TURKISH SOLDIER BUTTONS COOKIES

Steps:

• Preheat oven to 350 degrees Fahrenheit.
• Lightly grease a cookie sheet.
• Mix together flour, powdered sugar, butter, egg, and vanilla.
• Shape dough in to 1-1/2 inch rounds; place on cookie sheet.
• Press down the center with your thumb.
• Fill each hole with jam.
• Bake 12 minutes or until the bottoms are lightly browned.

JAM BUTTONS

Steps:

• Preheat oven to 325 degrees F.
• With an electric mixer, beat butter, sugar, salt, orange zest and vanilla until well combined. Do not overmix. Beat in yolk. Sift the flour and add into the mixture until just combined. Scrape the bowl and mix again. Turn dough onto work surface and knead together until smooth.
• On a lightly floured surface, press the dough into a 1/2-inch thick patty. Dip a 1-inch round cutter into flour and cut out circles. Place cookies on an ungreased baking sheet at least 1 inch apart. Gather up scraps, form another patty and repeat until all the dough is used up.
• Using your thumb or the end of a large wooden spoon, make an impression in the center of each cookie without going through. Fill each impression with about 1/4 teaspoons jam.
• Bake for 22 minutes or just until the jam bubbles. Let the cookies cool on a baking sheet for 20 minutes, then cool completely on wire rack.

SOLDIER BUTTONS

Steps:

• Mix together flour, confectioners' sugar, butter or margarine, egg, and vanilla.
• Shape dough with your hands to 1 1/2 inch rounds, and place on greased cookie sheets. Press your finger in the middle, and fill each hole with jam.
• Bake at 350 degrees F (175 degrees C) for 12 minutes, or until the bottoms are lightly browned.

SOFT BLUEBERRY BUTTON COOKIES

Steps:

• Preheat oven to 350°. In a large bowl, cream butter, sugars and lemon zest until light and fluffy. Beat in egg. Beat in yogurt, juice and extract until blended. In another bowl, whisk flour, cinnamon, baking powder, salt and baking soda; gradually beat into creamed mixture., Drop dough by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Press four blueberries into each cookie to resemble a button., Bake until edges begin to brown, 13-15 minutes. Remove from pans to wire racks to cool slightly., In a small bowl, mix glaze ingredients until smooth. Spoon over warm cookies. Let stand until set. Store in airtight containers.
