Stuffed Sweet Potatoes With Pancetta and Broccoli Rabe image

4 sweet potatoes (about 8 ounces each)
2 ounces sliced pancetta (about 8 thin slices)
1 bunch broccoli rabe, tough stems trimmed, roughly chopped
Kosher salt
8 ounces shiitake mushrooms, stemmed and sliced
2 cloves garlic, thinly sliced
1/8 teaspoon red pepper flakes
1/2 cup part-skim ricotta cheese
1 tablespoon finely grated parmesan cheese
Freshly grated nutmeg

Steps:

  • Pierce each sweet potato with a fork in a few spots. Arrange on a microwave-safe plate and microwave until soft, about 12 minutes.
  • Meanwhile, cook the pancetta in a large skillet over medium heat, turning once, until crisp, about 4 minutes. Remove from the skillet and drain on paper towels. Increase the heat to medium high; add the broccoli rabe and 1/4 teaspoon salt to the skillet and cook, stirring occasionally, about 3 minutes. Add the mushrooms, garlic and red pepper flakes and cook, stirring occasionally, until the vegetables are tender, about 3 more minutes.
  • Mix the ricotta, parmesan, and nutmeg to taste in a small bowl. Split open the sweet potatoes lengthwise and fluff the flesh with a fork. Top each with about 1 teaspoon of the ricotta mixture, then top evenly with the broccoli rabe mixture and the remaining ricotta mixture. Chop the pancetta and sprinkle evenly on top.

1 1/4 pounds broccoli rabe
4 medium-size ripe plum tomatoes
2 tablespoons olive oil
2 teaspoons chopped garlic
Salt and freshly ground pepper to taste
1/4 teaspoon hot red pepper flakes

Steps:

  • Cut off and discard any tough stems from the rabe.
  • Core and chop the tomatoes into 1/2-inch cubes.
  • Bring enough salted water to a boil to cover the rabe when added. Add the rabe, bring to a boil and cook for 1 minute. Drain, reserving 1/4 cup of the cooking liquid.
  • Heat the oil in a large skillet, add the rabe, tomatoes, garlic, salt and pepper to taste and the pepper flakes. Add the reserved liquid. Cook over high heat for 2 minutes, shaking and stirring. Serve immediately.

2 garlic cloves, thinly sliced
1/2 teaspoon crushed red pepper flakes
1 medium bunch broccoli rabe (rapini), trimmed, cut into 1/2" pieces
2 teaspoons kosher salt plus more
1/2 teaspoon freshly ground black pepper plus more
6 large eggs
1 1/2 cups whole milk
1/2 pound country-style white bread, cut into 1" pieces (about 8 cups)
1/2 cup plus 2 tablespoons finely grated Parmesan
6 thin slices pancetta (Italian bacon)

Steps:

  • Preheat oven to 350°F. Heat oil in a large skillet over medium heat. Add garlic and red pepper flakes. Stir until garlic is softened, about 30 seconds. Add broccoli rabe; season with salt and pepper. Cook, tossing, until wilted, about 2 minutes; let cool slightly.
  • Meanwhile, whisk eggs, milk, 2 teaspoons salt, and 1/2 teaspoon pepper in a large bowl to blend. Add broccoli rabe mixture, bread, and 1/2 cup Parmesan; toss to combine. Transfer to a 1 1/2-quart baking dish. Top with pancetta and remaining 2 tablespoons Parmesan.

  • Bring 2 quarts of water to a boil. Place broccoli rabe in boiling water and cook for about 2 minutes.

  • Heat oil in skillet over medium heat and add garlic. Saute' for 1 minute or until lightly browned.

4 tablespoons extra virgin olive oil, divided
3 garlic cloves, peeled and flattened
1 medium onion, chopped
salt and pepper, to taste
3 ounces thinly sliced pancetta, chopped
1 teaspoon fennel seed, crushed
1/4 teaspoon dry crushed red pepper (optional)
1 bunch broccoli or 1 large broccoli rabe, stems sliced 1/2-inch thick, tops cut into 2-inch pieces

1 (8 7/8 ounce) package dried pappardelle pasta
1 cup freshly grated pecorino romano cheese, plus additional for serving
1/2 cup pine nuts, toasted

Steps:

  • Heat 2 tablespoons oil in heavy large skillet over medium-high heat. Add garlic and cook until golden brown, stirring frequently, about 3 minutes.
  • Discard garlic. Add onion, pancetta and fennel seeds to skillet; sauté until onion is tender and pancetta begins to brown, about 8 minutes. Add crushed red pepper (if using), then broccoli stems and cook 4 minutes to soften slightly, stirring occasionally. Stir in broccoli tops, sprinkle with salt, and add 1 cup water. Cover and cook until stems and tops are tender, about 5 minutes. Season to taste with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta, reserving 1 cup cooking liquid.

