Here's something yummy you have to make with those sour oranges. Can be topped with more frozen whipped topping if desired.

1 (14 ounce) can sweetened condensed milk
½ cup calamondin (sour orange) juice
1 (8 ounce) tub frozen whipped topping (such as Cool Whip®), thawed
1 (8 inch) prepared graham cracker crust

Steps:

  • Combine sweetened condensed milk with calamondin juice in a bowl. Fold in whipped topping. Pour into the pie crust.
  • Freeze until set, at least 1 hour.

This recipe comes from Mrs MacKinnon. She used to make this cake when they would spend their winters in Florida. A family favourite!

1 yellow cake mix
3 ounces lemon gelatin
1/3 cup milk
4 eggs
3/4 cup canola oil
1/2 cup kumquat puree or 1/2 cup calamondin puree
glaze
4 teaspoons margarine, melted
1/4 cup kumquat puree or 1/4 cup calamondin puree
1 cup icing sugar

Steps:

  • Preheat oven to 350oF.
  • Grease a 9-inch Bundt cake pan.
  • Combine the cake mix, jello and milk together in a large bowl.
  • In a medium bowl, mix together eggs, oil and puree. Add to dry ingredients and mix well.
  • Spoon batter in prepared pan and bake for approximately 50 minutes.
  • To prepare the Glaze combine all the ingredients and spoon over warm cake.

Pour the filling into the pie shell and bake for 15 minutes. Remove the pie from the oven and let cool for 15 minutes, then refrigerate until cold and set.
  • In a small prep bowl, combine the gelatin and water and let rest for 2 minutes to bloom. Place the bowl in the microwave and heat in 5 second bursts until the gelatin has dissolved. Set aside to cool. (It should not be warm when you add it to the cream -- this is important).
