Creamy Pasta with Bacon and Peas image

One pot and 15 minutes. That's all you need to make my Creamy Pasta with Bacon and Peas! With a short ingredient list to boot, this comforting recipe is a must for days you need a big bowl of love.

1 lb pasta (I used linguini)
1 tbsp olive oil
8 oz bacon (thick-cut)
2-3 shallots (finely diced)
3 cups heavy cream (35% or more)
1 1/2 tsp bouillon powder (I used chicken. Season to taste- this is used instead of salt.)
1 tsp pepper (freshly cracked)
1 cup peas (fresh, frozen, or canned*)

Steps:

  • Cook the pasta al dente according to package instructions. Heat the olive oil in a pan over medium-high heat, and add the bacon. Cook for 3-4 minutes, or until the bacon begins to brown.
  • Add the shallots to the pan and continue to cook for another 2 minutes, or until the bacon is browned to your preference. Drain all but 1-2 tbsp of the fat from the pan.
  • Pour the cream into the pan along with the bouillon, pepper, and peas. Simmer for 2-3 minutes to warm the peas through.
  • Reduce the heat to medium and add the pasta. Toss to coat for 1-2 minutes, then remove the pan from the heat. Keep in mind the sauce will thicken significantly as the pasta cools before serving.

8 oz. pasta* ($0.63)
6 oz. bacon ($2.06)
1 small onion ($0.32)
1 cup frozen peas ($0.50)
1/4 cup grated Parmesan ($0.44)
1/4 tsp salt ($0.02)
1/4 tsp freshly cracked black pepper ($0.02)
1/8 tsp crushed red pepper (optional) ($0.01)

Steps:

  • Bring a pot of water to a boil for the pasta. Once boiling, add the pasta and continue to boil until the pasta is tender (7-10 minutes). Reserve about a half cup of the starchy pasta water before draining the pasta in a colander.
  • While the pasta is boiling, cook the bacon. Add the bacon to a large skillet and cook over medium heat until brown and crispy. Transfer the cooked bacon to a paper towel lined plate with a slotted spoon. Drain most of the bacon grease from the pan, leaving about 2 Tbsp.
  • While the bacon is cooking, finely dice the onion. Add the diced onion to the remaining bacon grease and sauté until tender (about 5 minutes).
  • Add the frozen peas and about ¼ cup of the reserved pasta water to the skillet. Continue to cook and stir until the peas have heated through.
  • Add the drained pasta to the skillet, stir to combine, and remove from the heat.
  • Top the pasta with Parmesan, salt, pepper, crushed red pepper, and crumbled bacon. Stir to combine. Taste and adjust the salt and pepper to your liking.

1 pound orecchiette pasta
12 ounces bacon (diced)
1 cup frozen peas
3 medium shallots (finely chopped)
1 large garlic clove (minced)
½ cup finely grated Parmigiano-Reggiano cheese (or parmesan, plus more to garnish)
¼ cup extra virgin olive oil
¼ cup reserved pasta water
1 teaspoon cracked black pepper
Salt to taste

Steps:

  • Cook bacon in a large dry pot over medium heat until crispy.
  • Remove bacon from the pot with a slotted spoon and set aside in a separate bowl. Drain the liquid fat from your pot, leaving only the drippings (tiny little bacon pieces) in the bottom of the pot. Put pot back on stove and add in olive oil, garlic, and shallots. Turn heat to medium and sauté for 3-4 minutes.
  • Meanwhile, add pasta to boiling water in a separate pot. Cook to al dente according to box instructions.
  • Once shallots and garlic have sautéed, add in frozen peas and sauté over medium heat for about 4-5 minutes until peas are hot and bright green. Add bacon back in and black pepper. Stir and heat for 1 minute.
  • Use a ¼ cup measure to save some pasta water. Drain pasta and add to the pot with your bacon and peas. Stir.
  • Add in ¼ cup pasta water, parmesan, and salt to taste. Stir until combined.
  • Serve hot, in pasta bowls, with a spoon or fork!

Coarse salt and ground pepper
4 slices bacon, sliced crosswise into 1/2-inch pieces
2 shallots, halved and thinly sliced
1 box (10 ounces) frozen peas, thawed
1 cup half-and-half
18 ounces fresh angel-hair pasta

Steps:

  • Set a large pot of salted water to boil. In a large skillet, cook bacon over medium until crisp, 5 to 7 minutes. With a slotted spoon, transfer to a paper-towel-lined plate to drain (leave fat in skillet).
  • Add shallots to skillet; season with salt and pepper. Cook over medium, stirring occasionally, until they begin to soften, 1 to 2 minutes. Add peas and half-and-half; season with salt and pepper. Simmer until slightly thickened, about 2 minutes.
  • Cook pasta in boiling water until al dente, according to package instructions. Reserve 1/2 cup pasta water; drain pasta, and return to pot. Pour sauce over pasta; toss to combine, adding some reserved pasta water a little at a time to coat. Sprinkle with bacon, and serve immediately.