2 slices day-old country or rustic bread, crusts removed
Olive oil
Coarse salt
6 slices pancetta (about 1/4 pound), cut into 14-inch dice
1/2 cup white balsamic vinegar
1 tablespoon mustard seeds
1 teaspoon crushed red pepper flakes
2 tablespoons sugar
1 teaspoon fresh thyme leaves, roughly chopped
6 tablespoons (3/4 stick) unsalted butter, melted
1/4 cup finely chopped red onions (about 1/2 medium onion)
1/4 cup finely chopped fennel (about 1/2 bulb)
1 pound young broccoli rabe, washed, dried, and leaves removed (keep for another use)
2 heads radicchio, cored and leaves separated
2 tablespoons blended olive oil and grape seed oil
2 teaspoons minced garlic
4 large eggs

Steps:

  • 1. Heat the oven to 325°F. Lightly oil and salt the day-old bread and bake until golden brown, about 10 minutes. Let cool, tear into pieces, and process in the food processor until finely ground; set aside.
  • 2. In a medium skillet, heat the pancetta and cook over medium-high heat for 5 minutes until lightly golden brown. Drain on a paper towel-lined plate. In a medium bowl, mix the vinegar, mustard seeds, red pepper flakes, sugar, and thyme. Whisk in the melted butter and add the red onions, fennel, and pancetta. Set the pancetta vinaigrette aside.
  • 3. In a large bowl, toss the broccoli rabe with the radicchio leaves, oil, and garlic; add salt to taste. Heat a grill or grill pan until hot but not smoking. Put the greens (in batches) on the grill for 30 seconds, turning them over frequently until just wilted; transfer to a large bowl. Continue until all of the broccoli rabe and radicchio are grilled and toss them with 4 tablespoons of the pancetta vinaigrette.
  • 4. Bring a medium pot of water to a boil over medium-high heat and use a slotted spoon to lower the eggs into the water. Adjust the heat to maintain a simmer and cook the eggs for 5 minutes. Fill a medium bowl with ice and water, then remove the cooked eggs from the pan into the ice water bath. When the eggs are cool enough to handle, gently crack the shell all over, start to peel, and intermittently submerge in the ice bath (if they're a bit too hot) and continue to peel.
  • 5. To serve, portion the grilled broccoli rabe and radicchio onto 4 serving plates, mounding it in the center of each plate. Put 5 Parmigiano shavings on top of the greens, then set one whole soft-cooked egg on top. Drizzle the remaining vinaigrette on top of the egg and around the plate and top generously with the breadcrumbs.

1/4 cup extra virgin olive oil
6 ounces pancetta, diced (or bacon)
1 medium onion, diced fine
6 garlic cloves, chopped
1 teaspoon red pepper flakes (to taste)
2 bunches about 2 1/2 pounds broccoli rabe, bottom 3-4 inches of the stems discarded, leaves separated, florets and remaining stem washed
2 cups unsalted chicken stock
1 1/2 cups water (optional)
1/2 cup sun-dried tomato, reconstituted in hot water, drained and diced
1/2 lb orecchiette
1/2 cup grated parmesan cheese
1 tablespoon lemon juice
kosher salt, to taste
fresh ground black pepper, to taste

Steps:

  • Heat a large sauteuse, saute pan, or large sauce pot over medium heat, then add the olive oil.
  • Add the pancetta and saute gently until some of the fat has rendered, about 4 minutes.
  • Add the onions, garlic and red chile flakes to the pancetta and saute until the onions and garlic soften and turn golden, about 4 minutes. Be careful not to burn the onion and garlic or they will become bitter.
  • Add the broccoli rabe to the pan. Cover and cook, stirring occasionally, until the greens begin to wilt.
  • Bring the chicken stock to a simmer in a small saucepan.
  • Add 1 cup of the hot chicken stock to the saute pan and bring to a boil. Add the sun-dried tomatoes and orecchiette to the pan and reduce the heat to a simmer. Continue stirring the contents of the pan and cook until the pasta becomes al dente, about 15 minutes. Slowly add more hot chicken stock, then water, as needed, to cook the pasta.
  • Add the Parmesan cheese and lemon juice and season to taste with salt and freshly ground pepper. Serve immediately.
