These cake-like cookies are a recipe my mom made when I was a kid. They're simple, but delicious...and still my favorite!

OLD-TIME CINNAMON JUMBLES
These yummy cookies look and taste somewhat like Snickerdoodles, and have the texture of a pancake when they're done. This is one of my favorite cookie recipes.

The Swiss immigrants who settled in and around Schoharie County in upstate New York in the 1700s brought their recipe for chocolate jumbles, iced chocolate-and-spice cookies which have changed little in three centuries and are still hugely popular. Usually made in rounds with a hole in the middle, they are said to be named for...

Steps:
- 1. In large bowl combine cookie ingredients with mixer until well blended. Chill several hours or overnight.
- 2. Roll out dough about 1/4" thick between sheets of waxed paper. Cut into heart shapes with 2-1/2" heart-shaped cutter, then cut out centers with 1" heart-shaped cutter. Place on parchment-lined cookie sheet. Reroll scraps and repeat until all dough is used up. Chill again briefly before baking. Bake in center of oven preheated to 350 8-10 minutes, or until edges are firm. Cool on cookie sheet 5 minutes before removing to wire rack to cool completely.
- 3. Combine icing ingredients except food coloring. Add more confectioners' sugar or water to achieve spreading consistency. Ice cooled cookies. EITHER let icing harden a few hours and paint designs of your choice with red food coloring and very fine brush. OR sprinkle wet icing with valentine-themed colored sprinkles, let dry completely.
CINNAMON JUMBLES
These are crisp on the outside and soft and cakey on the inside, thier like a super soft snickerdoddle. HINT:You can sub. one 6-oz container of plain or vanilla yogurt for the buttermilk, I do it all the time because I rarely have buttermilk on hand.

- Place the caraway seeds in a spice grinder or a pestle and mortar and grind to a powder. Sieve the caraway, flour, aniseed and mace together into a bowl.
- Rub the butter into the flour until it resembles fine breadcrumbs, then stir in the sugar and lemon zest. Add the eggs and bring the mixture together to form a soft dough.
- Divide the dough into four balls weighing 65g (2½oz) and four balls weighing 85g (3oz) (you might have a little leftover). Place the dough balls on one of the prepared trays, cover with cling film and chill in the fridge for 30 minutes.
- Knead the four smaller pieces of dough on a lightly floured surface and roll using your fingertips into a 12in rope. Knot into double knots and place on one of the lined trays.
- Shape the remaining four larger pieces of dough into long ropes and cut away a quarter of each rope. Lay out (as pictured) into Celtic knots, using the reserved dough to make the rings that sit on top.
- Brush with beaten egg and sprinkle with caster sugar. Bake the Celtic knots for 15–20 minutes, until golden-brown and the double knots for 20–25 minutes.

- Marinate meats. According to Fine Cooking magazine, buttermilk and yogurt are the only marinades that truly work to tenderize meat. Vinegar-based marinades are too acidic and could actually make meat tougher, while for some reason—possibly the calcium—the only slightly acidic buttermilk seems to stimulate the breakdown of proteins.
- Add low-fat creaminess. Low-fat buttermilk is creamier and more flavorful than regular low-fat milk, so it’s perfect for mashed potatoes (this herbed recipe from Dash and Bella also contains butter, but it sure sounds good); creamy soups, like a buttermilk summer squash soup from 101 Cookbooks; or sauces, like Jean-Georges Vongerichten’s fish poached in buttermilk, from the New York Times.
- Cook up breakfast. Some of the best morning foods are even better with buttermilk. It makes for fluffy pancakes, crispy outside/soft inside waffles (so says Smitten Kitchen), and rich scones (these lemon-blueberry buttermilk scones from Sing For Your Supper sound delicious).
- Bake some bread. Buttermilk’s slight acidity helps activate baking soda and make bread rise. It’s the traditional liquid used in Irish soda bread. Oatmeal buttermilk bread gets high marks from Clockwork Lemon.
- Save room for dessert. The same moistness also does wonders for cake, whether Bon Appétit magazine’s blackberry buttermilk cake or what the Pioneer Woman calls the best chocolate sheet cake.
