- Cook bacon until crisp; drain. Meanwhile, in a large bowl, combine the next 6 ingredients. Stir in bacon. Serve with crackers.

Steps:
- Place bacon, onion, and garlic in a medium skillet over medium-high heat. Cook until bacon is crispy and onion is cooked through. Remove from heat and set aside to cool.
- In a medium mixing bowl mix together cream cheese, blue cheese, bacon, onion, and garlic until well combined (or place in a food processor and process several times until just combined). Add salt and pepper to taste.
- Refrigerate until ready to serve.
LINDY'S BACON AND ONION CHEESE SPREAD
This is a wonderful bacon and onion cheese spread (not dip) that is great for parties and year-round use. For Christmas, I shape this into a tree shape, on a flat tray. I sprinkle the trunk of the tree with crisp bacon and the tree itself with finely chopped green onion tops or chives. I have also shaped it into a cross for my children's confirmation parties, a Christmas stocking, and even a heart for a special Valentine's Day party. If you substitute creamy salad dressing for the mayonnaise it will not be the same. My mom tried that and it didn't turn out well. This is best made the day before and chilled. My family and friends all love this; it's one of those dishes that I have to make for every holiday and get-together.

- Cook the bacon in a large, deep skillet over medium-high heat, until evenly browned and crispy, about 10 minutes; drain on a paper towel-lined plate. Crumble once cool to the touch.
- Beat the cream cheese and mayonnaise together in a bowl until light and fluffy. Add the Parmesan cheese, most of the crumbled bacon, and most of the green onion into the cream cheese mixture, reserving just enough bacon and green onion for garnish; stir until all ingredients are evenly incorporated. Chill in refrigerator until slightly firm, 1 to 2 hours; shape the mixture into a ball and roll in the reserved bacon and green onions. Return to refrigerator until set, 8 hours or overnight.

- Heat oil in medium saucepan over medium-low heat until hot. Cook onion about 20 minutes or until deep golden brown, stirring occasionally. Cool.
- Whisk mayonnaise and sour cream in medium bowl.
- Add blue cheese. With spatula, mash until smooth.
- Stir in onions, salt and pepper.
- Cover and refrigerate at least 2 hours to blend flavors. Serve chilled or at room temperature.

- In a large skillet, fry the bacon over moderate heat till almost crisp, drain on paper towels, and crumble coarsely.
- Pour off all but about 2 tablespoons of fat from the skillet, add the onion, and stir 3 minutes. Add the flour and stir 3 minutes longer. Whisking, add the milk and beer, then add the Worcestershire and cayenne. Bring the mixture to a low boil, whisking, cook for 2 minutes, and remove from the heat. Add the bacon and blue cheese and stir till the cheese is melted.
- Transfer the dip to a small bowl and serve with bread sticks.

- Bring water and butter to a boil over med.
- heat.
- Stir in flour, salt and peppers with a wooden spoon until mixture leaves the sides of pan and forms a soft ball.
- Remove from heat.

- Dip by teaspoonful onto a lightly greased cookie sheet.

- Preheat oven to 350 degrees.
- Bake walnuts in single layer in an shallow pan for 6-8 minutes or until toasted and fragrant., stirring after 3 minutes.
- Cook bacon in skillet over medium high heat, stirring often, 10 minutes or until crisp. Remove bacon, and drain on paper towels, reserving 1 tbsp drippings in skillet. Add minced garlic to hot drippings and saute for 1 minute.
