No meat here...but not vegetarian (because of the beef boiullon cube and Worcestershire). Kind of an interesting version of cabbage and noodles.

8 ounces egg noodles
5 tablespoons butter, DIVIDED
1/2 large head of cabbage, shredded fine
1 sweet onion, thinly sliced
1 beef bouillon cube
1/2 cup hot water
1/2 teaspoon Worcestershire sauce
1/2 cup sour cream, reduced fat is great
1/4 teaspoon celery seed
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook the egg noodles according to package. Drain; toss with 2 tbsp of the butter and keep warm.
  • Meanwhile, melt remaining 3 tbsp butter in a large skillet.
  • Add the cabbage and onion slices and sautee for about 5 minutes.
  • Dissolve the beef bouillon cube in the 1/2 cup hot water with the worcestershire sauce; pour into the skillet with the cabbage/onions.
  • bring to a simmer and continue to cook, stirring often, for about 15 minutes or until the cabbage is to your desired tenderness.
  • Reduce heat to low and stir in the sour cream, celery seeds, salt and pepper. Heat through but do NOT boil.
  • Serve over the hot cooked, buttered egg noodles.

1 ¼ pounds beef sirloin steak
3 teaspoons kosher salt, divided, or to taste
½ teaspoon ground black pepper, or to taste
½ teaspoon garlic powder
4 teaspoons olive oil
3 tablespoons butter, divided
1 medium onion, thinly sliced
1 (8 ounce) package sliced mushrooms
2 tablespoons all-purpose flour
1 tablespoon tomato paste
2 cups unsalted beef broth, or more to taste
2 teaspoons Dijon mustard
2 teaspoons Worcestershire sauce
1 (16 ounce) package wide egg noodles
1 cup sour cream
1 tablespoon chopped fresh parsley

Steps:

  • Slice beef into very thin strips and season with ½ teaspoon each salt, pepper, and garlic powder.
  • Heat 2 teaspoons oil in a large skillet over medium-high heat until very hot. Add ½ of the beef in a single layer and cook, undisturbed, for 2 minutes. Flip and cook until browned on the other side, about 1 minute. Remove to a plate and repeat with the remaining olive oil and beef.
  • Fill a large pot with water and set over high heat on another burner.
  • Melt 2 tablespoons butter in the same skillet over medium heat. Add onion and cook until it starts to release its juices, about 2 minutes. Add mushrooms and ½ teaspoon salt; cook, stirring often, until tender and lightly browned, 2 to 4 minutes. Sprinkle with flour and cook, stirring constantly, for 1 to 2 minutes. Stir in tomato paste and cook for 1 minute.
  • Whisk in 2 cups beef broth and mustard and bring to a simmer, scraping the browned bits of food off the bottom of the pan with a wooden spoon. Add more broth if necessary as sauce thickens. Stir in Worcestershire sauce and add reserved beef and any drippings. Reduce heat to low and simmer, stirring occasionally, while you cook the pasta.
  • Add egg noodles and remaining 1 teaspoon salt to the boiling water. Boil until noodles are tender yet firm to the bite, 7 to 9 minutes. Drain noodles and toss with remaining 1 tablespoon butter.
  • Add sour cream to the sauce, a little at a time, stirring swiftly to incorporate. Taste and adjust salt and pepper, if needed.
  • Ladle sauce over egg noodles and garnish with parsley.

1 1/2 lbs beef tenderloin, trimmed well
salt, to taste
pepper, to taste
12 ounces button mushrooms
2 tablespoons coconut oil
1 ounce butter
3/4 cup beef stock or 3/4 cup broth
2 teaspoons Wondra Flour
3/4 cup sour cream
2 tablespoons freshly chopped parsley

Steps:

  • Pound meat thin. Cut in strips about 1/4" wide and 2" long. Put on a large plate and sprinkle lightly with salt and pepper. If you have time, refrigerate meat for an hour or longer.
  • Wipe mushroom clean with a damp paper towel. Trim off hard ends of stems.
  • Heat a large, heavy skillet on medium-high. Add the oil. Quickly brown the meat in the hot oil on both sides, about 2 minutes. Remove meat to a holding plate.
  • Add the butter to the skillet. Reduce heat to medium-low. Add the mushrooms and cook until tender, about 5 minutes. Add the beef stock and stir to loosen particles on the bottom of the skillet. Add the flour and stir into the broth. Simmer for about 2 minutes on low.
  • Add meat and the sour cream and heat through. Adjust seasoning, sprinkle with parsley, and serve immediately.
