1 medium green pepper, diced
1 cup diced celery
1 medium onion, diced
3/4 to 1 cup sugar
1/2 cup cider vinegar
1 jar (2 ounces) diced pimientos, drained

Steps:

  • In a 1-qt. serving bowl, combine all of the ingredients. Cover and refrigerate overnight. Serve with a slotted spoon.

Like my aunt, you may have to coax others to try it at first...but you'll have a hard time keeping them from taking a second helping.

1 large green pepper, finely chopped
1 medium onion, finely chopped
1 cup finely chopped celery

1/2 cup white wine vinegar
1/4 cup vegetable oil
1/2 teaspoon salt

Steps:

  • In a large bowl, combine all ingredients. Cover and chill overnight. Drain before serving. Serve as a side dish or use as a relish on hot dogs or sandwiches.

3 tablespoons sea salt
3 cloves garlic, minced, or more to taste

Steps:

  • Mix cabbage, onion, sea salt, and garlic together in a bowl. Firmly pack mixture into a large, clean, food-grade plastic bucket. The cabbage will start to make its own brine as the salt starts to draw out the water of the cabbage.
  • Fill a large, clean, food-grade plastic bag with water and place over the salted cabbage mixture so none of the cabbage is exposed to air.

5 pounds green cabbage, shredded
3 tablespoons pickling salt
1 tablespoon juniper berries
2 teaspoons caraway seeds
1 quart water, in a sanitized glass jar

Steps:

  • In large mixing bowl, mix cabbage thoroughly with salt, juniper berries, and caraway seeds, using hands or tongs. If using your hands, make sure that they are very clean prior to mixing. Let stand for 10 minutes.
  • Pack cabbage mixture down into a large plastic food container. Top with a lid smaller than the opening of the container and place a glass jar filled with the quart of water on top of the lid. Place in cool area overnight (65 to 70 degrees F). In a day, the cabbage should have given up enough liquid to be completely submerged. The jar serves as a weight to keep the cabbage submerged and away from air.
  • Check cabbage every other day for approximately 2 weeks and skim the surface of scum, if necessary. Let stand for 4 weeks. Transfer to an airtight container and store in the refrigerator for up to 6 months.

1/4 c pimento, chopped
3/4 c sugar
3 Tbsp cider vinegar

4 cups salad greens (any variety)

Steps:

  • Prep: Wash the salad greens if necessary, and set aside. Wash and finely chop the onion and celery and place in a medium mixing bowl. Drain the tuna and add to the bowl, flaking it with a fork into small pieces.
  • Mix: Add the mayonnaise, salt and pepper to the bowl and mix well to combine.

3 c sauerkraut, rinsed and drained
1 c celery, chopped
1 small carrot, shredded
1 large jalapeno pepper, seeded and chopped fine
3 Tbsp capers
1 bunch green onions, chopped
1/4 c white wine vinegar
1/4 c vegetable oil
3/4 c sugar
1 tsp ground black pepper
salt to taste

Steps:

  • 1. Rinse Sauerkraut and let drain. I used homemade Sauerkraut but canned, bagged or jarred will work.
  • 2. In a large bowl mix Sauerkraut and all veggies, combine well. Add salt to taste. It shouldn't need much.
  • 3. In a small bowl mix vinegar, sugar, oil and pepper. Stir until sugar is mostly dissolved. Pour dressing over vegetable mixture and combine well.
  • 4. Refrigerate up to one hour or overnight. Serve cold as a side with your favorite meal and enjoy!
