Steps:
- Preheat oven to 400 degrees.
- Lay a piece of foil on a baking sheet and spray with nonstick spray.
- Lightly squeeze fresh lemon juice on both sides of the cod and then lightly salt and pepper. Lay fish, skin side down on the foil.
- Mix together the mayonnaise and garlic powder. Spread a thin layer on top of the fish.
- Sprinkle fish with Parmesan cheese and then the Panko bread crumbs.
- Bake for about 15 minutes or until fish is cooked through.
- Sate internal temperature for fish is 145 degrees.

PARMESAN-CRUSTED COD FILLETS
Cod fillets are one of our favorites; covered with Panko crumbs and baked gives them a crunch topping and tender, flaky fish inside. I serve this with the julienned carrots and also with spinach I've lightly sauteed in a little bit of olive oil over medium-low heat and cooked for about 2 minutes.

- Preheat oven to 450 degrees.
- Peel the carrots and julienne enough to make 3 cups; cover and set aside.
- Lightly coat a baking sheet with nonstick cooking spray. Rinse and pat dry fish and place on baking sheet. Season with salt and pepper.
- In small bowl stir together Panko crumbs and cheese; sprinkle and lightly press onto fish. Bake, uncovered, 4-6 minutes for each 1/2-inch thickness of fish, until crumbs are golden and fish flakes easily when tested with a fork.
- Meanwhile, in a large skillet, bring 1/2 cup water to boiling; add carrots. Reduce heat and cook, covered, for 5 minutes. Uncover; cook 2 minutes more. Add butter and ginger; toss. Serve fish and carrots with greens.

- Place fillets in an 8-in. square baking dish coated with cooking spray. In a small bowl, combine the mayonnaise, Parmesan cheese, onions and Worcestershire sauce. Spoon over fillets. Bake, uncovered, at 400° for 15-20 minutes or until fish flakes easily with a fork.
COD BAKED IN MAYONNAISE
This comes from The Encyclopedia of European Cooking. It is one of the easiest dishes you could cook. The book recommends you serve it with mashed potatoes. I made this in little individual ovenproof bowls and served it as a starter.

- Wash and dry cod fillets.
- Place in a buttered casserole and season with the salt and pepper.
- Sprinkle parsley and onion over it.
- Cover with mayonnaise.
- Bake in a pre-heated hot oven for 20 minutes.
- Sprinkle with breadcrumbs over it and bake another 5 minutes.
- Serve.
GARLIC-CRUSTED COD FISH
This recipe comes from The Black Dog Summer on the Vineyard Cookbook. Just buy the cod and parsley; and you probably have everything else at home. Such a simple fish recipe and it packs a lot of flavor. This is for garlic lovers! Note: if the breadcrumb coating doesn't immediately adhere to the fish, just pat it on. It works great.

- Preheat oven to 400 degrees F.
- Heat butter and oil in a saucepan over low heat and add the garlic for one minute to soften, not brown.
- Remove pan from heat and add the bread crumbs, parsley, salt and pepper.
- Mix to moisten the crumbs and seasonings.
- Dredge each fish fillet in the beaten egg first.
- Then dredge each fish fillet into the crumb mixture.
- Place the coated fish fillets in an oiled roasting pan for the oven.
- Bake the fillets in the preheated oven for about 10 to 12 minutes, until the crust is golden brown. The fish inside should be flaky. Use a fork to make sure the fish flakes and is done.
- Serve with lemon wedges.
ADOBO AND PARMESAN CRUSTED COD

Steps:
- Mix the Adobo spice (or you can make your own Adobo spice by combining equal amounts of cumin, onion powder, salt, ground black pepper, garlic powder, and turmeric), and oregano.
- Pre-heat an iron skillet, preferably an iron grilling skillet on medium-high heat. Coat the skillet well with the olive oil.
- Prepare the fish by rinsing with cold water and pat dry with a paper towel or cloth. Apply the spice mixture to both sides of the cod fillets.
- Add cod fillets to the skillet and cook for 3 minutes on each side. Add lime juice to the skillet after the fish is flipped.
- Grate the ground black peppercorn and lightly sprinkle the grated parmesan cheese over the cod fillets.
- Place the iron skillet in the oven for 1 minute if you have a broiler, 2-3 minutes otherwise.
- Remove skillet from the oven and remove the fillets from the skillet. Allow to sit for 2 minutes.
