I was born in Maryland, and crab dip was served at all family functions since as long as I can remember. No "true" Baltimore native can NOT have a good recipe for crab dip. (It can be made using "low fat" sour cream, cream cheese, and cheddar cheese, but I always make this for parties, so I go for the full blown)!

3/4 cup sour cream
2 tablespoons fresh lemon juice
1 tablespoon grated fresh onion
1 teaspoon Worcestershire sauce
3/4 teaspoon dry mustard
1/4 teaspoon garlic powder
8 ounces cream cheese, softened
1/2 cup sharp cheddar cheese
1 lb lump crabmeat, shells removed (I've substituted 2 cans of canned crab meat as well)
paprika or Old Bay Seasoning

Steps:

  • Mix together sour cream, lemon juice, onion, Worcestershire, dry mustard, garlic powder, and cream cheese.
  • I use a hand mixer to get it blended really well.
  • Fold in cheddar cheese and crabmeat.
  • Spoon mixture into casserole dish and sprinkle with paprika or Old Bay Seasoning.
  • Bake at 325°F for 30 minutes, or until heated through.
  • Serve with tortilla chips, crackers, toast points, or my Maryland family's favorite-- Bugles!

11 ounces cream cheese, softened
1 small onion, finely chopped
5 tablespoons mayonnaise
2 (6 ounce) cans crabmeat, drained and flaked
⅛ teaspoon garlic powder
salt and pepper to taste
1 (1 pound) loaf round, crusty Italian bread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a medium bowl, combine the cream cheese, onion, mayonnaise, crabmeat, garlic powder, salt and pepper. Spread mixture into a 1 quart baking dish.
  • Bake for 20 minutes in the preheated oven. While the dip is baking, cut a circle in the top of the bread, and scoop out the inside to create a bread bowl. Tear the removed bread into pieces for dipping.
  • Remove baked crab dip from the oven, and stir well. Spoon the mixture into the hollowed out loaf. Place bread bowl and chunks of bread on a medium baking sheet, and bake for an additional 10 minutes. Serve hot.

¼ cup butter
1 clove garlic, minced

  • Place the butter in a small saucepan and bring to a boil over medium-high heat. Boil for 1 minute.
  • Set the saucepan aside and let the butter settle, undisturbed. The milk solids will come to the top of the butter and the watery whey will collect on the bottom. Skim off the milk solids with a spoon and pour the drawn butter into a serving bowl or several small ramekins, taking care not include the watery liquid in the bottom of the pan. Serve.

6 pounds crab legs (Dungeness crab, king crab, snow crab or a combination of different types)
1/2 cup butter
1 tablespoon minced garlic
salt and pepper to taste
2 tablespoons chopped parsley
lemon wedges (optional)

Steps:

  • Place 3 inches of water in a large, deep pot over medium heat. Bring the water to a boil.
  • Crack the crab legs with a seafood cracker.
  • Place the crab legs in the pot and cover.
  • Cook for 5-7 minutes until crab is heated through. If you have raw crab, cook for 10-12 minutes until flesh is red/orange and opaque.
  • Drain the crab legs and cover to keep warm.
  • Melt the butter in the pot. Add the garlic and cook for an additional 30 seconds. Turn off the heat and stir in the salt, pepper and parsley.
  • Return the crab to the pot and toss to coat with the garlic butter. Serve immediately, with lemon wedges if desired.

2 sticks (1 cup) unsalted butter

Steps:

  • In a medium saucepan, melt butter on medium-low heat.
  • Once melted, you should notice a foamy white layer on top of the butter mixture. This is the butter's milk solids. Use a heat-proof spoon to skim off and discard the foam.
  • When most of the foam has been removed, turn off the heat and remove the saucepan away from hot burner. At this point, the butter left over in the pan should look golden and not foamy - this is the butterfat.
  • Line a wire mesh strainer with cheesecloth, or a large coffee filter. Place the strainer over a large bowl. Carefully pour the butterfat through the strainer. You might discover more milk solids as you get to the bottom of the butter mixture. Leave the milk solids in the pan and don't pour it through the strainer.
  • Pour the drawn butter (aka clarified butter) into an air-tight jar to use for later, or pour into a dipping bowl if serving immediately. Just before serving, squeeze some lemon juice and pair with freshly steamed seafood (especially crabs and lobster tail!)
