TRICOLORE SALAD WITH ORANGES

Steps:
- Place the shallots in a small shallow bowl and pour the vinegar over them. Set aside for 10 minutes to macerate.
- In a large shallow serving bowl, combine the radicchio, endive, arugula, oranges, and olives. Lift the shallots from the vinegar with a slotted spoon, sprinkle them on the salad, and toss lightly (discard the vinegar).
- In a 1-cup glass measuring cup, whisk together the lemon juice, mustard, 1 teaspoon salt, and 1/2 teaspoon pepper. While whisking, slowly add the olive oil. Pour enough of the vinaigrette over the salad to moisten well. Sprinkle with one more teaspoon salt, toss well, and taste for seasonings. Serve at room temperature.

- In a shallow bowl, beat egg and milk. In another shallow bowl, combine the bread crumbs and Parmesan cheese. Dip fillets in egg mixture, then coat with crumb mixture. Place in a greased 13-in. x 9-in. baking dish. Bake, uncovered, at 425° for 15-20 minutes or until fish flakes easily with a fork.

ORANGE ROUGHY WITH SAUTEED OLIVES, CAPERS & TOMATOES
This recipe is adapted from a recipe I found in an old Bon Appétit magazine by Chef Candida Sportiello. The modifications I made to this recipe were a reduction of the red pepper flakes eliminating some of the heat, and adding capers and white wine at the end of the saute period! It is such a fabulous and tasty dish I didn't feel it needed much in the way of change at all.. She is quite the chef and restaurateur!

- Heat olive oil in heavy large skillet over medium-high heat. Sprinkle fish with salt and pepper. Add half of fish to skillet and sauté until just opaque in center, about 3 minutes per side. Transfer fish to platter. Repeat with remaining fish. Add parsley and crushed red pepper to same skillet; sauté 1 minute. Add tomatoes, olives, capers and garlic; sauté until tomatoes are soft and juicy, about 2 minutes. Spash a few tablespoons of wine and season with salt and pepper as needed; spoon over fish.

- Cut fish into serving-size pieces.
- Beat egg in small shallow bowl.

ORANGE ROUGHY IN GARLIC BUTTER
I made this up one night when I had some fresh fish, and not too much in the fridge that I could add to it. I served it with garlic & parmesan couscous, peas, and a salad.

Steps:
- Preheat oven to 450.
- Rinse filets in water, pat dry with paper towels.
- Set aside.
- Melt butter in a small saucepan.
- Add garlic, and white wine, stirring until all is mixed together.
- Spray a small square glass baking dish with cooking spray.
- Sprinkle both sides of fish with salt and pepper, and lay fish filets in the dish.
- Lay onion rings on top of fish, and pour garlic butter mixture over everything.
- Bake at 450 for 12-15 minutes, until fish flakes when you pick at it with a fork.
- This is super easy, low in calories, and also tastes great.
DELICIOUS - BAKED / BROILED PARMESAN FISH

- 1. Preheat oven to 350 degree F. In a buttered 9x13 inch baking dish, lay fillets in a single layer. Do not stack fillets. In a bowl, combine cheese, butter, mayonnaise, onions and seasonings. Mix well with fork. Bake fish in oven for 10-15 minutes or until fish just starts to flake. Baking time will depend on the thickness of the fish you use. Spread with cheese mixture and bake until golden brown, about 5 minutes. Watch fish closely so that it does not overcook. NOTE: This fish can also be made in a broiler. Broil 2-3 minutes on each side. Then top with cheese mixture and broil another 2-3 minutes. This is how I prefer making this fish - The Parmesan spread will pouf up as broiling...so darn good...
