Looking for an Italian appetizer made using spinach? Then surprise your guests with these parmesan crostini that are ready in just 20 minutes.

1 box (9 oz) frozen chopped spinach, thawed, squeezed to drain
1 package (8 oz) cream cheese, softened
1 cup freshly grated Parmesan cheese
1/4 cup mayonnaise
2 cloves garlic, finely chopped
1/4 teaspoon freshly ground pepper
12 slices (1/2 inch thick) French bread
1/3 cup pine nuts

Steps:

  • Heat oven to 325°F. In medium bowl, stir together spinach, cream cheese, Parmesan cheese, mayonnaise, garlic and pepper.
  • Spoon 2 tablespoons cheese mixture on each bread slice. Sprinkle with pine nuts. Place on ungreased cookie sheet.
  • Bake 10 minutes or until thoroughly heated and nuts are toasted. Serve warm.

SPINACH, PROSCIUTTO AND RED BELL PEPPER CROSTINI



Spinach, Prosciutto and Red Bell Pepper Crostini image

Number Of Ingredients 8

2 teaspoons plus 2 tablespoons olive oil
1/2 red bell pepper, cut into matchstick-size strips
1 10-ounce package fresh spinach, stemmed
1 teaspoon minced garlic
1/4 cup chopped prosciutto
1 tablespoon whipping cream
12 1/2-inch-thick slices cut from French bread baguette
6 tablespoons freshly grated Parmesan cheese

Steps:

  • Heat 1 teaspoon oil in heavy large skillet over medium heat. Add bell pepper and sauté until crisp-tender, about 8 minutes. Transfer pepper to small bowl.
  • Heat same skillet over high heat. Add spinach and sauté 2 minutes. Reduce heat to medium and sauté until spinach is tender, about 2 minutes longer. Cool in skillet. Transfer spinach to work surface; chop spinach. Set aside.
  • Heat 1 teaspoon oil in same skillet over medium heat. Add garlic and sauté until fragrant, about 30 seconds. Add prosciutto and sauté 30 seconds. Add chopped spinach. Sauté 2 minutes. Season to taste with salt and pepper. Remove from heat. Mix in cream.
  • Preheat broiler. Arrange bread slices on large baking sheet. Broil until lightly toasted. Turn bread slices over. Brush top of bread slices with remaining 2 tablespoons oil. Broil until lightly toasted. Cool. (Components can be made 8 hours ahead. Cover spinach mixture and bell pepper strips separately; refrigerate. Store toasts airtight at room temperature.) Spoon generous 1 tablespoon spinach mixture atop each toast. Arrange bell pepper strips atop toasts. Sprinkle with Parmesan cheese. Broil crostini until cheese bubbles and spinach mixture is hot, about 2 minutes. Transfer crostini to plate and serve.

These trendy crostini have bacon belts. And not only do they look fashionable, but the bread soaks up the bacon drippings as they bake, making it golden and crunchy. Eat them warm, no dipping required.

12 slices bacon, cut in half crosswise
2 tablespoons dark brown sugar
Nonstick cooking spray, for spraying the baking sheet
One 9-ounce box frozen chopped spinach, thawed and squeezed dry
One 8-ounce package cream cheese, at room temperature
1 cup freshly grated Parmesan
1/4 cup mayonnaise
2 cloves garlic, grated
Freshly ground black pepper
24 bias-cut slices baguette (1/4 inch thick; from 1 baguette)

Steps:

  • Preheat the oven to 425 degrees F. Toss the bacon with the brown sugar in a medium bowl until evenly coated. Arrange the bacon on a baking sheet and bake until light golden around the edges but still very soft, about 7 minutes. Transfer to a plate. Wipe the baking sheet clean, then spray with cooking spray.
  • Stir together the spinach, cream cheese, Parmesan, mayonnaise, garlic and 1/4 teaspoon pepper in a medium bowl.
  • Spoon 1 tablespoon of the spinach mixture onto each slice of bread and wrap it with a piece of bacon so that the ends are tucked under the bread (it should look a bit like a belt). Arrange the crostini on the prepared baking sheet and bake until the bacon is dark golden, about 15 minutes. These are best served warm.

SPINACH ALMOND CROSTINI

1/4 cup chopped toasted almonds, plus more for garnish
1 baguette
Olive oil
1 pound fresh spinach, washed, dried, and stemmed
1 clove garlic
3/4 cup sour cream
1 teaspoon chopped fresh parsley
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh chives
1/8 teaspoon cayenne pepper
Kosher salt
Zest and juice of 1/2 a lemon

Steps:

  • Preheat the oven to 350 degrees F. Spread the chopped almonds out on a baking sheet and bake until fragrant and golden, 5 to 10 minutes. Check frequently, as they can burn quickly. Allow to cool.
  • Preheat the broiler. Slice the baguette diagonally in 1/4-inch-thick slices, brush with olive oil and place on a broiler pan. Broil until toasted, 2 to 3 minutes.
  • In a steamer basket set over 1 inch of simmering water, steam the spinach until wilted, a few minutes. Remove the spinach and drain well.
  • Put the spinach and garlic in a food processor and pulse until smooth. Add in the sour cream, almonds, parsley, thyme, chives, cayenne, and season with 1/8 teaspoon salt. Pulse until combined. Stir in the lemon zest and lemon juice.
  • Spread the spinach mixture on the toasted bread, sprinkle with additional chopped almonds, and serve.

This is so quick to put together, and it always disappears just as quickly! I use a whole wheat baguette when I can get it, but white works just as well. This is also nice with a bit of olive oil drizzled over. I modified this recipe from one I found on another site.

1 (6 1/2 ounce) jar marinated artichoke hearts, drained and chopped
1/3 cup red onion, chopped small
1 plum tomato, chopped small
1 cup fresh spinach leaves, chopped small
5 tablespoons light mayonnaise
1/2 cup parmesan cheese, shredded
1 loaf french whole wheat baguette
garlic powder, to taste (optional)
salt, to taste (optional)
pepper, to taste (optional)

Steps:

  • Preheat oven broiler.
  • Slice bread on a diagonal about 1/3" thick and place on a large cookie sheet.
  • In a medium bowl, combine artichoke hearts, cheese, onion, spinach, tomato, and mayonnaise.
  • Spread the artichoke mixture evenly on the baguette slices.
  • Sprinkle on garlic, pepper, and salt if desired.
  • Place in oven and broil for about 2 minutes, or until artichoke mixture is melted and lightly browned.

1/2 pound sliced fresh mushrooms
1 small onion, chopped
2 teaspoons butter
2 teaspoons olive oil
1 garlic clove, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (9 ounces) fresh spinach
4 ounces cream cheese, cubed and softened
1/2 cup shredded Parmesan cheese

Steps:

  • In a large cast-iron or other heavy skillet, saute mushrooms and onion in butter and oil until tender. Add the garlic, salt and pepper; cook 1 minute longer., Add spinach and cream cheese; cook and stir until cream cheese is smooth and spinach is wilted. Sprinkle with cheese.
