CLASSIC APPLE CRUMB PIE

Steps:
- Make the crust: Whisk the flour, granulated sugar and salt in a large bowl. Rub the butter pieces into the flour using your fingers until pea-size pieces form. Drizzle in the vinegar and ice water; stir gently with a fork to combine. If the dough doesn't hold together when you squeeze it, add more ice water, 1 tablespoon at a time. Turn out the dough onto a piece of plastic wrap and form into a disk; wrap tightly. Refrigerate until firm, at least 1 hour or overnight.
- Roll out the dough on a lightly floured surface into a 13-inch round. Ease into a 9-inch pie plate. Trim the edges, leaving a 1-inch overhang, then tuck the overhanging dough under itself; crimp the edges with a fork. Refrigerate until firm, at least 1 hour or overnight.
- Meanwhile, make the crumb topping: Mix the flour, brown sugar, cinnamon and salt in a medium bowl. Rub the butter into the mixture with your fingers until no longer floury and crumbs form. Freeze until ready to use.
- Make the filling: Place a foil-lined baking sheet on the lowest oven rack; preheat to 400˚. Mix the apples, melted butter, both sugars, flour, lemon juice, cinnamon and salt in a large bowl. Spoon the filling into the chilled pie crust. Pat the crumb mixture on top.
- Bake the pie on the hot baking sheet until lightly browned, about 30 minutes. Reduce the oven temperature to 350˚ and bake until the apples are completely soft when pierced with a paring knife, 60 to 80 more minutes. (If the topping is getting too dark, cover loosely with foil.) Transfer the pie to a rack to cool completely.

WHOLE-WHEAT CANADIAN APPLE PIE
I found this one in a Dr. Oetker cookbook. I used spelt bran instead of finely ground spelt and it turned out fantastic, so I think spelt flour - or any other whole wheat flour for that matter - would do the same trick.

- Preheat oven to 375-400 °F.
- Beat butter in a large bowl until creamy (about 30 sec.).
- Gradually add maple syrup and vanilla seeds.
- Beat until the mixture becomes creamy and then stir in the eggs, one at a time.
- In a separate bowl mix spelt, rolled oats and baking powder.
- Gradually add the dry mix to the butter-egg mixture. Stir well.
- Put 2/3 of the mass in a well greased 9 inch pan and smooth down.
- Peel the apples and cut them into small pieces and spread them on the batter.
- Scatter sultanas over the apple fill.
- Using 2 teaspoons, spoon the remaining batter into heaps and spread them over the apples.
- Spread sliced almonds and butter flakes over the pie.
- Bake at 375-400°F for 50-60 minutes. Check it after 35 minutes and cover with foil if the surface gets too brown.
- Serve with whipped cream or maple or ginger syrup. (I use Recipe #123111).

- Preheat oven to 400 degrees F (200 degrees C). Place bacon on a baking sheet and sprinkle 1 tablespoon brown sugar over the top.
- Bake in the preheated oven until crisp, 10 to 20 minutes.
- Line a 9-inch springform pan with pie crust pastry; refrigerate.
- Combine apples and lemon juice in a bowl and toss to coat.
- Melt 1/4 cup butter in a large skillet over medium-low heat; add maple syrup and 1/3 cup brown sugar. Bring to a boil, lower heat, and simmer until mixture is reduced by half, about 5 minutes. Carefully add apples and stir well to coat. Cook until apples just start to soften and get a bit of color on them, about 5 minutes. Return the apples to the bowl leaving behind the sweet syrup.
- Stir vinegar into sweet syrup; simmer until syrup is reduced and consistency of maple syrup, about 5 minutes. Carefully pour syrup over the apples. Cool for 10 minutes.
- Combine flour, 1/4 cup brown sugar, 1/4 cup unsalted butter, baking powder, cinnamon, and salt in a food processor; pulse until crumbly. Break bacon into pieces, add to food processor, and pulse until combined with the crumble.
- Tip apples into the pie crust in the springform pan. Fold dough over part of the apple filling to form an edge. Crimp the edges between your fingers. Top the apple filling with the crumble. Brush crust with cream and top with white sugar.
- Bake pie in the preheated oven until the juices bubble and the crust is deeply golden, about 1 hour. If the crust starts to brown too quickly turn the oven down to 350 degrees F (175 degrees C).

- Preheat oven to 325 degrees F (165 degrees C). Line a pie dish with 1 crust.
- Whisk together cornstarch, sugar, cinnamon, nutmeg, and salt in a large bowl. Stir apples, maple syrup and whole egg into cornstarch mixture.
- Pour apple mixture into the prepared crust. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape. Whisk together egg yolk and water in a small bowl; brush over the pie. Cover pie loosely with aluminum foil and place on a baking sheet.

THE BEST APPLE CRUMBLE PIE EVER!!!
This is the BEST apple pie i've EVER tasted! Everyone who tries this LOVES it! The trick is to use a mixture of green and red apples, i've found that granny smith is good, and red delicious doesn't work well. Using the mixed apples is ESSENTIAL to this recipe.

- Preheat the oven to 375.
- In a large bowl, (at least 8 cups) combine 2 cups water and the lemon juice, as you cut up the apples put them in the water. This will keep them from browning. When you are finished cutting them up, drain off all the water.
- Combine 1/2 cup of the sugar, and the 2 tablespoons of flour. add to the apples.
- Grease a pie tin. Line it with the pie crust. Fill with the apple/flour mixture.
- In separate bowl combine remaining 1/2 cup sugar, the 1/2 cup flour, cinnamon, ginger, and mace. Cut in butter until crumbly. Pat onto the top of the apples. Cover the edge of the pie with foil.
- Bake for 30 minute then remove foil. Bake 30 minute more or until topping is golden.
- Enjoy this decadent delight!
