SUNNY'S HONEY BBQ OVEN SHORT RIBS

1/4 cup sweet paprika
1 tablespoon onion powder
Kosher salt and freshly ground black pepper
2 teaspoons dry oregano
2 teaspoons garlic powder
1/2 teaspoon cumin
1/4 teaspoon cayenne pepper
6 pounds short-ribs, flanken-cut (about 6 ribs bone-in, cut into 5 to 6-inch strips)
1/2 cup honey

Steps:

  • Heat the oven to 300 degrees F.
  • In a small bowl, combine the paprika, onion powder, 4 teaspoons salt, oregano, garlic powder, cumin, cayenne pepper and a few grinds of black pepper. Rub the mixture all over the ribs and allow it to sit at room temperature for 1 to 2 hours at the most.
  • Place the ribs snugly in an oven dish with the fat side of each rib facing up. Cover tightly with aluminum foil and don't be afraid to top the dish with another heavy dish to ensure the seal! Cook in the oven for 2 1/2 hours, at this point the meat should be falling off the bones. Remove the ribs from the oven and raise the temperature to 425 degrees F.
  • Using a pair of tongs, flip and move the beef around a bit. Drizzle the honey evenly over the top of each rib. Place the ribs back in the oven, this time leaving it uncovered and cook another 10 to 15 minutes.

1/2 teaspoon pepper
1 cup ketchup
1/2 cup packed brown sugar

Steps:

  • Place ribs in a large kettle or Dutch oven; sprinkle with garlic salt and pepper. Add enough water to cover; bring to a boil. 4 pounds pork spareribs or pork loin back ribs
1 cup honey
1 cup packed brown sugar
1/3 cup soy sauce
1/2 teaspoon garlic powder
1/2 teaspoon ground ginger
1 teaspoon ground mustard

Steps:

  • Cut ribs into serving-size pieces; place in a large resealable plastic bag. Combine remaining ingredients; pour half the marinade over the ribs. Seal bag and turn to coat; refrigerate for several hours or overnight, turning bag occasionally. Cover and refrigerate remaining marinade. , Drain and discard marinade from ribs. Place ribs on a rack in a greased shallow baking pan. Cover and bake at 350° for 1 hour. Drain. Pour reserved marinade over ribs. 1 cup soy sauce
1 cup sake, optional
1 teaspoon ground dried chile flakes
4 tablespoons honey
2 tablespoons minced fresh ginger
2 tablespoons minced fresh garlic
6 tablespoons sesame oil
2 sides (about 3 pounds) baby pork ribs

Steps:

  • In a bowl, mix together all of the ingredients for the marinade. Place the ribs in a container just large enough to hold them 1 side on top of the other. Pour the marinade over the ribs, cover with plastic wrap or aluminum foil and let marinate in the refrigerator overnight.
  • Preheat the oven to 300 degrees F.
  • Place half of the marinade in a baking pan with the ribs and bake, turning the ribs frequently, for 2 hours, or until the meat is tender. Reserve the remaining marinade.
  • Under a preheated broiler or on a wood-fired grill, glaze the ribs for 3 to 4 minutes on each side. Watch carefully so they don't burn. Remove the ribs and cut each side into individual pieces. Bring the reserved marinade to a boil.
  • Arrange the ribs in an overlapping fashion on each plate or on a large serving platter. Spoon the warm marinade over them.

I had seen a variation of this recipe on the Food Network's Alton Brown show "Good Eats" but didn't like the taste when finished; so I worked on it for about a month to get what the entire family enjoys. This can be left marinading for days in the fridge as well. You can also use short ribs, or the country style as well.

1 baby back rib rack
1 cup brown sugar (can be dark or light or even mixed)
2 tablespoons kosher salt
2 teaspoons black pepper
1 teaspoon thyme
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon paprika
1 tablespoon cayenne pepper
1 1/2 cups honey
2 tablespoons Worcestershire sauce
1 tablespoon liquid, from jalapeno pepper jar
1 teaspoon liquid smoke
1/2 cup white wine vinegar

Steps:

  • Line a 6x9 baking dish with aluminum foil.
  • Combine the sugar, salt, pepper, and spices.
  • Rub the mix into the meat and set aside.
  • Mix the 1 cup of Honey, Vinegar, Worcestershire, jalapeño, and liquid smoke in a microwave safe bowl. Heat in the microwave bowl for one minute.
  • Drizzle the mixture over the ribs and cover with a sheet of foil. At this point you can refrigerate this up to two days.
  • When ready to cook, insert the baking dish into a cold stove then turn the temperature to 200 deg F and let cook for 4 hours.
  • When the meat thermometer reads 165 remove the top layer of foil and drizzle the remaining honey over the ribs and sprinkle with a dash of kosher salt. Turn the oven to broil and cook the ribs till the honey bubbles slightly.

2 cups ketchup
1 tablespoon grated fresh ginger
1 (7-ounce) can chipotles in adobo sauce
3 pounds country style pork ribs, bone in

Steps:

  • In a food processor, combine honey, ketchup, ginger, and 5 chipotles with adobo sauce. Blend until smooth. Taste and add remaining chipotles, or more honey, if desired. If sauce is too thick, thin with a little water or apple juice. Pour half of the sauce over the pork and reserve the rest. Marinate for at least 4 and up to 24 hours.
  • Prepare a grill or grill pan. Grill the pork ribs until cooked to desired doneness. A little charring on the pork is desired. Remove pork from heat and slather with remaining sauce.

BBQ Ribs are my passion!!! I've tried several different rib recipes & I have an earlier Rib recipe posted on Zaar, but this even beats that one!!! First of all, DO NOT BOIL RIBS!!!...it takes away the flavor & is just plain WRONG!!! Second, they shouldn't "fall-off-the-bone"...they should be tender, but sort of "SNAP-OFF" the bone!!! Third, everyone has their own favorite "rub" & "sauce"...give Recipe #410170 and/or Recipe #268574 or use whatever works best for YOU!!! I prefer my ribs smoked, but that's me. These ribs are good either way!!! You can mop them with sauce is desired, but I prefer not to. PLEASE READ DIRECTIONS COMPLETELY.

Steps:

  • Preheat oven to 275°.
  • Cut ribs in half & generously apply rub on both sides, massaging it into the meat.
  • Wrap each half tightly in heavy duty aluminum foil.
  • Place each in a shallow pan with sides.
  • Bake for 3 hours.
  • Serve with your favorite sauce.
  • NOTE: If you want them BROWNED, carefully remove the ribs from the foil. Place under broiler or on grill until desired, but watch carefully so not to burn -- 10-12 minutes each side should be sufficient.
  • NOTE 2: If you want them SMOKED, carefully remove the ribs from the foil. Place on grill, using indirect method -- smoke for about an hour. I recommend Apple or Hickory.
  • DO NOT soak wood chips/chunks in water! Wood doesn't absorb much water, so all you're doing is cooling off the coals.

The inspiration for this recipe come from one by Steven Raichlen (BBQ U fame). His recipe was far too peppery. These are Cambodian-style ribs. I made this with country ribs, that were cut much thinner than what I normally find in the market. They are bone-in, meaty, and fatty. I try to render most of the fat off on the grill. But watch those flare-ups! I did not like the dipping sauce, so just served lime wedges to squeeze onto the ribs.

1/4 cup fresh ginger, chopped
6 garlic cloves
1 tablespoon sugar
1 tablespoon kosher salt
