Steps:
- In a large saucepan, bring 12 cups water, cloves bay leaves, cinnamon, mustard and celery and coriander seeds, black peppercorns, paprika and hot pepper flakes to boil.
- Reduce heat and simmer for 5 minutes.
- If using smoked sausage, cut into bite size pieces.
- Add smoked or Italian sausage to pot; simmer for 15 minutes.
- Meanwhile, using scissors, cut through shell along back of each shrimp; remove vein.
- Scatter over pan; cover and cook for 2 to 3 minutes or until shrimp are pink.
- Drain mixture, reserving 1/2 cup cooking liquid.
- Cut italian sausage into bite size slices; arrange sausage around edge of platter.
- Mound shrimp in centre.
- Drizzle with reserved liquid.
SPICY CAJUN SHRIMP AND SAUSAGES
Delicious over rice. The original recipe ingredients are for 1 tablespoon Cajun or Creole seasoning - this seemed like a lot for us, so adjust per your taste. The original recipe also used Creole mustard and I used Dijon mustard (reducing the amount that was called for). Recipe source: Bon Appetit (February 2007)

Steps:
- Toss shrimp with the Cajun seasoning in a medium bowl and set aside.
- In a skillet over high heat heat 1 tablespoon oil and then add the sausage pieces, cooking until browned turning occasionally (5 minutes).
- Transfer sausage to a large bowl.
- Add shrimp to skillet, cooking for 3-5 minutes and then transfer shrimp to bowl with sausage.
- Add remaining oil (1 tablespoon) to skillet along with the onion, bell pepper and thyme, cook stirring until soft (5 minutes).
- Stir in broth, mustard and vinegar, stirring until sauce thickens (2 minutes).
- Return sausage and shrimp to skillet and simmer until heated through (1 minute).
- Season with salt and pepper if desired.

CAJUN SHRIMP AND SAUSAGE
Steps:
- Preheat oven to 400°F and line a baking sheet with aluminum foil or parchment paper.
- Slice the turkey sausage into half inch pieces. Thaw shrimp if frozen. Shell and devein the shrimp, keeping tails on. Cut the vegetables and place all in a bowl.
- Drizzle with olive oil and cajun seasoning blend. Toss to coat.
- Spread on the lined baking sheet and bake for 18-20 minutes total.
- Garnish with chopped parsley and serve as is or over pasta if you prefer.

SHRIMP AND SAUSAGE JAMBALAYA
Steps:
- Heat the oil in a large Dutch oven or black iron pot over medium heat, add the kielbasa and saute for 8 to 10 minutes, until browned. Remove the kielbasa to a bowl, and set aside. Add the ham to the same pot and cook 8 to 10 minutes, until lightly browned. Remove to the bowl with the kielbasa, and set aside. Add the butter, onion, celery and peppers to the same pot and saute for 8 to 10 minutes, until the onion is translucent. Add the tomato, garlic, jalapeno or cayenne, oregano, thyme, and tomato paste and cook until all the vegetables and herbs are blended well. Add the stock and bring to a rolling boil. Stir in the rice, and add the sausage, ham, bay leaves, salt, pepper and hot sauce. Return to a boil, reduce the heat to low and simmer, covered, for 20 minutes. Add 1/4 cup of the scallions, 1/4 cup of the parsley, the lemon juice and the shrimp, and stir well. Cover the pot, remove it from the heat and allow the jambalaya steam, for 15 minutes, before serving.
- Garnish with the remaining 1/4 cup scallions and 1/2 cup parsley, and a dash of hot sauce, if desired.

- In large, deep pot fry bacon until crisp. Remove from pot and set aside.
- In same pot, add sliced sausage and onion and cook until sausage is browned.
- Crumble bacon and add to pot with the sausage and onions.
- Add Simply Potatoes Diced Potatoes with Onions, creamed corn, sweet corn and shrimp to pot with sausage.
- In medium bowl, add flour and slowly add chicken broth and whisk until thoroughly mixed. Add to pot.
- Add enough water to cover all ingredients. Stir constantly on medium heat until mixture begins to thicken. Turn to low heat.
- Add Tony's, cayenne and a dash of salt and pepper. (Season to your taste!).
- Slowly stir in milk and simmer on low heat until potatoes are tender and shrimp are cooked.

- Heat butter and olive oil in a large skillet pan over medium-high heat. Add sausage, frozen vegetables, and mushrooms. Saute until sausage is almost fully cooked, onions are tender, and any liquid from the frozen vegetables has almost fully evaporated, 10 to 12 minutes. Stir in Creole seasoning, garlic, and pepper; cook for 2 minutes. Add shrimp, Alfredo sauce, and Parmesan cheese. Cook and stir until sauce has thickened and shrimp are bright pink on the outside and the meat is opaque, about 5 minutes.

- Butterfly shrimp by making a deep slit down back of each from large end to tail, cutting to but not through inside curve of shrimp.
- Cook onions in hot oil in a large Dutch oven over medium heat, stirring often, 35 to 40 minutes or until golden brown. Add tomato sauce, and cook, stirring occasionally, 25 to 30 minutes or until thickened. Add diced tomatoes with green chiles, celery, bell peppers, and 2 cups water.
- Bring to a boil over medium-high heat; reduce heat to medium, and simmer 30 minutes or until sauce thickens slightly. Add 3 garlic cloves, and simmer 30 minutes, stirring in 1 to 2 cups of water as needed to maintain a stew-like consistency. Stir in sausage, and simmer 30 minutes, stirring in 1 to 2 cups water as needed. Skim grease from surface as needed.
- Meanwhile, prepare rice according to package directions.
- Stir green onions, parsley, Cajun seasoning, and remaining 3 garlic cloves into sausage mixture. Simmer 10 minutes. Add shrimp, and bring to a boil over medium-high heat.
- Stir together 1/4 cup cornstarch and 1/2 cup water. Stir into shrimp-and-sausage mixture, stirring just until mixture is thick and glossy. Serve with hot cooked rice.

- In a Dutch oven cook the dry sausage over medium heat for about 8-10 minutes or until browned; remove the sausage, drain fat leaving about 1 tablespoon in the Dutch oven.
- Melt the butter in the drippings over medium heat; add in shrimp; cook for about 4-5 minutes or until the shrimp turns pink; set the shrimp aside.
- Add in onion, red bell pepper, and celery cook for 5 minutes adding in the garlic the last 2 minutes of cooking.
- Stir in the Cajun seasoning and flour to the veggies; cook over medium heat 1 minute, stirring constantly.
- Gradually stir in chicken broth; bring to a boil over medium-high heat, stirring constantly; boil for 1 minute, then reduce heat to low and stir in the whipping cream,.
- Cook simmering for about 7-8 minutes.
- Add in the Velveeta cubes, sausage and shrimp, stirring until the cheese melts.
- Stir in the chopped green onions and Parmesan cheese; mix to combine, season with salt and pepper.
- Serve over the cooked pasta.
