This easy canned tomato recipe for beginners is perfect for summer. Add this bruschetta to your pantry to brighten up charcuterie and snack boards all year!

Number Of Ingredients 8

9 cups chopped cored plum tomatoes (about 4 lb or 12 medium) ()
5 cloves garlic, minced
1 cup white wine vinegar
½ cup water
2 tbsp sugar
2 tbsp dried basil
2 tbsp dried oregano
2 tbsp balsamic vinegar

Steps:

  • Prepare a boiling water canner. Heat jars in simmering water until ready for use. Do not boil. Wash lids in warm soapy water and set aside with bands.
  • Bring all ingredients except for the tomatoes to a full rolling boil in a saucepan over high heat, stirring occasionally. Reduce heat, cover and simmer 5 minutes or until garlic is heated through. Remove from heat.
  • Pack tomatoes into a hot jar leaving a ½ inch headspace. Ladle hot vinegar mixture over tomatoes, leaving a ½ inch headspace. Remove air bubbles. Wipe jar rim. Center lid on the jar and apply band, adjust to fingertip tight. Place jar in boiling water canner. Repeat until all jars are filled.
  • Process jars 20 minutes, adjusting for altitude. Turn off heat, remove the lid, let jars stand 5 minutes. Remove jars and cool 12-24 hours. Check lids for seal, they should not flex when the center is pressed.

The fresh taste of ripe tomatoes mixed with garlic, oregano, and basil couples perfectly with the tang of balsamic vinegar to pack a lot of flavor in each jar. And when you put up a batch for your pantry (via home canning) you'll always have the taste of fresh picked tomatoes no matter what time of year!

A new friend on a forum I read posted this recipe from the Ball Complete Book of Home Canning. Haven't tried it yet, but sounds yummy. Can't wait for those tomatoes to come on.

5 garlic cloves, minced
1 cup dry white wine
1 cup white wine vinegar
1/2 cup water
2 tablespoons granulated sugar
2 tablespoons dried basil
2 tablespoons dried oregano
2 tablespoons balsamic vinegar
9 cups plum tomatoes, chopped, cored (1-inch pieces)

Steps:

  • In large deep stainless steel saucepan, combine garlic, wine, wine vinegar, water, sugar, basil, oregano and balsamic vinegar. Bring to a full rolling boil over high heat, stirring occasionally. Reduce heat, cover and boil gently, for 5 minutes, until garlic is heated through. Remove from heat.
  • Pack tomatoes into hot jars to within a generous 1/2 inch of top of jar. Ladle hot vinegar mixture into jar to cover tomatoes, leaving 1/2 inch headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot liquid. Wipe rim. Center lid on jar. Screw band down until resistance is met, then increase to fingertip-tight.
  • Place jars in canner, ensuring they are completely covered with water. Bring to a boil and process for 20 minutes. Remove canner lid. Wait 5 minutes, then remove jars, cool and store.

Number Of Ingredients 10

1.5 kg tomato ((washed, cored, chopped. 9 cups / 3 lbs. Measured after prep))
5 cloves garlic ((washed, peeled and minced))
250 ml white wine ((dry. 1 cup / 8 oz))
250 ml white wine vinegar ((5% or higher (1 cup / 8 oz. 5% or higher.))
125 ml water ((1/2 cup / 4 oz))
2 tablespoons sugar ((white OR few drops liquid stevia))
2 tablespoons basil ((dried))
2 tablespoons oregano ((dried))
2 tablespoons balsamic vinegar
Pickle Crisp ((optional))

Steps:

  • Wash tomatoes. Core but leave unpeeled. Chop into 3 cm (1 inch) pieces. Set aside.
  • Combine everything from the garlic down to and including the balsamic vinegar in a large pot. Set aside.
  • Bring the pot mixture to a boil, then lower to a simmer and gently simmer for 5 minutes to heat garlic thoroughly.
  • Meanwhile, pack tomato into the heated jars you are using, leaving 2 cm (1/2 inch) headspace.
  • Now ladle the simmered sauce into heated jars, leaving 2 cm (1/2 inch) headspace.
  • [Optional] 1/4 teaspoon pickle crisp per jar
  • Debubble, adjust headspace.
  • Wipe jar rims.
  • Put lids on.
  • Process in a water bath or steam canner.
  • Process jars for 20 minutes; increase time as needed for your altitude.

Simply delicious! Canned or not, be ready for a treat! Brush olive oil on slices of baguette and toast. Top with this Bruschetta. I made these as Neighbor gifts and will bake some fresh baguette to include. I already had 2 jars myself! It is that good!

  • 3. Ladle hot vinegar mixture over tomatoes, leaving 1/2 inch head space. Remove air bubbles. Process 20 minutes.
  • 4. NOTE: You can also skip the canning and just add the tomatoes to the simmered vinegar mixture and store in the refrigerator. This recipe comes from Ball Canning.

I went through a major bruschetta phase and tried many many recipes until I found the perfect one. This was originally Guy Fieri's but is slightly adapted to my taste after making it about a billion times. Cookingt time is marinating time.

1 baguette, cut in half length-wise and toasted
2 teaspoons minced garlic (I use the kind in a jar)
3 tablespoons extra-virgin olive oil
1/4 cup grated parmesan cheese
2 1/2 cups minced roma tomatoes (cut so fine its almost a paste)
1/3 cup thinly sliced fresh basil leaf
2 tablespoons balsamic vinegar
1/2 teaspoon salt
1 teaspoon fresh ground pepper

Steps:

  • In a medium mixing bowl, add the tomatoes, garlic, basil, vinegar, olive oil, cheese, salt and pepper.
  • Mix thoroughly and let sit for at least 15 minutes at room temperature to let the flavors marinate.
  • Slice the bread into individual pieces and spoon the mixture on top.
