Time 4h35m

Yield 12 to 16 servings

Number Of Ingredients 13

Butter and flour, for pans
1 1/3 cups hot water
1/2 cup instant coffee crystals
1 box (18.25-ounces) devil's food cake mix
1/2 cup vegetable oil
3 eggs
1/4 cup instant coffee crystals
2 tablespoons hot water
1 container (8-ounces) frozen whipped topping, thawed
1 container (16-ounces) classic chocolate fudge frosting
Parchment paper
1 package (12-ounces) semisweet chocolate morsels, plus more for decorating
1 1/2 cups white morsels

Steps:

  • Preheat oven to 350 degrees F.
  • Cake Preparation: Butter and flour 2 (8-inch) round cake pans; set aside. Stir hot water and coffee crystals in large bowl until crystals dissolve. Add cake mix, oil, and eggs to coffee mixture. With an electric mixer, beat for 2 minutes, or until well blended. Divide batter between prepared pans. Bake for 35 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Cool cakes in pans on cooling racks for 15 minutes. Invert cakes onto cooling racks and cool completely.
  • Filling and Frosting Preparation: Stir coffee crystals and hot water in medium bowl until crystals dissolve. Refrigerate for 30 minutes, or until cold. Fold whipped topping into cold coffee mixture. Then stir in chocolate fudge frosting just until blended; chill in the refrigerator. (This is the mocha cream.)
  • Cut each cake horizontally in half. Place top cake layer, cut side up, on a serving platter. Spread 1 cup mocha cream atop cake. Top with bottom cake layer, cut side down. Spread 1 cup of mocha cream over second cake layer. Repeat layering with third cake layer and mocha cream. Top with remaining cake layer, cut side down. Refrigerate for 30 minutes. Evenly spread the remaining mocha cream onto the cake until completely covered. Return to refrigerator.
  • Chocolate Crown Preparation: Draw 3 (6-inch) high crown designs over 3 (15-inch) long sheets of parchment paper. Cut out designs from parchment papers. Lay each crown parchment template on a large baking sheet. Melt chocolate morsels in a glass bowl in the microwave for 2 1/2 minutes, stirring every 30 seconds, until melted and smooth. Repeat with white morsels. Using an off-set spatula, spread melted chocolate thickly over 1 side of 2 of the crown templates. Repeat with melted white morsels and remaining crown template. Arrange additional chocolate morsels decoratively on white crown. Refrigerate for 30 minutes, or until chocolate is set. Wrap 1 chocolate template around half of cake; carefully peel off paper. Wrap second chocolate crown around remaining half of cake; carefully peel off paper. Seal ends of crowns with a knife dipped in very hot water. Refrigerate cake until chocolate crown is completely firm. Wrap white crown, paper side inward, around a 5-inch bowl. Refrigerate until white crown is completely firm. Carefully peel paper from white crown. Place white crown atop cake.

COFFEE-CHOCOLATE LAYER CAKE WITH MOCHA-MASCARPONE FROSTING

Coffee-Chocolate Layer Cake With Mocha-Mascarpone Frosting image

This four-star showstopping recipe is from Bon Appétit (April 2009). It's a little effort but it's well worth it for special occasions. For a richer, darker cake and frosting use part or all Hershey's Special Dark Cocoa. Frosting must chill for at least 2 hours. DO AHEAD: Cake (either assembled or not) can be made 1 day ahead. Cover with cake dome; chill. Let stand at room temperature at least 20 minutes before serving.

Time 1h20m

Yield 12 serving(s)

Number Of Ingredients 16

2 cups cake flour
3/4 cup natural unsweetened cocoa powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
3/4 cup unsalted butter, room temperature
2 cups packed golden brown sugar
3 large eggs
1 1/2 teaspoons vanilla extract
1 cup buttermilk
4 teaspoons instant espresso powder, dissolved in 3/4 cup hot water
1/3 cup natural unsweetened cocoa powder
1 tablespoon instant espresso powder
1 1/2 cups chilled heavy whipping cream, divided
1 1/3 cups sugar
2 (8 ounce) containers chilled mascarpone cheese
bittersweet chocolate curls (optional)

Steps:

  • For cake: Position rack in center of oven; preheat to 325°F Generously butter two 9-inch cake pans with 2-inch-high sides; dust with flour, tapping out any excess. Line bottom of pans with parchment paper.
  • Sift 2 cups cake flour, cocoa, baking soda, and salt into medium bowl. Using electric mixer, beat butter in large bowl until smooth. Add brown sugar and beat until well blended, about 2 minutes. Add eggs 1 at a time, beating well after each addition. Mix in vanilla. Add flour mixture in 3 additions alternately with buttermilk in 2 additions, beating just until blended after each addition. Gradually add hot espresso-water mixture, beating just until smooth.
  • Divide batter between pans; smooth tops. Bake cakes until tester inserted into center comes out clean, about 40 minutes. Cool cakes in pans on rack 15 minutes. Run small knife around sides of pans to loosen cakes. Invert cakes onto racks; lift pans off cakes and remove parchment. Place wire rack atop each cake; invert again so top side is up. Cool completely.

