2 whole-wheat pitas (8 inches each), both cut into 8 triangles
2 tablespoons extra-virgin olive oil
12 ounces medium shrimp, shelled and deveined
1/2 cup sliced shallots
4 cups cubed (1 inch) seedless watermelon
1/4 teaspoon salt (preferably kosher)
1/4 teaspoon freshly ground black pepper
1 large cucumber, peeled and chopped
2 ounces crumbled feta
2 tablespoons chopped fresh dill
2 tablespoons chopped fresh mint
2 limes, cut into wedges

Steps:

  • Heat oven to 450°F. On a baking sheet, toast pita triangles, turning once, until crisp and brown, 3 to 5 minutes each side. In a large skillet, heat oil over high heat. Cook shrimp and shallots, stirring, until shrimp is pink and shallots are crisp, 2 to 4 minutes; transfer to a bowl. In same skillet, cook watermelon and 1/4 cup water over high heat, stirring, until liquid becomes syrupy, about 3 minutes. Remove skillet from heat; add shrimp mixture, salt and pepper; stir. Divide shrimp-watermelon mixture (warm or chilled) among 4 plates; add cucumber and feta. Sprinkle with dill and mint. Serve with 4 pita pieces each and lime wedges.

2 tablespoons olive oil
1 small onion, thinly sliced
1 clove garlic, thinly sliced
1 teaspoon Italian seasoning
Kosher salt and freshly ground black pepper
One 14-ounce can diced tomatoes
8 ounces large shrimp, peeled and deveined, tails removed
One 14-ounce can cannellini beans, drained and rinsed
2 packed cups baby spinach (about 2 1/2 ounces)
1/4 cup crumbled feta cheese

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions and cook, stirring occasionally, until softened and just starting to turn brown in some spots, 4 to 5 minutes. Stir in the garlic, Italian seasoning, 1/2 teaspoon salt and a few grinds of black pepper, and stir until the garlic is softened, about 1 minute.
  • Pour in the tomatoes and bring to a boil. Reduce the heat to medium and simmer, stirring occasionally, until the tomatoes are slightly thickened, 2 to 3 minutes. Add the shrimp and beans and cook, stirring occasionally, until the shrimp just start to turn orange, 2 to 3 minutes. Stir in the spinach and continue cooking, stirring occasionally, until the spinach is just wilted and bright green and the shrimp are cooked through and opaque, 2 to 3 minutes. Remove the skillet from the heat and sprinkle the feta over top. Cover until the cheese is warmed through, 2 to 3 minutes. Serve immediately.

2 medium onions, chopped
1 medium green pepper, chopped

1 tablespoon all-purpose flour
3 cups half-and-half cream
1-1/2 pounds uncooked medium shrimp, peeled and deveined
1 jalapeno pepper, seeded and chopped
2 tablespoons minced fresh parsley
8 ounces process cheese (Velveeta), cubed

Steps:

  • Cook noodles according to package directions; drain and set aside. , In a large saucepan or Dutch oven, saute the onions, green pepper, celery and garlic in butter until tender. Stir in flour until blended. Gradually stir in cream, Bring to a boil; cook and stir for 2 minutes or until thickened., Reduce heat; add the shrimp, jalapeno pepper and parsley. Simmer, uncovered, for 3 minutes. Stir in cheese; cook 3 minutes longer or until cheese is melted. Stir in noodles; heat through.

1 small navel orange, peeled and sectioned
1 small red onion, chopped

1 lb shrimp, peeled and deveined
1 ½ teaspoons kosher salt, divided
½ teaspoon freshly ground black pepper
1 tablespoon olive oil
1 large shallot, minced
3 cloves garlic, minced
½ teaspoon red pepper flakes
1 ½ cups white rice, rinsed
½ cup white wine
1 ¾ cups water
2 tablespoons unsalted butter
lemon, juiced
½ cup fresh parsley, finely chopped

Steps:

  • On a cutting board, blot the shrimp dry with paper towels. Season the shrimp all over with ½ teaspoon of salt and the black pepper. Set aside.
  • Add the olive oil to a medium pot over medium-high heat. Once the oil begins to shimmer, add the shallot and cook, stirring often, until starting to soften, 1 minute. Add the garlic and red pepper flakes and cook, stirring constantly, until aromatic, about 30 seconds.
  • Add the rice and stir to combine. Add the wine wine and cook, stirring often, until the smell of alcohol has burned off, about 1 minute.
  • Add the water and the remaining teaspoon of salt and bring to a boil. Place the lid on the pot, reduce heat to low, and simmer for 15 minutes.
  • Remove the lid from the pot and stir in the shrimp. Place the lid on the pot and continue cooking until the rice is cooked through and the shrimp are bright pink and opaque, about 3-4 minutes.
  • Add the butter, lemon juice, and parsley, and stir to combine.
  • Enjoy!

The oil is hot enough it sizzles when water is sprinkled in or when food is added (to prevent splattering, tip pan away from you to allow oil to pool, and add food to side of pan close to you).   • Marinate shrimp: Toss shrimp with kosher salt and 2 tbsp of the vinaigrette in a bowl and marinate, covered and chilled for 20 minutes.
  • Broil watermelon: Preheat broiler. Stir together paprika, salt, sugar in a small bowl. Rub both sides of watermelon with oil and sprinkle with paprika mixture. Broil watermelon in a shallow baking pan 3 inches from heat, turning once, until lightly browned, 8 to 10 minutes in total.
  • Cook shrimp: Pat shrimp dry. Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then cook shrimp, turning once, until just cooked through, 4 to 5 minutes total.
  • Assemble dish: Divide watermelon slices among 4 plates and top with shrimp and arugula. Drizzle each serving with 2 tablespoons of the vinagrette and sprinkle with pumpkin seeds.
