Number Of Ingredients 7

2 potatoes (2 medium-size potatoes, peeled and sliced into ¼-inch thick)
2 teaspoon salt (2 teaspoons salt)
4 tablespoons olive oil (4 tablespoons olive oil)
2 shallots (2 shallots peeled and very thinly sliced)
2 tablespoons champagne vinegar
¼ cup basil (¼ cup loosely packed fresh basil leaves, shredded)
salt and pepper (salt and pepper)

Steps:

  • Place the potatoes sliced in a large saucepan and cover with cold water. Add the 2 teaspoons salt and bring to a boil. Lower the heat and gently boil for 10 minutes or until the center of the potato's slices are just tender. Be careful not to overcook them. Once ready, drain them and run cold water over them to stop the cooking process. (At this point the potatoes can be refrigerated for 2 days)
  • In a heavy 12-inch skillet heat the oil. Add the shallots and toss over medium heat until the thin slices become translucent, 1 to 2 minutes. Do not brown.
  • Add the potatoes and 1 tablespoon vinegar and gently toss over high heat for 3 to 5 minutes. Add the basil, salt, black pepper, and more vinegar to taste. Serve immediately.

This potato dish is so popular at our house, we argue over who gets the leftovers. I grow my own herbs, so I usually use fresh basil in this recipe, but dried works just as well. 2 cups cubed potatoes
1/2 cup chopped onion
1/2 chopped green pepper
1 tablespoon vegetable oil
2 cups egg substitute
2 tablespoons minced fresh basil
1/2 teaspoon salt
1/8 teaspoon cayenne pepper

Steps:

  • Place potatoes in a microwave-safe bowl; add 1 in. of water. Cover and microwave on high for 7 minutes; drain., In a large nonstick skillet coated with cooking spray, saute the onion, green pepper and potatoes in oil until tender. Add the egg substitute, basil, salt and pepper. Cook and stir over medium heat until eggs are completely set.

1 1/2 pounds small red-skinned potatoes (about 1 to 1 1/2 inches in diameter)
2 tablespoons (1/4 stick) butter
4 tablespoons finely chopped fresh basil
2 large shallots, minced
2 large garlic cloves, minced

Steps:

  • Pierce potatoes in several places with fork. Melt butter in heavy large skillet over medium heat. Add potatoes and season with salt and pepper. Cover and cook until potatoes are almost tender, shaking skillet occasionally, about 25 minutes. Add 2 tablespoons basil, shallots and garlic. Reduce heat to medium-low; cover and cook until potatoes are golden brown and very tender, shaking skillet occasionally, about 10 minutes longer. Season with additional salt and pepper. Transfer to bowl. Sprinkle with remaining 2 tablespoons basil.

1 tbsp rapeseed oil , plus 1 tsp
3 tomatoes , halved
4 large eggs
4 tbsp natural bio yogurt
⅓ small pack basil , chopped
175g baby spinach , dried well (if it needs washing)

Steps:

  • Heat 1 tsp oil in a large non-stick frying pan, add the tomatoes and cook, cut-side down, over a medium heat. While they are cooking, beat the eggs in a jug with the yogurt, 2 tbsp water, plenty of black pepper and the basil.
  • Transfer the tomatoes to serving plates. Add the spinach to the pan and wilt, stirring a few times while you cook the eggs.
  • Heat the rest of the oil in a non-stick pan over a medium heat, pour in the egg mixture and stir every now and then until scrambled and just set. Spoon the spinach onto the plates and top with the scrambled eggs.

2 medium white potatoes, peeled, cubed
1 medium onion, finely chopped (1/2 cup)
1 small red bell pepper, chopped (1/2 cup)
2 cups fat-free cholesterol-free egg product or 8 large eggs, beaten
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
1/2 teaspoon salt
1/8 teaspoon ground red pepper (cayenne)

Steps:

  • In 2-quart saucepan, place potatoes. Add enough water just to cover potatoes. Heat to boiling; reduce heat to low. Cover and simmer 10 to 15 minutes or until tender; drain.
  • Spray 10-inch skillet with cooking spray. Cook potatoes, onion and bell pepper in skillet over medium heat about 5 minutes, stirring frequently, until hot.
  • In small bowl, mix remaining ingredients; pour into skillet. As mixture begins to set at bottom and side, gently lift cooked portions with spatula so that thin, uncooked portion can flow to bottom. Avoid constant stirring. Cook 3 to 5 minutes or until eggs are thickened throughout but still moist.

1/8 teaspoon garlic salt
1/8 teaspoon pepper

1 small onion, chopped
1 cup fresh baby spinach

1/4 cup crumbled goat or feta cheese
Minced fresh basil, optional

Steps:

  • Preheat oven to 425°. Spritz mushrooms with cooking spray; place in a 15x10x1-in. pan, stem side up. Sprinkle with garlic salt and pepper.
