Braised kale is a simple way to tenderize and deepen the flavor. The greens first saute to maximize the aromatics in the dish then get covered and simmer.

Number Of Ingredients 10

2 pounds kale (about 4 large leaves (7 to 8 cups chopped))
¼ cup extra-virgin olive oil (divided)
½ cup diced red onion (¼-inch dice)
2 tablespoons minced garlic
⅛ teaspoon red pepper flakes
2 cups vegetable stock
1 tablespoon soy sauce
¼ teaspoon black pepper
1 teaspoon rice vinegar
Kosher salt (as needed for seasoning)

Steps:

  • Remove the stems and chop leaves into 3-inch pieces.
  • Thoroughly wash the kale and drain, it does not need to be completely dry.
  • Heat a large dutch oven over medium heat.
  • Add two tablespoon olive oil, once hot add the onion and saute until softened and lightly browned, 3 to 4 minutes.
  • Add garlic and chili flakes, cook until fragrant, 1 minute.
  • Heat 2 tablespoons of olive oil, then add half of the kale and cook until just beginning to wilt, 1 minute.
  • Add the rest of the kale and cook until wilted, 1 minute.
  • Add vegetable stock, and soy sauce, stir to combine.
  • Cover the pot and reduce heat to medium-low.
  • Cook, stirring occasionally every 5 to 10 minutes, until greens are tender, 25 to 35 minutes.
  • Remove the lid and then increase the heat to medium-high.
  • Cook and occasionally stir until most of the liquid has evaporated and greens start to sizzle, about 8 to 10 minutes.
  • Turn off the heat and stir in rice vinegar and black pepper.
  • Taste and add more salt and pepper as desired.

1 1/2 pounds young kale, stems and leaves coarsely chopped
3 tablespoons olive oil
2 cloves garlic, finely sliced
1/2 cup vegetable stock or water
Salt and pepper
2 tablespoons red wine vinegar

Steps:

  • Heat olive oil in a large saucepan over medium-high heat. Add the garlic and cook until soft, but not colored. Raise heat to high, add the stock and kale and toss to combine. Cover and cook for 5 minutes. Remove cover and continue to cook, stirring until all the liquid has evaporated. Season with salt and pepper to taste and add vinegar.

BRAISED KALE WITH GARLIC AND RED WINE

2 medium or 1 large head kale, stem end removed
1/4 cup pure olive oil
6 cloves garlic, peeled and finely chopped
Salt and freshly ground black pepper to taste
2/3 cup chicken stock
2/3 cup dry red wine

Steps:

  • Roughly chop the kale leaves into 1-inch pieces, then wash and drain throughly. In a large skillet, heat the olive oil 2 minutes. Add the garlic and lightly brown, then immediately add the kale. Turn the kale leaves to coat evenly with the olive oil and to prevent the garlic from burning on the bottom of the pan. Season with salt and pepper.
  • Continue to saute the kale leaves 3 to 4 minutes. Reduce the heat to medium and add the chicken stock. Cover the pan and cook the kale in the stock 5 minutes more. Remove the cover, add the red wine, and continue to braise the kale in the red wine and stock until nearly all of the liquid has evaporated. The entire cooking process will take 12 to 15 minutes, at which time the kale should be tender and the liquid cooked off.

1 tablespoon olive oil
2 cups thinly sliced onions
1 teaspoon salt
12 turns freshly ground black pepper
1/2 teaspoon red pepper flakes
2 tablespoons minced garlic
8 cups (firmly packed) torn and stemmed kale pieces
2 cups Basic Chicken Stock, recipe follows
Splash cider vinegar
1 tablespoon olive oil
1 large onion, peeled and quartered
1 carrot, peeled and chopped
2 celery stalks, chopped
1 head garlic, cut in 1/2
1 bouquet garni
2 pounds raw chicken bones, rinsed in cold water
4 quarts cold water
Salt and pepper

Steps:

  • Heat the oil in a large skillet over high heat. Add the onions, salt, pepper, and red pepper flakes and stir-fry for 2 minutes. Add the garlic, kale, and stock and cook, stirring occasionally, for 8 to 10 minutes; add a splash of cider vinegar in the last minute of cooking. Remove from the heat. Serve immediately.
  • In a large stock pot, over high heat, add the oil. When the oil is hot, add the onions, carrots, and celery. Saute for 2 to 3 minutes. Add the remaining ingredients and bring to a boil. Reduce the heat to low and simmer for about 2 hours. Remove the stock from the heat and skim off any scum that is on the surface. Strain the stock through a large fine-mesh sieve. Discard the bones and vegetables.

