BAKED BRIE PASTA
Baked Feta Pasta is all the rage, but I've got another recipe option for the cheese-obsessed: Baked Brie Pasta with cherry tomatoes and thyme.

Steps:
- Preheat the oven to 350°F.
- Using a sharp knife, remove the top portion of the Brie, leaving the bottom and sides intact. Set it aside.
- In a 13x9" baking dish, toss together the tomatoes, olive oil and thyme. Push them to the sides of the dish. Place the wheel of Brie in the center.
- Bake until the rind has softened and the cheese is melted, about 35 minutes.
- While the cheese is baking, bring a large pot of salted water to a boil. Add the pasta and cook until al dente. Drain and set it aside.
- Remove the cheese from the oven and immediately stir it together with the tomatoes until combined. Stir in the pasta then serve.

SPAGHETTI WITH HAM AND BRIE

Steps:
- Bring a large pot of salted water to a boil. Add the spaghetti and cook as the label directs for al dente. Reserve 1 cup cooking water, then drain.
- Meanwhile, combine the olive oil and shallot in a large pot over medium heat. Cook, stirring occasionally, until the shallot is softened, 3 to 5 minutes. Add the wine and simmer until mostly reduced, 2 to 3 minutes. Add the cheese spread, mustard, ham, spaghetti and 1/2 cup of the reserved cooking water. Cook, tossing, until the spaghetti is coated with the sauce, 1 to 2 minutes, adding more cooking water as needed to loosen (the pasta will absorb the sauce as it sits). Season with salt, add the parsley and toss again.
- Divide the spaghetti among shallow bowls. Spoon any remaining sauce on top and season generously with pepper.

BRIE PASTA

- Cook the Pasta.
- Meanwhile in a large stainless steel bowl, mix the Butter, Egg yolk, and Cream.
- Remove the lid to the pasta pot and replace it with the bowl. (Double boiler)
- CAREFUL OF THE STEAM!
- USE A MITT TO HOLD THE BOWL WHILE STIRRING!
- Slowly stir in the Brie 'til it melts.
- Salt and Pepper to taste.
- When the Pasta is done, drain it and stir it into the Brie mixture.
- Garnish with chopped Parsley. Serve imediatly.
- DO NOT TELL YOUR CARDIOLAGIST THAT YOU HAVE EVEN HEARD OF THIS RECIPE!

BRIE WITH PASTA
This brie spaghetti is creamy, rich and a great way to elevate dinner. I like to say this is the more refined, adult mac & cheese. The brie cheese gives it melty goodness that pairs well with fruity red wine or crisp white wine.

- Start cooking pasta according to package. Set oven to 350 degrees.
- Cut the top of the brie rhind off with a pairing knife and discard. Place it in an non stick oven safe dish. I prefer a well seasoned cast iron skillet. Place in the oven and back for 15- 20 minutes or until it is bubbling and brown.
- While pasta is cooking, add olive oil, pasta, parsely, salt, pepper, garlic to a large bowl and whisk together.
- In a pan add ½ tbs of oil or butter and sautee mushrooms and onions until golden brown. Set aside. Add them to the pasta once the pasta is fully cooked.
- When pasta is fully cooked, toss in the olive oil mixture gently with mushrooms and onions.
- When brie is done, place pasta mushroom mix directly onto the melted cheese and carefully mix it evenly. Garnish with a bit more salt and parsely and serve!

- Cook pasta as directed. Reserve 1/2 C of pasta water, drain pasta, return to pot.
- Heat oil in large skillet over medium-high heat. Add mushrooms and onion and cook, tossing occasionally, until the mushrooms begin to release their juices, 2-3 minutes.
- Add the wine, 1/2 t salt, and 1/4 t pepper and cook until the mushrooms begin to brown, 5-6 minutes and liquid is nearly gone.
- Toss the pasta with the brie and reserved water until pasta is coated.
- Stir in mushroom mixture and arugula. Serve while hot.
