2 lb. lean ground beef
2 cups breadcrumbs
1 lb. portobello mushrooms
1/2 yellow onion, diced
2 tablespoons garlic, minced
2 large eggs, beaten
4 teaspoons Worcestershire sauce
1 tablespoon Italian seasoning
Salt and pepper to taste

Steps:

  • Pulse the onions, garlic and mushrooms in a food processor until finely chopped.
  • Combine ground beef, breadcrumbs, mushroom mixture, eggs and seasonings and mix thoroughly.
  • Shape it into a loaf with your hands and place it on a greased baking sheet.
  • Bake at 350°F for 45 minutes or until a meat thermometer reads 160°F in the center of the meatloaf.
  • Let it stand for 10 minutes before slicing.
  • Dish and serve hot with gravy of your choice.
  • Enjoy!

½ pound fresh mushrooms, all minced except for 6
¾ cup fresh bread crumbs
½ cup minced onion
½ cup ketchup
2 eggs, beaten
1 ½ teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large mixing bowl, combine ground meat, minced mushrooms, bread crumbs, onion, ketchup, eggs, and salt and pepper. Mix well. Spread 1/2 of the mixture into the bottom of a loaf pan. Arrange 6 whole mushrooms stem down into meat. Top with rest of meat, patting to combine both halves.
  • Bake for 1 hour and 45 minutes, or until done. Internal temperature should measure 160 degrees F (70 degrees C) when done.

1 1/2 pounds ground meatloaf mix (equal parts ground beef, pork and veal or turkey)
1 1/2 cups finely chopped button mushrooms
1 cup dried breadcrumbs
1 cup shredded provolone
2 tablespoons chopped fresh flat-leaf parsley
2 large eggs, lightly beaten
1 medium onion, grated
1 clove garlic, minced
1/2 cup ketchup
1 tablespoon plus 1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper.
  • Combine the meatloaf mix, mushrooms, breadcrumbs, provolone, parsley, eggs, onion, garlic, 1/4 cup of the ketchup, 1 tablespoon of the Worcestershire, 1 1/2 teaspoons salt and 1/2 teaspoon pepper in a large bowl. Using your hands, mix together until well combined.
  • Transfer the mixture to the prepared baking sheet and form it into a compact oval-shaped loaf, about 9 inches by 5 inches. Bake for 30 minutes.
  • Stir together the brown sugar, remaining 1/4 cup ketchup and remaining 1 teaspoon Worcestershire in a small bowl for the glaze. Remove the meatloaf from the oven and brush the top and sides all over with the glaze. Return to the oven and bake until the glaze starts to caramelize and a thermometer inserted in the center of the meatloaf registers 160 degrees F, about 25 minutes more. Let rest for 10 minutes before slicing and serving.

1 pinch salt
1 sprig fresh rosemary, chopped

2 ½ cups beef broth

1 (2 1/2 pound) uncooked prepared beef, veal and pork meatloaf

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Melt butter in an oven-safe skillet over medium-high heat. Stir in mushrooms and a pinch of salt; cook and stir until mushrooms begin to brown, about 5 minutes.
  • Stir in fresh rosemary. Add flour and stir to coat the mushrooms; cook and stir for about 3 minutes.
  • Whisk in beef broth, 1/2 cup at a time, whisking constantly to prevent lumps.
  • Turn heat to high and bring the sauce to a simmer. Simmer a few minutes until sauce starts to thicken. Season with salt and pepper to taste.
  • Remove from heat and stir in heavy cream.
  • Slide prepared meatloaf into the sauce. Spoon sauce over the top of the meatloaf.

1 beef bouillon cube
4 drops Kitchen Bouquet

  • In medium skillet, heat mushrooms in oil.
  • Stir in flour.
  • Cook over low heat stirring until mixture is bubbly.
  • Remove from heat.
  • Add enough water to reserved mushroom liquid to measure 1 cup.
  • Stir into mushroom mixture with bouillon cube.
  • Heat to boiling; stirring constantly.
  • Boil and stir 1 minute.
  • Stir in kitchen bouquet.

Trust me this isn't an ordinary meat loaf. My husband hates onions and mushrooms but he doesn't even know they are in it! Both of us hate traditional meat loaf, so I surfed through the internet until coming across something without catsup. Once I varied the ingredients a little bit, it turned out awesome.if you have a Magic Bullet (60 bucks at Wal-mart, use it to make bread crumbs instead of tearing, the bread, it comes out a lot nicer. I also use double the amount of Worcestershire sauce in mine because I like it a lot.

1 1/2 lbs ground beef, but 85% works well too (preferably 93% lean)
1/2 cup milk
1 eggs, fork beaten or 1/4 cup egg substitute
2 slices bread (torn into very small pieces)
2 teaspoons parsley flakes
2 teaspoons Worcestershire sauce
1/4 teaspoon sea salt (table salt is fine too)
1/2 teaspoon pepper
1 teaspoon fresh garlic
1/2 cup chopped onions or 1/2 cup sliced dried onion
1 (4 ounce) can sliced mushrooms, drained
glaze (optional)
2 tablespoons olive oil (only if using RAW onion.)

