GRILLED PEACH PANINI RECIPE BY TASTY
This is the perfect sandwich for those long summer days when peaches are at their ripest. Ooey, gooey Brie is paired with salty pesto and sweet peaches and sandwiched between two slices of crusty bread for a panini that's truly unforgettable.

Steps:
- Make the panini: Heat a panini press to high heat.
- Spread 1 tablespoon of pesto on each slice of bread. Layer 3-4 Brie slices, 4-5 peach slices, and a drizzle of aged balsamic on 2 slices of bread. Place the other slices of bread, pesto-side down, on top.
- Spread 1 tablespoon of butter on one side of each sandwich.
- Grease the panini press lightly with nonstick spray. Place a sandwich on the panini press, buttered-side down. Butter the top slice bread, then close the panini press. Cook until the cheese is melted, 2-3 minutes. Remove the panini from the press and repeat with the remaining sandwich.
- Make the salad: Arrange the peach wedges on the panini press and cook until grill marks appear, 2-3 minutes. Remove from the press.
- In a medium bowl, drizzle the arugula with olive oil and aged balsamic vinegar. Toss well. Add the grilled peaches.
- Serve the panini with the salad alongside.

PEACH, BACON & BRIE PANINI
Take advantage of in-season stone fruit with this Bacon and Brie Panini with Peaches. It's a little sweet, a little crunchy, a little creamy, and a LOT delicious!

- Cook bacon in a pan over medium heat (or in the oven at 325 for about 20 minutes) until crisp. Remove to a paper towel-lined plate to drain grease and cool down a bit.
- While the bacon is cooling. turn your panini press.
- Spread one tablespoon of peach preserves each onto 4 of your slices of bread. Top with 2 slices of bacon (I broke mine in half, so I had 4 pieces to line along my bread), 3 or 4 slices of brie, and 4 or 5 peach slices. Then top with the remaining bread slices.
- Place in the panini press, lock it down, and allow panini to cook until nicely browned and the brie is good and melty. Remove to plates or a cutting board and slice in half diagonally - the devour!!
PEACH, BOURBON AND BACON BAKED BEANS

- Preheat the oven to 350 degrees F.
- In a Dutch oven, cook the bacon over medium heat until the fat is rendered, 8 to 10 minutes. Transfer the bacon to a paper towel-lined plate and reserve. Add the onion to pan and cook until translucent, about 10 minutes.
- Reduce the heat to low, add the beans, ketchup, sugar, preserves, chicken broth, bourbon, mustard, salt, pepper, garlic powder and reserved bacon and stir until well combined. Bring to a simmer. Cover and bake for 40 minutes. Stir before serving.
BRIE AND APPLE PANINI

- Heat a medium saucepan over medium heat. Add 2 tablespoons olive oil to the pan along with the shallots and 1/4 teaspoon salt. Cook, stirring often, until soft and fragrant, about 2 minutes. Add the apples and stir to coat in the oil. Add the lemon zest, juice and remaining 1/4 teaspoon salt. Stir well to coat the apples in all the flavors. Cook, stirring occasionally, until the apples begin to brown and are cooked through, about 8 minutes. Stir in the basil and set aside to cool slightly.
- Meanwhile, lay the ciabatta halves out so they are open-faced. Scoop out some of the inside of the bread and discard. Divide the Brie evenly among the halves, about 3 slices per half, tearing them as needed to cover the bread. Divide the apple mixture on the bottom halves of each sandwich (approximately 1/4 cup per sandwich). Place the tops on the sandwiches and press slightly to close.
- Heat a large skillet over medium heat. Add 1 tablespoon olive oil to the skillet along with 2 sandwiches. Place a lid smaller than the skillet on top of the sandwiches and press down gently. Cook until golden brown on the first side, about 3 minutes. Flip the sandwiches and repeat on the second side until the bread is golden brown and the cheese is melted. Repeat with the remaining oil and sandwiches. (Alternatively, you can use a panini press.) Serve warm.
BACON, APPLE AND BRIE PANINI
I had a panini like this at a winery in the Napa Valley, so this is my best attempt to recreate it! These make an amazing lunch and would also be great for bridal showers, baby showers, etc... All you have to do is cut them up into bite-size pieces and insert a toothpick!

- Heat a panini press to medium-high heat according to manufacturer's instructions.
- Butter 1 side of each slice of bread. Flip 1 slice and spread mustard on top; add cheese. Place apple slices on the cheese. Lay bacon on top. Cover with the other slice of bread, buttered side-up.
- Place sandwich into the panini press and press down. Grill until lightly browned, about 3 minutes per side.

BRIE, CRANBERRY AND BACON PANINI
This is based on a sandwich I often get at a local restaurant. It is absolutely delicious as a panini! In light of a review, I have adjusted the amount of cranberry sauce required from 6 tablespoons to 5. Please feel free to adjust this to taste.

- If using panini rolls, cut each roll in half. If using regular bread, spread the outside of each slice with butter.
- Spread 2 1/2 tablespoons of cranberry sauce each on 2 slices of bread.
- Layer the brie over the cranberry sauce.
- Top with 2 slices of bacon and the top layer of bread, remembering to keep the buttered side facing outwards.
- I use a George Foreman grill to cook the panini- press the lid down to heat the sandwich right through and cook for a few minutes until the cheese has melted.
- Alternatively, cook in a skillet, pressing the sandwich firmly with a spatula while cooking.
- Serve hot!

This is one of those sandwiches I love to make. Everyone always loves it. Serve this sandwich with a side salad or a bowl of French onion soup and sweet potato fries for an easy night.

- Peach Mayonnaise -- In a small food processor, mix up the peaches, mayonnaise and cilantro, salt and pepper to taste. Make ahead, cover and place in the refrigerator.
- Sandwich -- I like to spread the first slice of bread with the mayonnaise, followed by the turkey, pear slices, brie cheese, a few onion rings. Top it off the the top slice also spread a thin layer of the mayonnaise on the inside.
- Grill -- Now, butter your top slice and place buttered side down in your pan. I prefer a grill pan, but you can use any non-stick pan. Grill on medium heat.
- I like to use any heavy pan to slightly weigh down the sandwich as it grills. Then, once the first side is golden brown, butter your top bread slice and flip. Just cook another few minutes until the second side is golden brown and the cheese is melted or "gooey." ENJOY!