  • Add mascarpone to chilled cocoa mixture. Using electric mixer, beat on low speed until blended and smooth. Increase speed to medium-high; beat until mixture is thick and medium-firm peaks form when beaters are lifted, about 2 minutes (do not overbeat or mixture will curdle).
  • Using pastry brush, brush off crumbs from cakes. Place 1 cake layer, top side up, on platter. Spoon 1 3/4 cups frosting in dollops over top of cake. Using offset spatula, spread frosting to edges. Top with second cake layer, top side up, pressing to adhere. Spread thin layer of frosting over top and sides of cake. Chill 10 minutes. SOURDOUGH CHOCOLATE CAKE WITH MOCHA FROSTING

Sourdough Chocolate Cake With Mocha Frosting image

Another way to use your sourdough starter. Don't worry it won't have a sour taste, just a rich chocolate flavor! Found this recipe on King Arthur's site. Time indicated does not include proofing time for the starter. Note: Because starters vary in thickness, the amount of flour and milk may vary slightly.

Provided by Galley Wench

Categories     Dessert

Time 1h

Yield 1 cake

Number Of Ingredients 19

1 cup sourdough starter (proofed)
1 cup whole milk
2 cups unbleached all-purpose flour (8 1/2 ounces)
1 1/2 cups granulated sugar
1 cup vegetable oil
2 teaspoons vanilla extract
1 teaspoon salt
1 1/2 teaspoons baking soda
3/4 cup natural cocoa powder (not Dutch process)
2 large eggs
6 cups confectioners' sugar
3/4 cup butter
1/2 cup buttermilk or 1/2 cup plain yogurt
1 1/2 teaspoons espresso powder
1 tablespoon hot water
1/3 cup semi-sweet chocolate chips
1 tablespoon milk
1 tablespoon corn syrup
1/2 cup chopped walnuts (optional) or 1/2 cup pecans (optional)

Steps:

  • Combine the "fed" starter, milk, and flour in a large mixing bowl. Cover and let rest at room temperature for 2 to 3 hours. It won't necessarily bubble, but it may have expanded a bit.
  • Preheat the oven to 350°F Lightly grease a 9" x 13" pan.
  • In a separate bowl, beat together the sugar, oil, vanilla, salt, baking soda, and cocoa. The mixture will be grainy.
  • Add the eggs one at a time, beating well after each addition.
  • Gently combine the chocolate mixture with the starter-flour-milk mixture, stirring till smooth. This will be a gloppy process at first, but the batter will smooth out as you continue to beat gently.
  • Pour the batter into the prepared pan.
  • Bake the cake for 30 to 40 minutes, until it springs back when lightly pressed in the center, and a cake tester inserted into the center comes out clean.
  • Remove the cake from the oven, and cool on a rack while you make the icing.
  • Sift the confectioners' sugar into a large mixing bowl, and set it aside.
  • In a small saucepan set over medium heat, melt the butter and add the buttermilk or yogurt. Dissolve the espresso powder in the hot water, add to the pan, and bring the mixture just to a boil.
  • Immediately pour the simmering liquid over the confectioners' sugar in the bowl, and beat till smooth.
  • Pour the warm frosting over the cake.
  • Combine the chocolate chips, milk, and corn syrup in a microwave-safe cup. Microwave till the chips soften, then stir till smooth.
  • Drizzle the chocolate over the icing. (This can be done immediately or you can wait until the cake is cooled.).
  • If desired sprinkle chopped nuts on top.

CHOCOLATE CAKE WITH MOCHA FROSTING

Chocolate Cake With Mocha Frosting image

This is the best chocolate cake and this frosting goes well with it. I like this cake as it contains no eggs and can be made with things I have on hand. The cake recipe is the Moosewood Cake and the frosting is a modified Hershey recipe. The original Moosewood Cake has 1/2 cup oil and no applesauce and I think it is better made with applesauce for half of the oil.