Steps:

  • Preheat oven to 350*F.
  • chop mushroom and onion to approximately 1/4 inch pieces.
  • If you are using RAW onion heat the onion in the olive oil over medium heat until the onion is soft/tender. let cool.
  • In large mixing bowl add milk, egg, parsley, Worcestershire sauce, salt, and pepper together then beat well.
  • Next add the bread and blend into the mix.
  • Then add the beef, cooled onions, mushrooms, and garlic and blend that in as well (I just use the same fork I blended the egg with to blend everything together).
  • Spread the mixture evenly into a bread loaf pan (9x5x3-inch).
  • Bake at 350°F for an hour to an hour and fifteen minutes or until the center is no longer pink/red.
  • Let stand for 10 minutes before slicing and serving.

10-oz. bottle red steak sauce, divided
1/3 c. plus 1/4 c. warm water, divided
2 T. onion, finely chopped
2 eggs, beaten
1 T. dried parsley
1 t. salt
1/4 t. pepper
2 lbs. lean ground beef
1 c. soft bread crumbs
1 T. oil
1/2 c. sliced mushrooms

Steps:

  • In a large bowl, combine 1/2 cup sauce, 1/3 cup water, onion, eggs, parsley, salt and pepper. Mix in beef and bread crumbs. Pat into an ungreased 9"x5" loaf pan. Set loaf pan in a 13"x9" baking pan. Bake, uncovered, at 350 degrees for 1-1/4 hours. At serving time, heat oil in a small skillet over medium heat. Sauté mushrooms until tender, about 3 minutes; drain. Stir in remaining sauce and water. Bring to a boil, stirring constantly. Spoon mushroom sauce over meatloaf. Makes 6 to 8 servings.

1 small carrot, finely grated
2 tablespoons tomato paste
1/2 teaspoon dried thyme
1 clove of garlic, minced
3/4 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 1/2 pounds extra-lean ground beef (90% lean or higher)
3/4 cup quick-cooking oats
2 large eggs, beaten
2 teaspoons Worcestershire sauce
1 8-ounce can no-salt added tomato sauce
1 Tablespoon prepared mustard
1 tablespoon unsulphered molasses

Steps:

  • Preheat the oven to 350 degrees.
  • Heat the oil in a large skillet, add the onion and mushrooms and cook until the liquid is evaporated and the mushrooms begin to brown about 8 minutes. Stir in the carrots, tomato paste, thyme and garlic and cook, stirring, 2 minutes more. Allow to cool completely.
  • In a large bowl combine the beef, oats, eggs, Worcestershire sauce, mushroom mixture, salt and pepper. Mix until just well combined. Transfer the mixture to a 9x13 inch baking dish and shape into a loaf about 5 inches wide and 2 inches high.
  • In a small bowl whisk the tomato sauce, molasses and mustard and pour over the meatloaf.
  • Cook the meatloaf until a meat thermometer registers 160 degrees, about 55-60 minutes. Remove from the oven and let rest 15 minutes before slicing.
  • Serving Size: one 1-inch thick slice

1 slice white bread, crumbled
1 tablespoon yellow onion, finely chopped
1 teaspoon salt, I prefer Kosher
1/2 teaspoon black pepper, freshly ground

1/3 cup parmesan cheese, freshly grated, Kraft pre-grated works
1/4 teaspoon garlic, minced

4 tablespoons tomato paste
2 tablespoons canola oil

1/3 cup dry white wine, plus 1T

Steps:

  • In a bowl, break up the 1 lb of beef with a fork.
  • In a small bowl, combine the 2 T milk and bread, and mash until creamy. Add the milk and bread to the meat.
  • Add the onion, salt, pepper, prosciutto, cheese, and garlic. Mix thoroughly by hand.
  • Mix in the lightly beaten egg.
  • Shape meat into a firm, round ball; then roll this into a salami-like loaf about two and a half inches thick. Tap with your palm to drive out any air bubbles.
  • Roll the loaf in the bread crumbs until evenly coated.
  • Chop the mushrooms roughly and set aside.
  • Whisk 1 T dry white wine in the tomato paste and set aside.
  • Heat the butter and canola oil in a Dutch oven or heavy casserole pan just big enough for the meat.
  • Brown the meat on all sides in the pan over medium heat after the butter foam subsides.
  • Add the wine. Increase heat to medium high. Boil wine briskly until reduced one half, turning meat carefully once or twice.
  • Turn heat to medium low and add chopped mushrooms. Add the tomato paste to the meat and mushrooms.
  • Cover and cook at a simmer for 30 minutes, turning the meat once or twice.
  • Carefully remove meat to a cutting board. Allow it to cool slightly and settle.
  • Cut into slanted slices about 3/8 of an inch thick.
  • If the sauce seems thin, concentrate it by boiling rapidly for a few minutes. Pour a little sauce on a warm serving platter, arrange the meat slices, then cover the remainder of the mushroom sauce.
  • YUM.

1 cup ketchup
1 1/2 tablespoons brown sugar, packed
1 tablespoon grape jelly
1/2 teaspoon prepared mustard
1/8 teaspoon onion salt or 1/8 teaspoon garlic salt
1/4 teaspoon minced onion
1 tablespoon Worcestershire sauce

Steps:

  • Combine all ingredients in a sauce pan and heat slowly on medium heat until all ingredients are dissolved (except the onion) and sauce begins to bubble slightly.
  • This should be done about 20 minutes before the meatloaf is done baking. Remove meatloaf from oven and spread the hot mixture over the meatloaf liberally. Return prepared meatloaf to the oven for the remaining 20 minutes.
