- Heat oven to 400° F. Sprinkle pork with seasoned salt and pepper. On rack in shallow pan, place pork. Insert ovenproof meat thermometer so tip is in thickest part of pork.
- Bake uncovered 18 minutes.
- Meanwhile, in small bowl, mix orange marmalade and pepper flakes. Reserve half the marmalade mixture. Brush or spoon remaining marmalade mixture over pork.

TRIPLE ORANGE GLAZED PORK CHOPS
This is one I'd seen somewhere, but billed as "Double Orange Glazed". Well, I added the mandarin oranges and bumped the count up to three. I also added a few extras at the end to give it my own spin. I enjoyed this with white rice and roasted cauliflower and carrots, over which I sprinkled some blue cheese crumbles. It was quite the orange and white night!

- In a small bowl, mix together the orange juice and marmalade.
- Heat the butter and olive oil in a large skillet over medium heat. Season the pork chops with the salt and pepper. Add the chops and cook, turning once, until just cooked through, 6 to 8 minutes total. Transfer the chops to a platter and cover loosely with aluminum foil.
- Pour off all but 3 tablespoons of drippings from the skillet and add the orange juice mixture. Raise the heat to medium-high and stir, scraping up the brown bits on the bottom of the pan, until the sauce is reduced and slightly syrupy, 6 to 8 minutes. Add the cayenne pepper to taste, then the lime zest; check for seasonings and adjust as necessary. Return the pork chops to the pan, reduce the heat to medium, and turn the pork chops a few times in the sauce. Remove the chops and add the mandarin oranges at the very last minute, just to warm them. If left in too long they値l simply dissolve.
- Transfer the chops to serving dishes, drizzle with the sauce, and top with toasted coconut and parsley.
PORK TENDERLOIN WITH ORANGE-BALSAMIC GLAZE
This is one of our favourite ways to eat pork tenderloin as it is so easy to make, elegant enough for company and delicious. I omit the orange zest as the kids don't care for it. You could also substitute apricot jam for peach and omit the diced dried apricots. I cook mine on the gas barbeque by heating it up to desired temperature, turning one side off and placing the tenderloins on the side that was turned off. I tend to make extra glaze as I pour about 1/2 of it on the tenderloins before cooking. This recipe came from Rose Reisman's Secret for Permanent Weight Loss Cookbook.

- Preheat oven to 425°F Line a baking pan with parchment paper.
- In a hot non-stick grill pan or skillet sprayed with vegetable spray, sear the tenderloin for about 2 minutes per side or just until browned. Place in the prepared baking pan.
- To make the glaze, combine the 8 ingredients listed for the glaze until smooth. Spoon 1/4 cup of the glaze over the tenderloins and bake for about 20 minutes or until the internal temperature reaches 145 F for medium.
- Reheat the remaining glaze. Slice the tenderloin and serve with the glaze. Garnish with chopped parsley and diced apricots.

- In a blender, combine the orange juice, olive oil, garlic, and salt, and blend until smooth. Place the tenderloins in a 2.5-gallon resealable plastic bag or a large bowl. Pour the marinade over them, seal or cover with plastic wrap, and marinate in the refrigerator for 8 hours or overnight.
- Fire up the grill. Remove the tenderloins from the marinade and pat drive. Pour the marinade into a small saucepan, add the honey, and let the mixture boil until it is reduced to a syrupy consistency, about 20 minutes.
- Meanwhile, brush the grill with oil and grill the pork over medium heat for 20 minutes, turning occasionally. - In a small saucepan, all the orange juice, marmalade, maple syrup, red wine vinegar, and garlic. Whisk together over hight heat. Boil for 5-8 minutes, whisking occasionally until sauce is slightly thickened. Divide glaze in half. Keep half of the glaze warm in the saucepan.
- Season the tenderloins with salt and pepper. Over high heat, in an ovenproof skillet, heat the extra-virgin olive oil and sear all sides of the tenderloins.