3/4 cup oat milk
1/2 cup cashew butter, at room temperature
1 1/2 teaspoons kosher salt, divided
1 tablespoon olive oil
1 tablespoon chopped garlic
1 1/2 cups frozen peas
8 ounces whole-wheat fettuccine
1/2 cup chopped fresh basil
1/2 teaspoon freshly ground black pepper

Steps:

  • In a bowl, whisk oat milk, cashew butter and 1/2 teaspoon salt until big lumps disappear. In a large nonstick skillet, heat oil over medium heat. Cook garlic, stirring, until golden, 1 minute. Stir in milk mixture; reduce heat to low and simmer, stirring frequently, until thick and fragrant, 2 minutes. Stir in peas; turn off heat. Cook pasta as directed on package with remaining 1 teaspoon salt until just tender. Drain pasta, reserving 1 cup cooking liquid. Heat milk and pea mixture over low heat for 2 minutes. 1 cup part-skim ricotta cheese
1/2 cup parmesan cheese, grated
2 tablespoons butter
1 dash salt, to taste
1 dash black pepper, to taste
4 slices bacon
1 medium onion, chopped fine
2 garlic cloves, minced
1 lb small shell pasta (or choice)
2 cups frozen peas
1 tablespoon lemon juice

Steps:

  • Place ricotta, parmesan, butter, salt and pepper in a large bowl. set aside. Fry bacon in skillet til crisp. Transfer bacon to paper plate to drain, crumbling once cooled. Reserve pan and bacon grease.
  • To the bacon pan, add onion and cook about 3 minutes. Add garlic and cook 1 more minute. Transfer onion mixture to cheese mixture.
  • Meanwhile, cook pasta in boiling water. When it is just 1 minute till done, add peas to water.
  • Reserving 1 cup of pasta/pea water, drain pasta and peas. Add half of the pasta water to the cheese mixture along with the lemon juice and mix till smooth.
  • Add pasta and peas to the cheese mixture and toss to coat, adding more reserved water as necessary to moisten pasta. Stir in bacon bits, adjust seasoning, and serve.

100g lardon or chopped bacon
1 tbsp sunflower oil
4 tbsp extra-dry vermouth
200g fresh tagliatelle
210g pack fresh, podded peas
1 tsp chicken stock concentrate, (we used Knorr Touch of Taste)
4 tbsp crème fraîche
1 tbsp chopped tarragon
1 Little Gem lettuce , cut into wedges
4 spring onions , sliced at an angle into long shreds

Steps:

  • Fry the lardons or bacon in the oil in a large, deep frying pan for 1 min. Pour in the Vermouth and allow to bubble up. Meanwhile, put a large pan of salted water on to boil, add the fresh tagliatelle, then cook according to pack instructions.
  • Tip the peas in with the bacon, then pour in 100ml water, the stock and crème fraîche. Stir well, then add the tarragon, lettuce and spring onions. Cover the pan and cook for 3-5 mins until the lettuce is tender, but not wilted. Drain the pasta when ready, then add to the pan and toss together until well mixed.

It's wholesome (no powdered cheese!), and it can be ready in about 15 minutes.

10 slices smoked bacon or pancetta
1 pound dried mini-shell or other small pasta
2 tablespoons olive oil
1 tablespoon butter
Freshly ground black pepper
2 cups frozen peas
2 tablespoons crème fraîche or heavy cream
2 tablespoons finely chopped fresh mint leaves
Juice of 1 lemon
6 ounces finely grated Parmesan cheese

Steps:

  • Bring a large pot of lightly salted to a boil. Meanwhile, cut sliced bacon crosswise into thin slivers, or slice pancetta into julienne. Add pasta to boiling water and cook to taste.
  • While pasta is cooking, place a large skillet over medium heat, and add 2 tablespoons olive oil and the butter. Add bacon or pancetta and a sprinkling of pepper, and fry until golden and crisp.   • Reserve 1 cup of the pasta cooking water, and drain the pasta. Add pasta to the skillet and stir. Add lemon juice, and adjust salt and pepper to taste. Bring to a simmer, then remove from heat. The mixture should be thick; if desired, a splash of the pasta water may be added to the sauce to thin it slightly. Add Parmesan and stir to mix. If desired, serve with a green salad.
