FRIED DANDELIONS (APPALACHIAN STYLE)



Fried Dandelions (Appalachian Style) image

This is a recipe handed down by my mother and is a local favorite back in West Virginia, up in the Appalachian Mountains. This recipe consists of picking the largest dandelion flowers and leaving the entire stem behind, battering the flowers up and frying them in butter. Has a flavor similar to that of mushrooms. One word of caution...to avoid a bitter taste, make sure the dandelion flowers you're picking have not been sprayed by dogs or pesticides.

2 cups all-purpose flour
2 tablespoons seasoned salt
1 tablespoon ground black pepper
4 eggs
80 unopened dandelion blossoms, stems removed
½ cup butter

Steps:

  • Combine the flour, seasoned salt, and pepper in a mixing bowl until evenly combined; set aside. Beat the eggs in a mixing bowl, then stir in the dandelion blossoms until completely coated.
  • Melt the butter in a large skillet over medium heat. Remove half of the dandelions from the egg, and allow the excess egg to drip away. Toss in the flour until completely coated, then remove from the flour, tossing between your hands to allow excess flour to fall away. Cook the dandelions in the melted butter until golden brown, stirring occasionally, about 5 minutes. Drain on a paper towel-lined plate. Repeat with the remaining dandelions.

It seems like a lot of greens but they cook down to almost nothing.And if you want you can replace the dandelion with spinach. I use hot sausage which gives this a real kick, but if you rather go for mild or just use chopped beef.

1 lb cooked pasta
1/2 lb crumbled sausage
1 lb chopped beef
1 cup breadcrumbs
2 tablespoons chopped fresh parsley
2 tablespoons finely chopped onions
2 cloves garlic, chopped
1 teaspoon salt
1 egg
1/4 cup milk
6 cups young stems removed dandelion greens
4 -6 cups of your favorite tomato sauce
1 teaspoon dried basil or 1 teaspoon dried marjoram
salt and pepper
1/2 cup grated parmesan cheese

Steps:

  • Blanch greens for 3 minutes and set aside.
  • Brown meats, onion and garlic, add bread crumbs, parsley, dried herbs, salt, pepper, egg, and milk.
  • Squeeze dandelion greens of all moisture.
  • In a buttered casserole alternate layers of dandelions, pasta, crumbled browned meat mixture and tomato sauce.
  • Top with cheese and bake 350 degrees for 20-30 minutes.
  • Garnish with hot pepper flakes and Parmesan cheese and serve with crisp fresh bread.

As a kid, I spent countless hours picking dandelions and putting them in cups, leaving them on the kitchen counter as a surprise for my mom. Kids LOVE dandelions, after all, they are some of the only "flowers" they are allowed to pick whenever they will. I thought this sounded like a great project for kids, and can't wait to try these cookies at the first sight of these "flowers"! From what I've heard, these are NOT very sweet. 1/2 cup vegetable oil
1/2 cup honey
2 eggs
1 teaspoon vanilla extract
1 cup unbleached flour (whole wheat is fine)
1 cup dry oatmeal
1/2 cup dandelion flowers (just the yellow part...pull off the green part)

Steps:

  • Preheat the oven to 375 degrees F.
  • Mix the oil and honey and then beat in the 2 eggs and vanilla.
  • Remove the yellow flower parts from the green parts (compost the green parts).
  • Stir in the flour, oatmeal, and dandelion flowers.
  • Drop the batter by tablespoonfuls onto an oiled cookie sheet.
  • Bake for 10-15 minutes.
