Easy Strawberry Margarita Recipe image

A strawberry margarita is everyone's favorite summer cocktail recipe. This frozen, blended beverage is delicious on a hot day.

1 pound frozen whole strawberries
3/4 cup tequila
1/2 cup lime juice
1/4 cup orange liqueur (Cointreau or similar)
1/3 cup honey or other sweetener (more or less to taste)
margarita salt (to rim the glasses)
limes (for garnish)

Steps:

  • Prep your glasses. First, run a small wedge of lime around the upper outer rim of your glasses. Then roll it into the margarita salt mixture. Set aside.
  • Add the strawberries, tequila, lime juice, orange liqueur, and honey to a blender. Blend until it's completely smooth. Taste test and add extra sweetener or alcohol if desired.
  • Pour the blended margarita into the glass and garnish with a strawberry or slice of lime.

6 (5 ounce) salmon fillets
3 tablespoons fresh lime juice
3 tablespoons orange blossom honey
1 pinch brown sugar
2 tablespoons extra virgin olive oil
salt and pepper to taste
lime slices for garnish

Steps:

  • Place salmon fillets in a 9x13 inch baking dish. In a small bowl, stir together the lime juice, honey, brown sugar, and olive oil. Pour over the salmon. Cover and refrigerate for 30 minutes to marinate.
  • Preheat the oven to 450 degrees F (220 degrees C). Season the salmon with salt and pepper.
  • Bake for 15 minutes in the center of the preheated oven, or until fish flakes easily with a fork. Garnish with lime slices, and serve immediately.

1 ounce orange liqueur (Cointreau, Grand Marnier or Triple Sec)
3/4 ounce freshly-squeezed lime juice
optional sweetener: agave nectar or simple syrup, to taste

lime wedge and coarse salt for rimming the glass

Steps:

  • Run a lime wedge (the juicy part) around the top rim of your serving glass. Fill a shallow bowl or plate with salt, then dip the rim until it is covered with your desired amount of salt. Set aside.
  • Add tequila, orange liqueur, lime juice and a few ice cubes to a cocktail shaker. Cover and shake vigorously for about 10 seconds. Give the mix a taste and stir in a teaspoon or two of sweetener if desired.
  • Fill the prepared serving glass with ice. Strain in the margarita mix, garnish with a lime slice, serve and enjoy. Cheers!

3 ounces tequila
2 ounces freshly squeezed lime juice
1 ounce Simple Syrup, recipe follows
1/2 to 1 teaspoon orange liqueur
1 tablespoon Lime-salt-sugar, recipe follows
1 cup sugar
1 cup water
Zest of one lime
2 tablespoons kosher salt
2 tablespoons sugar

Steps:

  • Fill a cocktail shaker with ice. Add tequila, lime juice, Simple Syrup and orange liqueur. Cover and shake until mixed and chilled, about 30 seconds. (In general, the drink is ready by the time the shaker mists up.) Place Lime-salt-sugar on a plate. Press the rim of a chilled rocks or wine glass into the mixture to rim the edge. Strain margarita into the glass.
  • Put the sugar and water in a small saucepan. Cook over low heat, stirring, until the sugar dissolves. (Alternatively, heat in the microwave.) Store in a sealed container in the refrigerator for up to 1 month.
  • Blend together lime, salt and sugar in a small blender or mini food chopper.

TEQUILA LIME SALMON (AKA MARGARITA SALMON)

3 salmon fillets
3 cups liquid margarita mix
2 shots of tequila
1 tsp parsley
1 tsp chives
Zest and juice of 2 limes
Salt & pepper to taste
1/2 cup sour cream
1 Tbsp unsalted butter

Steps:

  • Place salmon fillets in a casserole dish. Pour liquid margarita mix and tequila over salmon fillets. Sprinkle with parsley and chives. Pour zest and juice of one lime over fillets. Marinate overnight or for as long as possible.
  • Preheat oven to broil at 450 degrees F. Mix sour cream, parsley, chives, salt and pepper and zest and juice of second lime to make the cream sauce.
  • Melt butter in a saucepan. Pour out half of the margarita mix so there is a shallow layer of liquid just covering the salmon fillets. Broil for 8 minutes, basting the tops of the fillets with melted butter every 2 minutes.
  • After 8 minutes remove and plate fillets. Spread cream sauce over fillets. Serve over a bed of brown rice.

I love salmon, and this simple grilled margarita salmon recipe from Chatelain magazine - August 2002 issue is one of the best ones out there yet. It's delicious when it's served hot, at room temperature or chilled with a squeeze of fresh lime.

1/4 cup frozen margarita mix
1 tablespoon liquid honey
3 tablespoons tequila
2 -3 lbs salmon fillets
1 teaspoon dried dill
lime slice
lemon slice

Steps:

  • Thaw margarita mix just until slushy.
  • Preheat barbecue to medium.
  • In a small bowl, stir honey with 1 T (15 ml) tequila and margarita mix.
  • Place salmon on a large platter.
  • Spoon three-quarters of honey-margarita mix overtop.
  • Sprinkle with dillweed.
  • Let salmon stand at room temperature for 10 mins.
  • Place salmon skin-side down on preheated barbecue.
  • Grill with lid closed about 8 mins, then brush with remaining honey-margarita mix.
  • Don't turn salmon over.
  • Grill from 6 to 10 more mins.
  • Salmon is done when a knife tip inserted into centre feels warm.
  • Remove from grill using 1 or 2 large wide spatulas.
  • Insert between skin and flesh, leaving skin on grill.
  • Gently place salmon on a large platter.
  • Drizzle with remaining 2 T (30 ml) tequila.
  • Garnish with lime and lemon slices.
  • If serving at a buffet, keep fish whole and let guests help themselves.
  • If making ahead, immediately refrigerate salmon after grilling.
  • When cool, cover.
  • It will keep well, covered, in the refrigerator up to 1 day.
  • Serve cold.
  • OVEN ROASTING: Prepare salmon as you would for barbecuing.
  • Place skin-side down on a foil-lined baking sheet and roast, uncovered, at 450ºF (230ºC) for 8 mins, then brush with remaining honey-margarita mix and continue to roast for 6 to 10 more mins.

Mastering the margarita requires a certain amount of practice, but once you dial-in your perfect ratio, it's a really easy cocktail to replicate. The classic recipe is 3 parts tequila, 2 parts triple sec, and 1 part freshly squeezed lime juice, and you should probably start off pretty close to that, but my personal favorite proportions are 4-3-2.

1 pinch coarse sea salt to taste
1 large ice cube

2 fluid ounces white tequila
1 ½ fluid ounces triple sec
1 fluid ounce freshly squeezed lime juice
1 slice lime

Steps:

  • Moisten the rim of a glass with a lime wedge. Sprinkle salt onto a plate. Lightly dip the moistened rim into the salt. Place a large ice cube in the glass and freeze the prepared glass until ready to serve.
  • Fill a cocktail shaker with fresh ice. Add tequila, triple sec, and lime juice. Cover and shake vigorously until outside of the shaker has frosted. Strain into the prepared glass and garnish with a slice of lime.

1 tablespoon tequila
2 teaspoons sugar

4 (6 ounce) salmon fillets (about 1 inch thick)

lime slice (optional)

Steps:

  • Combine first 8 ingredients in a large zip-top plastic bag; add fish to bag. Seal and marinate in refrigerator 20 minutes.
  • Preheat broiler. Remove salmon from bag, reserving marinade.
