Found this recipe on Paula Deen's show on Food Network. I adapted it slightly, instead of napa cabbage I use coleslaw mix. My husband absolutely loves it. Warning!! It is very addictive!

1 (12 ounce) bag coleslaw mix
2 green onions
1 (3 ounce) package ramen noodles (I use Oriental flavor)
1/2 cup sliced almonds
1/2 cup vegetable oil
1/4 cup sugar
3 tablespoons white vinegar
2 teaspoons soy sauce

Steps:

  • Preheat broiler.
  • Break up ramen noodles into small pieces and place on cookie sheet. Add sliced almonds. Mix noodles & almonds togehter. Place under broiler until toasted. Watch closely as almonds will burn. Take out & let cool.
  • Mix vegetable oil, sugar, vinegar, seasoning pack from ramen noodles and soy sauce into small bowl with lid. Shake well.
  • Place coleslaw mix, green onion & toasted noodles & almonds in large salad bowl. Pour dressing over & toss well.
  • Serve immediately.

1 large head Napa cabbage, chopped
5 green onions, diced
1/2 cup butter
2 packages ramen noodles (discard soup flavoring)
1/2 cup sesame seeds
1 small package sliced almonds
1 cup vegetable oil
1 teaspoon soy sauce
1/2 cup white vinegar
1 cup sugar

Steps:

  • First mix cabbage and onions in a large bowl, set aside.
  • Melt butter in a frying pan over medium heat. Break noodles in small pieces and brown along with sesame seeds and almonds. Cool and drain on paper towels.
  • To make dressing, mix together all ingredients and microwave to dissolve the sugar. Let cool (about 20 minutes) before serving. Dressing can be made a day ahead of time.
  • Toss together all salad ingredients and add dressing, just before serving.

1/4 cup toasted sesame seeds

4 ounces Chinese cellophane noodles (bean thread noodles), available in Chinese groceries
3 medium cucumbers
1 large red pepper
1/2 Bermuda onion or other large sweet onion
3 tablespoons rice vinegar
3 1/2 tablespoons Chinese sesame oil
Salt and coarsely ground black pepper to taste
1/2 cup fresh coriander leaves, coarsely chopped

Steps:

  • Bring a pot of water to a boil, add the noodles, stir, and allow to boil for 2 minutes. Drain, rinse under cold water, and drain again thoroughly. Using scissors, snip the noodles into manageable lengths, and place in a salad bowl.
  • Wash the cucumbers, and peel, leaving some narrow ribbons of green skin unpeeled. Slice the cucumbers in half lengthwise, and scoop out the seeds. Then slice horizontally about 1/4 inch thick. Add to the salad bowl.
  • Rinse, core, and seed the red pepper. Slice into slender strips. Add to the salad bowl.
  • Peel and slice the onion into transparent slivers, and add to the bowl.
  • Beat the vinegar and oil together in separate bowl, pour over the salad, and toss. Season to taste with salt and pepper. Just before serving add the coriander, and toss again.

1 cup blanched slivered almonds
2 teaspoons sesame seeds
½ cup butter, melted
1 head napa cabbage, shredded
1 bunch green onions, chopped
¾ cup vegetable oil
¼ cup distilled white vinegar
½ cup white sugar
2 tablespoons soy sauce

Steps:

  • In a medium skillet over low heat brown ramen noodles, almonds, and sesame seeds with melted butter or margarine. Once browned, take off heat and cool.
  • In a small saucepan bring vegetable oil, sugar, and vinegar to boil for 1 minute. Cool. Add soy sauce.
  • In a large bowl, combine shredded napa cabbage and chopped green onions. Add the noodle and soy sauce mixture. Toss to coat. Serve.

3 ½ boneless chicken breast halves, cooked and diced
1 head lettuce, torn into small pieces
4 green onions, sliced
4 stalks celery, sliced thin
½ cup walnuts, chopped
2 tablespoons sesame seeds, toasted
6 ounces Chinese noodles, heated briefly to crisp
6 tablespoons seasoned rice vinegar
4 tablespoons white sugar
1 teaspoon salt
½ cup peanut oil

Steps:

  • In a large salad bowl combine the chicken, lettuce, green onion, celery, nuts, seeds and noodles. Mix all together. Set aside.
  • To Make Dressing: Put vinegar in a small bowl. Dissolve sugar and salt in vinegar before adding oil. Shake/Beat well.
  • Add dressing to salad and toss to coat. Serve and enjoy!

Oil for deep-fat frying
3 cups cubed cooked chicken
1 head lettuce, shredded
4 green onions with tops, sliced
1/4 cup sesame seeds, toasted
DRESSING:
1/3 cup white wine vinegar
1/4 cup sugar
3 tablespoons canola oil
2 tablespoons sesame oil
1 teaspoon salt
1 teaspoon monosodium glutamate, optional
1/2 teaspoon pepper

Steps:

  • Deep-fry wonton strips in oil until brown and crisp. Drain on paper towels; set aside. , In a large salad bowl, gently combine the chicken, lettuce, green onions and sesame seeds. In a small bowl, whisk together all dressing ingredients. Just before serving, add fried wonton skins to salad; pour dressing over and toss to coat.
