Steps:
- In a large dry skillet over medium heat, lightly toast the caraway seeds until fragrant, 1 to 2 minutes. Scrape out and reserve seeds.
- Add 1 tablespoon oil to the skillet and heat over medium-high heat. Working in two to three batches, sear bok choy on all sides until lightly browned, 2 to 3 minutes per cut side. Add 1/4 teaspoon salt, 1/8 teaspoon pepper to each batch, and 1 teaspoon oil to sear each subsequent batch of bok choy.
- Add 1 teaspoon oil to the skillet and sauté apples with 1/4 teaspoon salt and 1/8 teaspoon pepper until softened but still holding their shape, 5 to 7 minutes. Reserve apples.
- Add remaining tablespoon oil to skillet and sear sausages on all sides until golden brown, 3 to 5 minutes per side. Add toasted caraway seeds, sauerkraut, and broth. Bring to a simmer, reduce heat to medium, cover the skillet, and simmer until sausages are cooked through (150°F for pork sausages, 160°F for poultry sausages), about 10 minutes. Remove cover and fold in reserved bok choy, apples, vinegar, and butter. Cook, tossing, until some of the liquid has evaporated and the bok choy and apples are warm, 3 to 5 minutes. Taste and adjust seasoning. Serve with mustard for dipping.

APPLE BOK CHOY SALAD
This delicious salad is from drfuhrman.com. I have simplified the instructions so it is a little easier to make. To chop bok choy: Trim the rough edge off the root ends of the bok choy, then cut across the stem just below the leaf. Slice the white stem portion into 3 or 4 lengthwise strips, then cut across to dice. Slice the leafy top crosswise and then cut each strip into 1 inch pieces.

YUMMY BOK CHOY SALAD
This is hands down the best salad that I've ever had. It is definitely a family favourite, and I urge you to just give this one a try. You would think that raw baby bok choy would give this salad a bitter taste, but the dressing makes all the difference.

- Roasted Bok Choy. For those who prefer to skip the stove, it’s also possible to roast bok choy greens in the oven. First, separate the cabbage leaves from the center stalk and chop them into even pieces.
- Serve Bok Choy Like Celery. Remember eating ants on a log as a child? You can enjoy that same treat today by substituting bok choy for the celery. Fill the white stem with your favorite topping (peanut butter, salsa, guacamole, and cream cheese are all great options) and enjoy this low carb treat as a midday pick-me-up.

- Remove the green leaves from your bok choy (we only want the thick, crunchy stalks), but save them for later! Then cut the stalks into 2-inch pieces. Then dry off the bok choy using a kitchen towel.
- Now spread the bok choy on a cutting board or plate and sprinkle it with salt on both sides. Let it rest for around 25 minutes. During this time, the salt will draw out water from the bok choy.
- In the meantime, you can start blending up ingredients for your kimchi paste. Grate the carrot and apple finely. Place them in a mortar together with the garlic cloves and the ginger and crush everything up. Then add your red chili flakes, sugar, and soy sauce into the mixture.

- Slice the bok choy thinly. If using the kind with the larger leaves, cut them into shorter ribbons. Place the slices in a colander and give them a good rinse. Bok choy sometimes harbors hidden (or not so hidden) sand. Dry thoroughly in a salad spinner or blot with paper towel.
- Combine the bok choy with the remaining ingredients and stir together. This salad benefits from having a chance to stand for an hour or so to allow the flavors to marry. However, you can serve at once if you need to.

- First, prepare Bok Choy by making a cut about 2 inches from bottom. This will separate it into individual stalks. Make a horizontal cut along each stem to separate greens. (Be sure to wash thoroughly as dirt may be trapped inside). Cut each stem into "half-moons" approximately 1 inch thick. Place aside.
- Loosely chop greens (I find it easiest to stack 2-3 leaves together, roll them, make a horizontal cut, then chop the stack vertically.).
