy cream and simmer 5 minutes, until potatoes are completely cooked.
- Turn off heat, toss in spinach and stir until spinach is wilted.
- Serve with your favorite garlic breadsticks.

- Select SAUTE and HIGH, once HOT add the oil. Once the oil is shimerring add the ham and saute for 3-5 minutes, until golden brown.
- Add the rest of the ingredients from the SOUP section, except the sour cream.
- Close the lid, lock and point the valve to sealed.
- Pressure Cook for 10 minutes. Followed by a 15 minutes Natural Pressure Release, after which release manually the remaining pressure.
- Once the soup has cooked, add butter to a medium saucepan over medium heat and melt. Whisk in the flour until completely combined and gradually add in the heavy cream.
- Whisk well the flour mixture, until smooth. With the heat on the lowest stove setting, let the mixture cook until it starts to simmer and is getting thicker, stir occasionally.
- Select SAUTE again on your Instant Pot add the roux mixture, stir to combine.
- Using a potato masher, mash about 3/4 of the potatoes. You can also use an immersion blender.
- Stir in the 1/2 cup of sour cream until fully combined. Season with salt and pepper.
- If the soup is too thick, add more WARM chicken broth.
- Taste and adjust for salt and pepper.
- If you added more liquid, make sure to let the soup simmer for a few minutes.
- Serve warm, garnished with bacon, green onions, and sour cream.
- The soup will thicken more once it cools. When reheating, add more water, broth or milk to dilute it and simmer for a few minutes.
