Slow Cooker Creamy Tomato Basil Tortellini Soup image

This might just be the best tomato soup you've ever had! It's so easy to make, perfectly flavorful and satisfyingly hearty. And talk about comforting soup after a long day. The cheesy tortellini and cream in this soup just make it truly irresistible!

1 3/4 cup diced carrots ((3 medium))
1 3/4 cup diced yellow onion ((1 large))
2 Tbsp olive oil
5 cloves garlic (, minced)
3 (28 oz) cans whole Roma tomatoes
1 (32 oz) carton vegetable broth
1/3 cup chopped fresh basil (, plus more for garnish)
2 bay leaves
1 Tbsp granulated sugar
Salt and freshly ground black pepper (, to taste)
16 oz refrigerated three cheese tortellini
3/4 cup heavy cream
Parmesan (, shredded, for serving)

Steps:

  • Heat olive oil in a large skillet over medium-high heat. Add carrots and onion and saute 3 - 4 minutes, add garlic and saute 1 minute longer.
  • Pour mixture into a 6 or 7 quart slow cooker along with tomatoes, vegetable broth, basil, bay leaves, sugar. Stir and season with salt and pepper to taste. Cover slow cooker and cook on LOW 6 - 7 hours or HIGH 3 - 3 1/2 hours.
  • Remove bay leaves then puree mixture well in small batches in a blender (only fill blender 2/3 full and cover removable insert with a kitchen towel) or us an emulsion blender*.
  • Stir in tortellini, cover and cook on HIGH heat 15 - 20 minutes longer (or until heated through).
  • Reduce heat to warm, stir in heavy cream. Serve topped with parmesan cheese and fresh basil.

1 medium onion, chopped
3 medium carrots, chopped

  • In a large skillet, heat oil over medium-high heat. Add onion and carrots; cook and stir until crisp-tender, 5-6 minutes. Add garlic; cook 1 minute longer. Transfer to a 6- or 7-qt. slow cooker. 1 cup fresh chopped spinach ((uncooked) optional)
Fresh Basil for garnish
28 oz diced tomatoes (canned with juice)
2 cups Progresso™ Chicken Broth
2-3 teaspoons sugar (or to taste)
¼ teaspoon garlic powder
½ teaspoon onion powder
1 cup heavy cream
2 cans Progresso™ Vegetable Classics Tomato Basil Soup

Steps:

  • Combine all soup ingredients in a saucepan except cream. Bring to a boil, reduce heat and simmer 8 minutes.
  • Meanwhile, cook tortellini according to package directions. Add chopped spinach to the boiling water 30 seconds before the tortellini is finished. Drain well.
  • Blend soup mixture with a hand blender. Add in heavy cream and simmer an additional 5 minutes.
  • Stir in tortellini and spinach if using.

1 small onion (chopped)
2 (15 ounce) cans diced fire-roasted tomatoes
2 (10 3/4 ounce) cans campbell's tomato soup

10 fresh basil leaves, chopped or 1 tablespoon dried basil
1 (14 1/2 ounce) can chicken broth
3 tablespoons Italian-style tomato paste

Steps:

  • Coat soup pan with olive oil. Add onion and garlic and saute till soft.

1 medium yellow onion, finely diced
4 garlic cloves, minced
2 tablespoon tomato paste
28 ounce can whole San Marzano tomatoes
4 cups reduced sodium chicken broth
1 teaspoon granulated sugar
3 cups cooked shredded chicken
1 wedge fresh parmesan cheese
9 ounce package refrigerated cheese tortellini
½ cup fresh basil, sliced into ribbons, plus more for garnish
1 teaspoon fresh or dried oregano
½ cup heavy cream
1 teaspoon kosher salt
½ teaspoon freshly cracked black pepper

Steps:

  • Heat a dutch oven or large soup pot over medium heat, add olive oil, yellow onion, and a pinch of salt.
  • Cook until onions are translucent, about 4 minutes. If onions begin to brown, add a splash of chicken broth to cool the pot.
  • Add in tomato paste and garlic, cook for 1 minute.
  • Slice the rind off the end of the parmesan cheese wedge, save the rest for serving.
  • Add the tomatoes to the pot and mash with a potato masher or spoon.
  • Add broth, sugar, chicken, and parmesan cheese rind to the pot, reduce to low and simmer for about 15 minutes.
  • Add refrigerated tortellini, oregano and basil, and simmer until tortellini have puffed up and just cooked through, about 5 minutes.
  • Turn off heat. Stir in heavy cream, taste for seasoning and add salt and pepper.

1 medium sweet onion, chopped
1 (14 1/2 ounce) can ground peeled tomatoes
5 cups vegetable stock or 5 cups chicken stock

2 cloves garlic (crushed)

Steps:

  • Heat the olive oil in a large soup pot over medium high heat.

This is a great soup that you can throw together on a night when you don't really feel like cooking. You can leave out the tomatoes if you want and you can also substitute the fresh basil for a little bit of dried basil to taste. I imagine you could add some cooked chicken too if you wanted. 1 cup heavy whipping cream

9 -10 ounces cheese tortellini

Steps:

  • Sauté minced garlic in vegetable oil until slightly browned and fragrant.
