Steps:
- Place a small saucepan on a moderate heat and add the milk. Bring to the boil.
- Whilst the milk is coming up to the boil, mix the cornflour and water in a small bowl.
- Turn the heat down low and, with a whisk at the ready, pour the slaked cornflour into the milk. Whisk until the milk thickens.
- Continue to stir for 3 minutes to cook out the cornflour. Remove from the heat and add the sweetener and brandy. Mix well.
- Pour into a jug and serve with a sprinkle of nutmeg if desired!

- In a 2-quart saucepan over medium heat, melt the butter. Add the sugar, brandy, cinnamon, and salt and whisk to combine. Cook at a simmer, whisking, until the sugar is dissolved and the mixture is light in color and foamy. Remove from the heat.
- In a small bowl, beat the egg until frothy, then gradually whisk it into the mixture in the saucepan.
- Return the pan to medium heat and cook for about 2 minutes, stirring constantly, until thickened.
- Stir in the cream and remove from the heat.
- Keep at room temperature for up to 4 hours, until ready to use; or cover and refrigerate, then reheat in a microwave oven and stir in a few teaspoons of water to thin the sauce a bit.
EASY CRANBERRY SAUCE - MICROWAVE
This is a very easy way to make cranberry sauce. Try to use orange juice if possible, it really brings out "life" to the cranberry sauce. This is a fantastic recipe for cranberry sauce, I make it all the time for holidays, you can prepare this well in advance even days ahead, cover and refrigerate. If you are doubling the recipe then make in two separate microwave-safe bowls, don't double the recipe into one bowl or it will overflow in the microwave.

- Combine all ingredients in a 3-qt microsafe bowl; mix well.
- Cover with wax paper.
- Microwave on high for 5 minutes.
- Stir well; recover with wax paper.
- Microwave another 5-7 mins longer until cranberries pop, and sauce has thickened.
- Let stand, covered until cool.
- Transfer to serving bowl and chill for 3-4 hours.
