Because I have a busy schedule, I like to keep a batch of these tender chicken rolls in the freezer. Coated with golden crumbs, they seem fancy enough for company. 8 boneless skinless chicken breast halves (4 ounces each)
8 thin slices (4 ounces) deli ham
4 slices provolone cheese, halved
2/3 cup seasoned bread crumbs
1/2 cup grated Romano or Parmesan cheese
1/4 cup minced fresh parsley
1/2 cup milk
Cooking spray

Steps:

  • Preheat oven to 425°. Flatten chicken to 1/4-in. thickness. Place a slice of ham and half slice of provolone cheese on each piece of chicken. Roll up from a short side and tuck in ends; secure with a toothpick. , In a shallow bowl, combine crumbs, Romano cheese and parsley. Pour milk into another bowl. Dip chicken rolls in milk, then roll in crumb mixture. , Place roll-ups, seam side down, on a greased baking sheet. Spritz chicken with cooking spray. Bake, uncovered, 25 minutes or until meat is no longer pink. Remove toothpicks. Freeze option: Wrap unbaked chicken roll-ups individually in plastic wrap; place in a large resealable freezer bag. Freeze up to 2 months. To use, completely thaw in the refrigerator. Preheat oven to 425°. Unwrap roll-ups and place on a greased baking sheet. Spritz with nonstick cooking spray. Bake, uncovered, 30 minutes or until juices run clear.

These Italian stuffed chicken roll ups are so easy to make and are incredibly delicious. Made with provolone cheese and slices of prosciutto these are sure to please the whole family!

1.5 - 2 lbs. thinly-sliced chicken breasts
3 ounces thinly-sliced deli ham or prosciutto
4 slices or about 3 ounces provolone cheese
2/3 cup Italian seasoned breadcrumbs
½ cup grated Parmesan cheese
¼ cup minced fresh parsley (or 1-2 tablespoons of dried parsley flakes)
½ cup milk

Steps:

  • Preheat oven to 425F (220C). Spray a large baking sheet with cooking spray and set aside.
  • In a shallow bowl, combine breadcrumbs, Parmesan cheese, and parsley. Pour milk into a separate bowl.
  • Place a slice of ham and a slice of provolone cheese on each chicken breast. Depending on the size of your ham and cheese slices, you may need to trim them or cut them in half so that they are not hanging too far out of the roll-up.
  • Roll up chicken and secure with toothpicks.
  • Dip chicken rolls in milk, then coat with a light coating of the crumb mixture.
  • Place chicken seam-side down on prepared baking sheet.
  • Lightly spray chicken with cooking spray (this will help it turn golden brown!).
  • Bake, uncovered, for about 25 minutes or until chicken is cooked through. Remove toothpicks and serve!

3 cups Italian-style tomato sauce
6 boneless skinless chicken breast halves
1/2 cup mozzarella cheese, set aside
spaghetti
1/2 cup low-fat ricotta cheese
3 tablespoons grated parmesan cheese
1 tablespoon snipped fresh parsley

Steps:

  • Preheat oven to 375 degrees.
  • Pound chicken breast halves until they are about 1/4 inch thick.
  • In a medium mixing bowl, combine the low-fat ricotta cheese, 3 Tbsp grated Parmesan cheese and 1 Tbsp snipped fresh parsley.
  • Spoon about 1 1/2 Tbsp of cheese mixture onto each chicken breast.
  • Fold in long sides and then roll from short end.
  • Place seam side down in sprayed 8 x 8 inch baking dish.
  • Measure out 1 cup of sauce; set aside.
  • Next pour remaining 2 cups of tomato sauce over stuffed chicken breast.
  • Cover baking dish with aluminum foil.
  • Bake for 35- 40 minutes or until chicken is no longer pink.
  • Remove cover.
  • Sprinkle 1/2 cup shredded mozzarella cheese over top.
  • Bake an additional 4 to 5 minutes.
  • Cook spaghetti according to package directions.

  • Place single serving of spaghetti on plate with chicken placed on top and some of the remaining heat sauce spooned over top of stuffed chicken breast.
  • Serve with extra grated Parmesan cheese.

4 slices prosciutto
1 jarred roasted red pepper
One 8-ounce tube refrigerated crescent roll dough
1/4 cup pesto, plus more for serving
16 frozen mozzarella sticks, such as Farm Rich® Mozzarella Sticks (from one 24-ounce box)
Marinara sauce, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line 2 rimmed baking sheets with parchment.
  • Cut each slice of prosciutto into 4 pieces, each about 1 1/2 inches by 3 inches. Cut the roasted red pepper into 16 strips, each about 1/2 inch by 2 inches.
  • Unroll the dough on a cutting board. Spread the pesto on the dough in an even layer. Cut the dough along the perforated lines to create 8 triangles. Cut each triangle in half to create 16 long, thin triangles.
  • Lay a mozzarella stick across the bottom of the wide end of one of the triangles. Lay 1 strip of red pepper crosswise next to the mozzarella, then lay 1 piece of prosciutto over most of the remaining pesto layer. Starting at the wide end, roll up the dough tightly around the filling and place seam-side down on one of the prepared baking sheets. Repeat with the remaining dough, prosciutto, red pepper and mozzarella sticks.
  • Bake until the dough is golden brown and cooked through and the mozzarella sticks are heated through, about 20 minutes. Serve warm with marinara and more pesto for dipping.

1/4 cup coarsely chopped onion
4 boneless skinless chicken breasts
4 slices mozzarella cheese
1/2 teaspoon garlic powder

1/2 cup fine dry breadcrumb
1/2 cup chicken broth
2 tablespoons grated parmesan cheese