KALE PASTA WITH CHILLI & ANCHOVY

250g penne or other tubular pasta
4 tbsp olive oil
1 red chilli , finely sliced (seeds in or out - it's up to you
2 garlic cloves , finely chopped
4 anchovies , finely chopped
200g young kale , shredded
juice 1⁄2 lemon
50g parmesan , half finely grated, half shaved

Steps:

  • Boil the pasta. While it's cooking, heat half the oil in a saucepan, then sizzle the chilli, garlic and anchovies. Add the kale, then gently fry until tender, adding a drop of water if needed.
  • Drain the pasta, reserving a few tbsp water, then toss the pasta and water through the kale, adding the rest of the olive oil, lemon juice and grated Parmesan. Serve scattered with the Parmesan shavings.

This recipe is from a great cookbook "How to cook everything" by Mark Bittman. I like to cook the broccoli for about 2 minutes less time so it is still very crisp and I serve it at room temperature. The recipe called of only 1 tsp of minced garlic but I love that garlic. Don't be afraid of the anchovies just think how good they are in a Caesar salad!!

3 tablespoons olive oil (I use lite)
3 anchovies, minced
2 teaspoons garlic, minced (or less)
1 1/2 lbs broccoli, stems separated and cut into 1 inch pieces
1 cup dry white wine
salt & pepper

Steps:

  • Put oil into a skillet that has a lid, turn heat to medium and saute the garlic& anchovies, stir occasionally 3-5 minutes or until the anchovies begin to break up and the garlic begins to color Add broccoli, stirring for 3-4 minutes, add wine and let it simmer for about a minute Cover, turn heat to medium low and cook for 2-3 minutes.
  • Uncover turn heat to medium and continue cooking until the wine has evaporated apprx 5 minutes Season.
  • Serve hot or at room temperature.

But it really shines brightly as a supporting player in a feast of poultry, pork or beef. Do two onions seem too many for you? Use one. This is a recipe really to make your own.

1/4 cup extra-virgin olive oil
2 Spanish onions, peeled and diced
8 cloves garlic, peeled and thinly sliced
1/4 cup tomato paste
1 teaspoon hot smoked paprika (pimentón)
Kosher salt and freshly ground black pepper, to taste
3 cups turkey or chicken stock, ideally homemade or low-sodium
1 tablespoon red wine vinegar, plus more to taste
4 (3/4-pound) bunches washed kale (any kind), thick stems discarded or cut into thin strips, leaves cut into thick strips (about 16 packed cups total)

Steps:

  • Place a large, heavy-bottomed, high-sided pot or Dutch oven over medium-high heat and add olive oil. When it shimmers, add onions and garlic and cook until they soften and begin to turn translucent, about 5 to 7 minutes.
  • Add tomato paste and smoked paprika, reduce heat to medium, and cook, stirring frequently, until the paste begins to caramelize, about 5 to 7 minutes. Season with salt and pepper, then add stock and vinegar, and allow to come to a boil.
  • Add half the kale, cover, and cook for a minute or two, until it wilts. Repeat with remaining kale. Stir to incorporate the onion mixture into the soft kale and simmer until tender, 20 to 30 minutes, partly covered. Season to taste with salt and pepper, drizzle with a little more vinegar, and serve.

1/2 lb cavatappi pasta (substitutes -- fusilli, farfall, cavatelli, orecchiette, or elbow macaroni)
3 tablespoons olive oil, more for drizzling
1/4-1/2 teaspoon crushed red chile flakes, to taste
4 large garlic cloves, smashed and peeled
2 tablespoons capers (drained and patted dry with a paper towel to encourage browning)
4 anchovy fillets
1 small bunch kale, chopped (or use 3 large handfuls chopped kale, or any green you prefer)
black pepper, to taste
lemon juice, to taste (optional)
grated pecorino romano cheese (optional) or parmesan cheese, for serving (optional)

Steps:

  • Bring a heavily salted pot of water to a boil. Cook pasta until al dente. Drain.
  • Meanwhile, heat oil in the largest skillet you have. Add chiles and a pinch of salt and toast until golden, 1 to 2 minutes.
  • Add smashed garlic, capers and anchovies. Let cook until everything is golden, the capers look crisp around the edges and the anchovies have dissolved into the oil, about 3 to 4 minutes. (You can help anchovies dissolve by mashing them with a wooden spoon as they cook.) Add kale and 2 tablespoons water and sauté until kale wilts and cooks in the pan and is well coated with oil, about 5 minutes. You might have to add more water if the water evaporates before the kale finishes cooking.
  • Add drained pasta and toss well. Add more salt if necessary and plenty of black pepper, and serve drizzled with more oil and a squeeze of lemon if the dish needs a lift. Cheese isn't necessary but if you like Pecorino-Romano or Parmesan cheese, and have some on hand, feel free to shower it on top.
