BREADED ARTICHOKE HEARTS
A wonderfully crispy side dish that tastes as good as it looks.

Steps:
- Drain the artichoke hearts into a colander, then gently squeeze the water out of them. Beat the egg with the grated cheese and a shake of salt and pepper. Place some flour into a low rimmed bowl, put the beaten egg next to it and in a third bowl, place some breadcrumbs mixed with a sprinkle of parsley, thyme, salt and pepper. Begin to dip each artichoke heart into the flour, then egg, then breadcrumbs, until all are coated. Set on a plate. Heat the oil, and when hot begin frying the breaded artichoke hearts. Fry until golden brown. Place on a paper towel lined plate to drain. Serve hot as an appetizer or side dish.

- Preheat the oven to 400 degrees F. Spray a baking sheet with nonstick cooking spray or line with parchment paper.
- In a food processor, combine the crackers, basil, cheese, parsley and garlic salt and process to fine crumbs (the texture of breadcrumbs). Roll the artichoke hearts in the cracker crumb mixture and place on the prepared baking sheet.
- Bake until the cracker crumbs are golden brown, about 30 minutes. Arrange the artichokes on a serving platter with toothpicks. Serve with marinara sauce for dipping, if desired.

- Preheat a small nonstick skillet over medium heat. Add oil and butter to the skillet. When butter melts into oil, add garlic and anchovies. Using the back of a wooden spoon, work anchovies into oil as they break up. When anchovies have dissolved into oil, add bread crumbs to the pan and lightly toast, about 2 to 3 minutes. Add parsley, cheese and black pepper, stir to combine and remove pan from heat. Top artichokes with an even layer of bread topping and set in the middle of oven. Bake 10 minutes until artichokes are warm and topping is deep golden brown in color.

- Preheat the oven to 350 degrees Fahrenheit.
- Thaw the spinach. Then use a strainer to squeeze out as much moisture as possible.
- Mince the shallot. Thinly slice the green onions. Roughly chop the artichokes.
- In a medium bowl, mix together the spinach, shallot, green onions, and artichokes with the Greek yogurt, mayonnaise, Parmesan cheese, dried dill, garlic powder, salt and pepper. Taste and add a few pinches kosher salt if desired.
- Spread the dip in an even layer in a small baking dish. Top with a sprinkle of shredded Parmesan (and if desired, a sprinkle of paprika). Bake for 20 minutes until warmed through and the cheese is melted.
- Serve warm with pita chips. Make ahead info: make up to 1 day in advance and refrigerate in a bowl. Transfer to a baking dish for baking: you may need to bake a few extra minutes until fully warmed through.

- Mix mayonnaise, garlic, lemon juice, lemon zest, salt, and pepper together in a small bowl until well combined. Set aside.
- Lay artichoke hearts in a single layer on a paper towel-lined plate. Pat dry with more paper towels.
- Whisk flour, water, baking powder, and salt together in a shallow dish until well combined. Mix bread crumbs, garlic powder, and paprika together in a separate shallow dish.

- Squeeze as much liquid as possible out of the artichoke hearts and drain them on paper towels.
- Roll each heart in egg wash, and then roll in breadcrumbs until well-coated.
- Deep fry for one to two minutes until lightly browned and slightly crispy.
- Melt butter (use your judgment as to how much) and garlic in a small, individual sauté pan.
- Sauté hearts for two minutes in the garlic butter, basting each heart and taking care not to burn the butter or garlic.
- Serve right in the pan with firm bread such as French or Italian.

- Thaw the artichoke hearts.
- Place flour in a bowl and add egg yolks, nutmeg and salt, pepper and tabasco to taste. Gradually beat in 1 cup milk. Stir in baking powder. Coat artichokes in batter. Adjust the consistancy with the extra milk if needed.
- Drop the artichokes one at a time into oil (deep enough to cover artichokes), heated to 360 degrees. Cook, turning, until golden brown. Remove with a slotted spoon and drain on paper towels.
- Serve hot with your favorite dipping sauce (I like ranch or flavored mayo)!
