Broiled Sweet Potatoes image

This is a recipe of my great-grandmother's that I grew up with. It is a favorite of mine and I try to make it often for my family.

4 sweet potatoes
½ teaspoon butter
¼ cup white sugar

Steps:

  • Preheat oven to broil.
  • Line a 10x15 inch cookie sheet with aluminum foil.
  • Cook the sweet potatoes in the microwave until done, about 4 minutes per potato. When the potatoes are cool, peel, cut in half lengthwise and slice about 1/4 inch.
  • Place the potato slices in a single layer on prepared cookie sheet. Slice the butter into about 1/8 inch pats and place all over the sweet potatoes. Sprinkle the sugar on the potatoes and butter. Place under broiler until golden and bubbly, about 5 to 8 minutes.

WHOLE ROASTED SWEET POTATOES



Whole Roasted Sweet Potatoes image

Four 8-ounce sweet potatoes
Extra-virgin olive oil, for rubbing and drizzling
Kosher salt and freshly ground black pepper
Shaved Parmesan, for serving

Steps:

  • Preheat the oven to 425 degrees F.
  • Wash the potatoes well and pat dry. Poke holes all around each potato using a fork.
  • Rub the potatoes all over with oil, then sprinkle liberally with salt and pepper. Place the potatoes on a baking sheet or aluminum foil and roast until tender when pierced with a fork, 40 to 45 minutes.
  • Transfer the potatoes to a plate and serve with shaved Parmesan and a drizzle of olive oil.

4 large sweet potatoes, pierced with a fork
1/4 cup plus 2 tablespoons vegetable oil
1 teaspoon ground cumin
1 teaspoon chili powder
Kosher salt and freshly ground pepper
1/2 cup chopped fresh cilantro
Grated zest and juice of 1/2 lime, plus more lime juice as needed
1 canned chipotle chile in adobo sauce, finely chopped

Steps:

  • Preheat a grill to medium high. Microwave the sweet potatoes until just starting to soften, 8 to 10 minutes. Let cool, then slice into 1/2-inch-thick rounds.
  • Whisk 2 tablespoons vegetable oil, the cumin, chili powder, 1 teaspoon salt and a few grinds of pepper in a large bowl. Add the potato slices and gently toss to coat. Transfer to the grill and cook until charred, 2 to 3 minutes per side. Transfer to a platter.
  • Mix the cilantro, remaining 1/4 cup vegetable oil, lime zest and juice and chipotle in a bowl; season with salt. Thin with more lime juice if needed. Spoon the dressing over the sweet potatoes.

This simple preparation of sweet potatoes can become the base for many lunches and weeknight meals: Cube them and add to a soup or salad, or simply leave in halves and top with sour cream, Greek yogurt, or a drizzle of olive oil.

8 large sweet potatoes (9-12 oz. each)
1/4 cup vegetable oil
1 Tbsp. kosher salt

Steps:

  • Place racks in upper and lower thirds of oven; preheat to 400°F. Cut potatoes in half lengthwise and divide between 2 rimmed baking sheets. Drizzle with oil and season all over with salt. Rub sweet potatoes with your hands to evenly coat, then arrange cut side down. Roast potatoes, rotating baking sheets top to bottom halfway through, until fork-tender, 25-35 minutes (depending on their size, some may be done before others; test each one every 5 minutes after the 25-minute mark).
  • Do Ahead: Sweet potatoes can be roasted 4 days ahead. Let cool; cover and chill.

4 sweet potatoes (about 1.2kg), peeled
2 tbsp olive oil
sliced red onions, unpeeled garlic cloves, thyme sprigs or other veg or herbs of your choice (optional)

Steps:

  • Heat the oven to 230C/210C fan/gas 8. Chop the sweet potatoes into 2-3cm cubes.
  • Tip into a large, shallow roasting tin, drizzle with the oil and season with salt and pepper. If you're adding additional veg or herbs, such as sliced red onions, garlic cloves and thyme, tip these in as well. Toss everything together to coat in the oil, then roast for 20 mins. Toss again to ensure the potatoes cook evenly, and roast for another 15-20 mins until the potatoes are lightly browned on the outside and tender when pierced with a fork or knife.

  • In a small bowl whisk together the oil, butter and salt and pepper to taste.
  • Arrange the potato slices not touching in rows on an oiled baking sheet.
  • Brush slices with the oil mixture.
  • Roast them in the oven on the upper third or middle layer of a pre heated 450 degree oven turning once.