Provided by Shannon Holmes

Categories     Dessert

Time 46m

Yield 1 one layer cake, 6 serving(s)

Number Of Ingredients 16

1 1/2 cups unbleached white flour
1/3 cup cocoa powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/4 cup vegetable oil
1/4 cup unsweetened applesauce
1 cup cold water (or 1 cup water with 1 tbsp. instant coffee, dissolved) or 1 cup chilled brewed coffee (or 1 cup water with 1 tbsp. instant coffee, dissolved)
2 teaspoons pure vanilla extract
2 tablespoons cider vinegar
1 1/2 cups powdered sugar
1/3 cup unsweetened cocoa
1/4 cup butter (4 tbsp. butter flavored Crisco also works well) or 1/4 cup margarine, softened (4 tbsp. butter flavored Crisco also works well)
1/2 teaspoon vanilla extract
1 teaspoon instant coffee, to taste
2 -3 tablespoons milk or 2 -3 tablespoons soymilk

Steps:

  • Preheat the oven to 350 degrees F.
  • Generously oil an 8-inch square or round baking pan and dust with a little sifted cocoa or line the bottom with parchment paper.
  • In a medium bowl, sift together the flour, cocoa, soda, salt, and sugar.
  • In another bowl, combine the oil, applesauce water or coffee, and vanilla.
  • Pour the liquid ingredients into the dry ingredients and mix until well-blended and smooth.
  • Add the vinegar and stir briefly; the baking soda will begin to react with the vinegar right away, leaving pale swirls in the batter.
  • Without wasting any time, pour the batter into the prepared baking pan.
  • Bake for 25 to 30 minutes.
  • Cool for 20 minutes, then frost with frosting.
  • For the frosting, combine powdered sugar, cocoa, butter and vanilla in large bowl; beat until combined.
  • Dissolve 1 teaspoons instant coffee in 1 tablespoons milk and add to frosting.
  • Add additional milk, 1 tablespoon at a time, beating to desired consistency.
  • About 1-1/4 cups frosting.
  • For Vegan use only soy milk and only a vegan [non dairy] margarine.

MOCHA DARK CHOCOLATE CAKE WITH CAPPUCCINO FROSTING

Mocha Dark Chocolate Cake With Cappuccino Frosting image

My husband made this cake for a Valentine's Party. The other guys totally ignored the other desserts. Whether you make this as a simple 9X13 and slap the frosting on top, or go all out for a filled layer cake with the espresso glaze and cappuccino frosting, you will not be disappointed! This is mocha java heaven! Preparation time allows for the cake to sit overnight and chill once it's frosted. It's worth the wait, as the coffee flavors have time to blend with the chocolate flavors. YUM. The coffee glaze is a little extra work, but it is delicious and amazingly helpful when it comes to frosting the cake!

Time P1DT35m

Yield 2 9, 10-12 serving(s)

Number Of Ingredients 21

2 cups flour
1 3/4 cups white sugar
1 1/2 tablespoons molasses (or change sugars to 1c white, 3/4c dark brown)
3/4 cup cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1/2 teaspoon salt
1 cup mayonnaise (name brand is best in a cake)
1/4 cup vegetable oil
1 cup very hot very strong coffee
1 tablespoon vanilla
1/2 cup chocolate chips or 1/2 cup chopped candy bar
1/4 cup sugar
3 tablespoons espresso or 3 tablespoons very strong coffee
1/4-1/2 cup cocoa powder (depending on how dark chocolatey you want it)
1/2 cup butter (preferably unsalted)
1/2 cup shortening
1/2 teaspoon vanilla
1/8 teaspoon salt (or omit and use salted butter)
4 1/2 cups powdered sugar
1/3 cup cooled espresso or 1/3 cup strong coffee

Steps:

  • Preheat oven to 350.
  • Grease one 9x13 or two 9" round cake pans.
  • Cake: combine the flour, sugar, baking powder, baking soda, salt, and cocoa.
  • Add the molasses, mayonnaise, and vegetable oil. Mix well.
  • While mixing, pour in the hot coffee.
  • Add the vanilla and chocolate chips, stir until combined. Batter will be thinner than normal cake batters.
  • Pour the batter into the pan(s). Bake for the 35 minutes, or until a toothpick comes out clean. 9x13 pans usually need to go for a few more minutes.
  • If you are layering the round cakes, cool them for ten minutes on a wire rack, run a knife gently around the edges, flip pans over, rest for 10 minutes, then remove cakes from pans. Don't worry if they break apart a little bit. You can "glue" them back together with glaze and frosting!
  • Allow cakes to cool completely, even overnight, before glazing/frosting.
  • Espresso/Coffee Glaze:.
  • In a saucepan over medium heat, combine sugar and coffee/espresso. Stir until sugar is dissolved.
  • Allow to cool to body temperature or lower.
  • Cappuccino Frosting.
  • Combine dry ingredients in a medium bowl.
  • Combine butter and shortening in a seperate, large bowl or mixer. Beat until fluffy.
  • Add vanilla to the butter/shortening mixture.
  • To the butter mixture, add half of the dry ingredients, beat, then half of the espresso/coffee, beat some more, then the other half of the dry ingredients, beat again.
  • Add the remaining coffee slowly, only until desired consistency is reached. For a frosted layer cake, you want it to be a bit thick, but still smooth and fluffy.
  • Assembly:.
  • Set up desired cake board with one of the round cakes. Brush the ckae entirely with the semi-cool coffee glaze.
  • Allow the glaze about 5 minutes to set.
  • Spread a generous layer of frosting on top and place the second cake.
  • Glaze the second cake.
  • If you have any leftover glaze, just keep brushing it on (resist the urge to sip it, if you can!).
  • Frost the sides and top of the cake with remaining frosting.
  • Store cake in the refrigerator until you need it, as that will set the frosting properly. Because of the shortening, it will sit out well in normal temperatures, once it's been chilled.
  • Enjoy!

1 tablespoon pure vanilla extract
3 extra-large eggs, at room temperature
1 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon kosher salt
2/3 cup hottest tap water
2/3 cup unsweetened cocoa powder, such as Droste Cocoa Powder
1 teaspoon instant espresso powder
2/3 cup half-and-half
Mocha Frosting, recipe follows
12 ounces bittersweet chocolate, such as Lindt, 1/4-inch-chopped
3 tablespoons unsalted butter, diced, at room temperature
2 teaspoons instant espresso powder
1 1/4 cups heavy cream
1 tablespoon Kahlua
1 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking pan. Line with parchment paper, then grease and flour the pan.
  • Place the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment and beat on medium speed for 4 to 5 minutes, until light and fluffy, scraping down the bowl. On medium speed, add the vanilla, then beat in the eggs, one at a time, until incorporated and the batter is smooth.
  • Sift the flour, baking soda, and salt together in a medium bowl. In another bowl or a liquid measuring cup, whisk together the hot water, cocoa powder, and espresso powder until smooth. Add the half-and-half and whisk until smooth. With the mixer on low, add the flour and chocolate mixtures alternately in thirds, starting and ending with the flour. With a rubber spatula, scrape down the bowl to be sure the batter is well mixed.
  • Pour the batter into the prepared pan, smooth the top, and bake for 25 to 35 minutes, until a cake tester inserted in the center comes out clean. Cool completely in the pan. Turn out onto a flat platter or board and frost the top with the Mocha Frosting. Cut in squares and serve.
  • Place the chocolate, butter, and espresso powder in a bowl. Heat the cream to simmer and pour it over the chocolate mixture, stirring occasionally, until the chocolate is melted. (If the chocolate isn't melted, microwave the mixture for 15 seconds.) Stir in the Kahlua and vanilla and stir until the mixture is smooth. Cover and refrigerate for 30 minutes only, until cool but not cold.
  • Scrape down the bowl and beat the frosting with a handheld mixer on high speed for 15 to 20 seconds only, until the mixture forms soft peaks. (If you overbeat it, it will curdle!) Spread on the cake immediately with a metal spatula.

  • To Prepare the Cake: Preheat oven to 350F and line the bottom of the pans with parchment paper. Bake the cake according to package direction and divide the cake into two 6-inch round pans equally. Bake the cake as directed and check with a toothpick if it’s done. Fire off, transfer the cake in a wire rack and let it cool completely. And for an easy frosting, wrap each cake with plastic food wrap and chill for about 30 minutes or so, this will help lessen the cake crumbs when you are applying the icing later on.
  • To Make the Mocha Frosting: In a mixing bowl, combine frosty whip cream powder, coffee powder, unsweetened cocoa powder and cold water, then whipped until light and double in size.
  • To Assemble the Cake: We also need a cake board at least 2-inches larger than your cake. Frost the board at the center with a little frosting and place the first layer of your cake in the center. Drizzle coffee on the about 2 tablespoons just to moistened the cake. Put 1/3 part of mocha frosting on top and spread evenly. Cover it with another cake on top, again drizzled with coffee and spread another 1/3 part of frosting on top and evenly coat the sides of your cake and refrigerate for about 20 minutes. Add the remaining frosting on the sides and design your cake using a decorating comb.
